1 beef flank steak (2 pounds), halved crosswise
1 medium green pepper, cut into strips
1 medium sweet red pepper, cut into strips
1 medium onion, halved and sliced
1 envelope fajita seasoning mix
1/2 cup beer or reduced-sodium beef broth
8 flour tortillas (8 inches), warmed
1 cup pico de gallo
Chopped fresh cilantro

Steps:

  • Place the first 5 ingredients in a 5-qt. slow cooker. Pour beer over top. Cook, covered, on low until meat is tender, 6-8 hours., Remove beef from slow cooker. Strain vegetable mixture; return vegetables to slow cooker. (Discard cooking juices or save for another use.) Shred beef with 2 forks; add to vegetables and heat through. Serve in tortillas with pico de gallo and cilantro.

1 each medium green, sweet red and yellow peppers, cut into 1/2-inch strips
1 sweet onion, cut into 1/2-inch strips
2 pounds beef top sirloin steaks, cut into thin strips
3/4 cup water
2 tablespoons red wine vinegar
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
8 flour tortillas (8 inches), warmed
1/2 cup salsa
1/2 cup shredded reduced-fat cheddar cheese
8 teaspoons minced fresh cilantro

Steps:

  • Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine water, vinegar, lime juice and seasonings; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Using a slotted spoon, place about 3/4 cup meat mixture down the center of each tortilla. Top with salsa, cheese and cilantro; roll up.

1 (1 1/2-pound) beef flank steak
1 (8 ounce) can chopped tomatoes
1 onion, sliced
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
1 jalapeno pepper, seeded and chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
¼ teaspoon salt
6 large flour tortillas, or as needed
1 cup shredded Mexican cheese blend

Steps:

  • Cut flank steak into 6 equal portions and place in a slow cooker. Add tomatoes, onion, bell peppers, jalapeno pepper, garlic, chili powder, cumin, coriander, and salt.
  • Cook on Low for 8 to 10 hours, or on High for 4 to 6 hours, until steak is fall-apart-tender.
  • Remove steak and shred. Return to slow cooker.

2 pounds beef round steak
2 packets (1.27-ounces each) fajita seasoning mix (recommended: Lawry's)
1 onion, thickly sliced
2 green bell peppers, sliced into 1/2-inch strips
1 red bell pepper, sliced into 1/2-inch strips
1/2 cup beer or water

Steps:

  • Rinse steaks with cold water and pat dry with paper towels. Season both sides of steaks with 1 packet of fajita seasoning. Slice into strips; set aside. Add vegetables to a 5-quart slow cooker. Toss with remaining packet of fajita seasoning. Add steak strips on top of vegetables. Pour in beer. Cover and cook on low setting for 8 to 10 hours.
  • Serve hot with peppers, warm tortillas, refried beans, and shredded cheese, if desired.

I had to take a crash course in "Know Your Beer 101" (thanks to Aaar friends in the Q & A section) before being able to post this recipe. This one came from another website, I just can't remember the name of it. It was posted on that site by Betty Copeland (her name is at the bottom of my print out). But the recipe is so simple to prepare and sounds delicious. I'll let you know because it's now the weekend, and there's no time like the present to try out a new recipe! Ok, I'm finally editing this recipe because I made it, and all I can say is YUMMY! Since I scorched my rice (I know, I know...first time I've ever done that..but yes, it happened) I served it over toast and it was so good! The only thing I did differently was to use a whole bottle of beer add approx 1 cup of water because I had a little over 3 lbs of steak.

1 (12 ounce) can beer
1 (1 1/4 ounce) envelope onion soup mix
1 (7/8 ounce) envelope brown gravy mix
1/3 cup flour
2 1/2-3 lbs round steaks

Steps:

  • In slow cooker mix well, beer, onion soup mix and brown gravy mix.
  • In plastic bag shake flour with round steak, cut into 1 1/2 inch cubes.
  • Empty bag contents into slow cooker.
  • Gently stir to coat meat with liquid.
  • Cover and cook on low (180 degrees to 200 degrees) for about 8 hours.
  • Serve over bed of rice or noodles and with hard rolls.

We like this with mashed potatoes, pasta or rice and vegetables. I usually do not thicken the sauce, but that is a personal preference. I have made this with different types of beer, light, strong and sweet depending what was on hand. It freezes well.

2 cups beer
3 lbs boneless beef chuck roast
1/2 cup plain flour
2 -3 tablespoons butter, divided
2 onions, sliced
2 garlic cloves, crushed
1 tablespoon tomato paste
cayenne (optional) or crushed red pepper flakes (optional)
2 bay leaves
salt and pepper

Steps:

  • Add the beer to the crock pot, turn the control to high.
  • Cut the beef into cubes, coat with the flour and brown in half of the butter, you might have to do this in batches.
  • Transfer the browned beef to the crock pot.
  • Using the rest of the butter brown the onions, add garlic, tomato puree and cayenne if using.
  • Add to the crock pot together with the bay leaves and salt and pepper.
  • Now turn the crock pot to low and cook for 6 to 8 hours, until the beef is tender.
  • If you want to thicken the sauce add about 2 tablespoons of flour made into a paste, about 30 minutes before the end of the cooking time, stir that in, you will have to turn the crock pot on high for this.
