MEXICAN BEEF CASSEROLE
This a very easy and tasty casserole; great with a salad, chips and salsa.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Brown the ground beef in a large skillet over medium high heat. Add chili powder, beans, tomatoes and soup; mix well and heat thoroughly.
- Line a 13x9 inch dish with tortillas. Then make a layer with the meat mixture. Make another row of tortillas, then finish off with rest of meat mixture. Top with grated cheese.
- Bake in a preheated oven for 30 minutes.

Steps:
- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 12-inch nonstick skillet, cook beef and onions over medium-high heat, stirring frequently, until brown; drain. Stir in seasoning mix and water. Heat to boiling. Reduce heat to medium; simmer uncovered 3 to 4 minutes or until thickened. Stir in enchilada sauce and black beans; cook 1 to 2 minutes or until heated through.
- Place 4 cups of the corn chips in single layer in baking dish. Top with 1 cup of the cheese; spoon beef mixture over cheese, then top with remaining 1 cup cheese.
- Bake 18 to 20 minutes or until cheese is melted and edges are bubbly. Top with remaining corn chips and the green onions. Serve with sour cream and guacamole.

TAMALE PIE
I adopted this recipe in the February 2005 Recipe Adoption. I have updated this recipe to add can sizes, and to simplify and clarify the instructions. This is definitely not gourmet food, but I was pleasantly suprised. It's a tasty, filling casserole. DH and I both enjoyed it. I had never eaten canned tamales before and was prepared to hate them. Again, I was suprised - the taste and texture was fairly comparable to a real tamale.

Steps:
- Preheat oven to 350 degrees.
- In a large skillet, cook onions, garlic, and ground beef until meat is browned and crumbly.
- Drain fat from skillet.
- Add remainder of ingredients except cheese.
- Stir gently and heat through.
- Transfer to a greased 8 x 12 inch casserole dish.
- Top with about 1/2 pound grated sharp cheddar cheese.
- Bake, uncovered, for 20-30 minutes until bubbly around the edges.
- Casserole may be frozen.
- Bring to room temperature and bake at 350 for about an hour or until bubbly and heated through.

- Preheat oven to 450 degrees.
- Spray a 12x8-inch baking dish with no-stick cooking spray.
- In a large skillet, cook ground beef until browned, stirring constantly.
- Drain.
- In a large bowl, combine ground beef, 1 cup cheese, corn muffin mix, eggs,.
- tomatoes, corn and chili powder and water; mixing until well blended.
- Spoon mixture into prepared dish.
- Bake 20 minutes, sprinkle with cheese. Continue baking 5 minutes or until.

- Combine the cornmeal, flour, sugar, baking powder, and salt. Drizzle in the avocado oil, and stir until the mixture is crumbly. In a separate bowl, mix together the milk and egg until combined. Stir into the cornmeal mixture, along with the chiles and corn. Prepare a pie pan with cooking spray, and spread the tamale base in. Bake at 350 for 20-25 minutes, or until set.
- While the tamale base is baking, brown your ground beef over medium heat. Drain the excess fat, and add in all the seasonings, water, and tomato paste. Simmer for 20 minutes.
- Remove the tamale base from the oven, and top with a layer of enchilada sauce. Spread the ground beef mixture on top of the tamale base, add more enchilada sauce, and then copious amounts of cheese.
- Bake again at 350 for about 35-40 minutes, and serve hot with all the garnishes your little heart desires.
