3/4 lb flank steaks or 3/4 lb london broil beef, thinly sliced
2 teaspoons cornstarch
1 teaspoon sherry wine
1 tablespoon light soy sauce
1/2 lb fresh string bean, cleaned
1/2 teaspoon sugar
3 tablespoons oil
1 garlic clove, finely minced
1 piece fresh ginger, peeled & minced fine
1 teaspoon cornstarch, dissolved in
1/2 cup chicken broth, and
1 teaspoon soy sauce

Steps:

  • Marinate beef in cornstarch, sherry& soy sauce about 1/2 hour.
  • Cook beans in boiling water 2 minutes.
  • Rinse in cold water.
  • Heat oil in wok.
  • Brown garlic& ginger.
  • Add beef.
  • Stir fry until color changes.
  • Add beans & sugar.
  • Stir fry 1 minute.
  • Add dissolved corn starch mixture.
  • Stir fry till thickened.
  • Serve with rice if desired.
  • Serves 4-6.

1 sweet red pepper (or green)
1 lb lean ground beef
1 tablespoon vegetable oil
2 garlic cloves, minced
1 tablespoon gingerroot, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cups green beans (diagonally halved and trimmed)
1/2 cup beef stock
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon cornstarch
2 green onions, thinly sliced

Steps:

  • seed, core and cut red pepper into thin strips, set aside.
  • in a wok stir fry beef over high heat until no longer pink, about 3 minutes. using a slotted spoon, transfer beef to plate.
  • drain fat from wok, add oil, stir fry garlic, ginger, salt and pepper over medium heat until fragrant, about 1 minute.
  • add green beans, red pepper and 2 tablespoons water, cover and steam until beans and pepper are tender-crisp, about 3 minutes.
  • return beef and any juices to wok. whisk together beef stock, hoisin sauce, soy sauce, and cornstarch. stir into wok.
  • bring to a boil, boil stirring until sauce is thickened and glossy, about 1 minute.
  • sprinkle with green onions and serve.

2 large egg whites
1 teaspoon sesame oil
2 tablespoons cornstarch
Kosher salt and freshly ground black pepper
1 pound boneless beef top round, sliced paper-thin against the grain
8 fresh chives, minced
1/2 cup peanut oil
1-inch piece fresh ginger, peeled and minced
2 garlic cloves, minced
2 green onions, white and green parts, chopped
1 dried red chile
3/4 pound green beans, halved on the bias
1/2 cup chicken broth
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon sugar
3 tablespoons creamy peanut butter
2 strips orange peel
1/4 cup roasted peanuts, chopped

Steps:

  • In a mixing bowl, whisk together the egg whites, sesame oil, and 1 tablespoon of the cornstarch until foamy; season with salt and pepper. Add the beef and chives, toss to coat in the marinade and stick it in the refrigerator for 30 minutes.
  • Pour the peanut oil in a large skillet or wok and place over high heat. When the oil is smoking hot, add 1/2 of the beef. (If you fry all the meat at once the oil temperature will drop and the beef will stew instead of crisp.) Fry for 2 minutes then remove to a paper towel to drain; repeat with the remaining beef. Very carefully drain all but 2 tablespoons of the hot oil into a safe container.
  • Stir-fry the ginger, garlic, green onions, and chile in the remaining oil until they perfume. Add the green beans; season with salt and pepper. Stir-fry the beans for 2 minutes until crisp-tender; remove from the pan. Mix the chicken broth with the remaining tablespoon of cornstarch to make a slurry and add it to the pan. Add the soy sauce, vinegar, sugar, peanut butter, and orange peel. Simmer until the sauce is thick, about 5 minutes. Return the beef and green beans to the pan, tossing to coat in the sauce. Garnish with chopped peanuts and serve with rice.

We really enjoyed this super easy dinner which was printed in the newspaper (originally from Easy Chinese Stir-fries). Although I think you can cut the oil in half this isn't bad calorie wise using the amount listed. Also this seems like a lot of pepper but this really isn't a spicy dish -- I think the pepper tenderizes the meat some how.

1 lb green beans, trimmed and cut into 2 inch pieces
3/4 lb flank steak, trimmed
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon chinese rice wine (I used Mirin)
1 teaspoon sugar
2 teaspoons black pepper
3 tablespoons peanut oil (see my note in description)
1/4 cup water
2 slices ginger, unpeeled
1 onion, slilced

Steps:

  • In a bowl whisk together marinade ingredients (soy sauce - pepper).
  • Slice steak with the grain into 2-inch strips and then across the grain into 1/2 inch pieces (the directions say 1/8 inch pieces but mine were closer to 1/2 inch to 1 inch) and then add them to marinade, toss, and set aside.
  • Heat one tablespoon oil in wok over medium high heat until hot. Add beans and stir for 1 minute. Add water and reduce heat to medium. Cover and cook for 5-10 minutes. Transfer beans to bowl.
  • Add remaining oil (see note in description) to wok and increase heat to high. Add ginger and stir until oil is hot and ginger sizzles (1 minute).
  • Add onion and stir for one minute.
  • Add beef mixture to wok and stir until beef is done (2-5 minutes).
  • Return beans and liquid to wok and stir until mixed and heated through. Discard ginger.

