BEEFY LAYERED BURRITO CASSEROLE
This casserole is very hearty and flavorful. I serve it with a dallop of sour cream on top. Great to make ahead and bake later.

Steps:
- Preheat oven to 350.
- In a large skillet, brown ground beef with onion; drain. Return beef & onions to hot skillet off of heat and stir in rice, undiluted soup and taco seasoning. Mix together well.
- Lightly spray a lasagna pan/ 13" x 9" pan with nonstick cooking spray.
- Line bottom of pan with 4 of the tortillas.
- Evenly cover tortillas with half of the meat/rice mixture, then 1/2 of the salsa, then sprinkle with half of the corn, half of the black beans and 1 cup of cheese.
- Cover again with 4 more of the tortillas and repeat these layers again.
- Finally, top with the last 4 remaining tortillas. Pour entire can of enchilada sauce over top. Sprinkle with remaining 2 cups cheese and cilantro.
- Bake at 350 for about 25 minutes.
- Serve with a dallop of sour cream, if desired.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, 3 to 5 minutes. Add beef and increase heat to medium-high. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Combine refried beans and burrito seasoning in a bowl and mix well. Add mixture to the beef in the skillet and stir well.
- Mix cream of mushroom soup and sour cream together in a bowl.
- Place a layer of chips into the prepared casserole dish to just cover the bottom. Follow by 1/2 the meat mixture, 1/2 the soup mixture, 1 cup shredded Mexican cheese blend, and 1/2 the salsa. Repeat layers and top with remaining cheese.
- Bake in the preheated oven, uncovered, until hot and bubbly, 20 to 30 minutes.

- Brown ground meat/turkey & onion; drain.
- Add taco seasoning and stir in refried beans.
- Mix soup and sour cream in a separate bowl.
- Spread 1/2 sour cream mixture in the bottom of a casserole dish.
- Tear up 3 tortillas and spread over sour cream mixture.
- Put 1/2 the meat bean mixture over that.
- Add a layer of cheese.
- You could put some hot sauce on this now.
- Repeat the layers.
- Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

- Make the filling: In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the beans, and mash about half of them coarse with the back of a wooden spoon.
- Add the tomato sauce, the cumin, the chilies, and salt and black pepper to taste, simmer the mixture, stirring, for 3 to 5 minutes, or until it is thickened slightly, and stir in the coriander.
- Working with 1 warmed tortilla at a time and keeping the others covered, spread about 3 tablespoons of the filling down the center of each tortilla and roll the tortillas, enclosing the filling but keeping the ends open.
- Arrange the burritos, seam sides down, in one layer in a baking dish, sprinkle them with the Monterey Jack, and bake them, covered with foil, in the middle of a preheated 350°F.
- oven for 10 minutes.
- Serve the burritos with the guacamole and the salsa.
- Makes 12 burritos, serving 6.

- Mix in 1/2 of chilis.

SIMPLE BURRITO CASSEROLE
A co-worker and I were trying to make burritos but when the tortillas were sticking together and were ripping apart we threw it into a cake pan.

Steps:
- Pre-heat oven to 350 degrees.
- Brown hamburger till all pink is gone.
- Drain off as much grease as possible.
- On medium Low heat stir in refried beans, 3/4 jar of picante sauce and burrito seasoning.
- Heat till it is all warm and then shut off heat.
- In a greased rectangle cake pan layer the bottom with whole tortillas, tear some of them up to fill in the spaces.
- Spread 1/2 of the remaining picante sace on top of tortillas then sprinkle with the amount of cheese you desire.
- Spread on your bean and meat mixture on top of cheese.
- One more time the tortillas, (Skip the picante sauce), cheese, bean and meat mixture.
- Put last layer of tortillas on spread the last 1/2 of picante sauce on and put cheese on the top (I usually use a 1 pound bag just for the topping).
- Bake at 350 degrees till the cheese is melted. You may store and cook later or cook right away. If you store it, it will take longer to cook.
- If serving immediatly top with sour cream, chopped tomatoes and chopped lettuce.
