GRILLED BEER MARINATED CHICKEN WINGS



Grilled Beer Marinated Chicken Wings image

The simple beer marinade for these wings is easy-to-make and pairs with almost any BBQ sauce you can think of!

2 1/2 lbs chicken wings and drumsticks
1/3 cup cornstarch
1 Tbsp Traeger Fin and Feather Rub
2/3 cup beer (I used a ginger golden ale but you can use a pale ale, lager, or light IPA)
1/4 cup soy sauce
2 Tbsp honey
1/4 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp chili powder
2 tsp Frank's Red Hot Sauce
1/2 tsp salt
2 tsp rice wine vinegar
Traeger Wood Pellets (I prefer Cherry for this particular recipe, but any will work!)
2 cups BBQ sauce (I used Traeger's Sweet & Tangy Apricot Sauce)
Garnish: freshly chopped parsley

Steps:

  • Rinse chicken wings in cold water and dry well with paper towels.
  • In a medium bowl, stir together cornstarch and Traeger Fin and Feather Rub. Add wings to the bowl and toss to coat.
  • In a separate bowl, stir together beer, soy sauce, honey, onion powder, smoked paprika, chili powder, Frank's Red Hot Sauce, salt and rice wine vinegar. Add cornstarch herb coated wings to the marinade.
  • Marinate for at least 30 minutes in the refrigerator.
  • Heat up grill.
  • Grill wings skin side up for 20 minutes, covered and over indirect heat.
  • Brush wings with BBQ sauce (I used Traeger's Sweet & Tangy Apricot Sauce). Grill for an additional 5 minutes, or until the wings are cooked through and reach an internal temperature of 165 degrees F.
  • Add the remaining BBQ sauce to a large bowl and toss the wings in the sauce.
  • Add wings to a serving bowl or platter and sprinkle with parsley before serving.

1 bottle (18 oz.) BULL'S-EYE Original Barbecue Sauce, divided
1 bottle (12 oz.) beer
1/4 cup olive oil
2 Tbsp. LEA & PERRINS Worcestershire Sauce
1 Tbsp. minced garlic
1-1/2 tsp. onion powder
5 lb. chicken wings, split at joints, tips removed

Steps:

  • Mix 1 cup barbecue sauce with next 5 ingredients until blended; pour over chicken in large bowl; toss to evenly coat chicken. Refrigerate 30 min. to marinate.
  • Heat grill to medium-high heat. Remove chicken from marinade; discard marinade.
  • Grill chicken 20 min. or until done, turning occasionally and brushing with remaining barbecue sauce for the last 10 min.

I tried several beer can chicken recipes and changed the ingredients up until I found one the whole family loves!!

2 cups cherry wood chips
2 (12 fluid ounce) cans beer, half full
½ cup dark brown sugar
½ cup kosher salt
½ cup paprika
¼ cup ground black pepper
1 teaspoon cayenne pepper
¼ cup vegetable oil
2 (3 pound) whole chickens

Steps:

  • Soak wood chips in water for at least 1 hour.
  • Preheat an outdoor grill for indirect medium heat, about 350 degrees F (175 degrees C).
  • Mix together dark brown sugar, kosher salt, paprika, ground black pepper, and cayenne pepper in a small bowl. Place two half full cans of beer on a baking sheet. Spoon 1 teaspoon seasoning mix into each can. Be careful, this will make the beer foam up and out of the can.
  • Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Rub each chicken with 2 tablespoons vegetable oil. Rub the remaining seasoning mix over the entire chicken, inside and out. Fit each chicken over a can of beer with the legs on the bottom; keep upright.
  • Drain the wood chips and place them with the coals or in an aluminum pan on or under the grill grate as directed by the grill's manual. Place the two chickens, standing on their cans directly on the grill. Close the lid and barbeque the chicken until no longer pink at the bone and the juices run clear, about 1 hour 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chickens from the grill and discard the beer cans. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

  • Make the beer brine. In a large glass or plastic bowl, combine the beer, salt, and red pepper flakes. Stir until the salt is dissolved in the beer and gently submerge the wings in the brine. Cover with plastic wrap and refrigerate for at least 8 hours, or up to 12 hours.
  • Dry the chicken wings. Drain the brine from the wings. Place a cooling rack on top of a cookie sheet and arrange the wings on the rack. Pat each of the wings dry with a paper towel and return to the fridge. Allow the wings to dry in the fridge for 3-4 hours. This will take some of the moisture out of the skin and give you crispy skin.
  • Grill the beer brine chicken wings. Start your grill up and prepare for indirect grilling. Set your temperature to 375 degrees F. Place the wings directly on the grill grates. If you don't have an indirect grill, you can just put the cookie sheet with the cooling rack on top directly on your grill grates once your grill is preheated. Cook the wings for 30 minutes, then flip for the final 15 minutes.
  • Make the sticky sweet Buffalo sauce. While the wings are grilling, prepare your sauce. In a small saucepan, combine the brown sugar and wing sauce. Bring to a simmer (not a boil) stirring constantly until the sugar dissolves. Turn off the heat and stir in the butter. Set aside until the wings are cooked.