This beef stir-fry is a little spicy...if you need a milder version reduce the crushed red pepper by half. This comes from "Plain & Elegant: A Georgia Heritage" . The original recipe does not call for any green vegetable, but I like to add some fresh asparagus when I cook the squash....but I posted it as originally posted.

2 lbs sirloin steaks, boneless
2 large red bell peppers, coarsely chopped
1/4 cup vegetable oil, divided
2 medium onions, cut into wedges
4 garlic cloves, minced
2 small yellow squash, cut into 1/2 inch cubes
6 stalks asparagus, cut into 1 1/2 inch pieces (optional...not in original recipe)
3 tablespoons soy sauce
2 tablespoons dry crushed red pepper
1 teaspoon black pepper
hot cooked rice
green onion, cut into strips

Steps:

  • Trim excess fat from the steak; slice the steak diagonally across the grain into thin strips. Set aside.
  • Place the chopped red bell peppers in a food processor or blender; cover and process until smooth, stopping frequently to scrape down the sides. Set aside.
  • Pour 2 tablepoons oil around the top of a preheated wok or large skillet, coating the sides; heat at medium-high (375 degrees) for 2 minutes. Add the onion and minced garlic, and stir-fry 2 minutes. Add the squash, (and asparagus if using) and stir-fry for 1 to 2 minutes or until crisp-tender. Remove the vegetables from the wok and set aside.
  • Pour 1 tablespoon oil into the wok; add half of the steak strips, and stir-fry 2 to 3 minutes or until browned. Remove the steak from the wok, and set aside. Pour the remaining 1 tablespoon of oil into the wok. Add the remaining steak strips, and stir-fry 2 to 3 minutes or until browned.
  • Combine the soy sauce, crushed red pepper, and black pepper. Add the soy sauce mixture, red bell pepper puree, reserved vegetable mixture, and steak strips to the wok. Stir fry until thoroughly heated. Serve over rice.
  • Garnish with green onion strips.

Great and EASY stir fry dish. I found this online in rec.food.recipes. I am planning to try it later this week with tofu for a veggie meal.

8 ounces flank steaks
2 cups pea pods
1 (8 ounce) can sliced water chestnuts (optional)
2 slices gingerroot
2 stalks chopped green onions
1 tablespoon olive oil
2 tablespoons soy sauce
1 tablespoon water
1 tablespoon vinegar
1 tablespoon olive oil
1 tablespoon sesame oil (optional)
2 teaspoons cornstarch
1 teaspoon sugar
1/2 teaspoon salt

Steps:

  • Rinse rice in pot, and cook (follow package directions).
  • While the rice is cooking, slice flank steak in thin slices (approximately 2 inches long by a quarter inch wide) and place in marinade.
  • Make sure that the steak is coated in marinade.
  • Wash pea pods and pinch off the ends.
  • Chop the green onions and slice ginger.
  • Heat large skillet on high heat.
  • Drop 1 tbsp olive oil onto skillet.
  • Put meat and marinade in skillet and fry until brown.
  • Add more olive oil if necessary.
  • Add ginger and green onions to skillet.
  • Fry 1 minute.
  • Add the pea pods and water chestnuts.
  • Fry until pea pods are hot but not soggy.
  • The rice should be finished by now.
  • Serve stir-fry over rice.
  • NOTES: I use small package of Green Giant frozen Sugar Snap Peas so I don't have to wash and prepare the fresh vegetables.
  • I microwave them for 2 minutes to defrost them.
  • You could also substitute other vegetables for the pea pods such as chopped broccoli or chopped green peppers.
  • You can also add more vegetables, such as carrots and/or peppers.
  • I also buy the steak "thin sliced", and cut those slices up.
  • Makes it cook really fast and a bit more fun to eat.

  • For the beef & marinade, combine the beef, water, vegetable oil, cornstarch, baking soda, and soy sauce in a medium bowl. Let the beef marinate for 20 minutes.
  • Heat the wok until smoking and spread 2 tablespoons of oil around the perimeter. Sear the beef for 20 seconds on each side. You want the beef seared on the outside and about 80% done. Remove from the wok and set aside.
  • Add the ginger, and caramelize for 20 seconds. There should be oil in the wok from searing the beef, but add another tablespoon of oil if needed. Next, add the minced garlic and the white portion of the scallions. Stir fry for 10 seconds, and add the Shaoxing wine.
  • Stir again for 10 seconds, and add the chicken stock, oyster sauce, soy sauce, sesame oil, white pepper, and sugar. Stir-fry until combined, and then gently slide the tofu into the wok. Be careful––the pieces are delicate and will break up easily without proper handling!
