BEEF STROGANOFF SOUP

This recipe came about because of a mediocre, overpriced steak dinner. Let me explain.

Number Of Ingredients 12

5 tbsp. Butter, Divided
1 lb. Beef Steak (Sirloin Is Great), Thinly Sliced (See Note)
1 Small Onion, Finely Chopped
8 oz. weight Baby Portobello Mushrooms, Thinly Sliced
2 tbsp. All-purpose Flour
3 c. Beef Broth
2 c. Heavy Cream
1 tbsp. Worcestershire Sauce
Salt And Pepper, to taste
6 oz. weight Egg Noodles
1 c. Sour Cream
1/4 c. Finely Chopped Parsley

Steps:

  • Heat a soup pot over medium heat. Melt 2 tablespoons butter in the pot and add beef. Season to taste with salt and pepper. Cook, stirring frequently, just until steak is browned. Remove to a plate along with the juices. Melt remaining butter in the now-empty pot. Add onion and cook until beginning to soften, about 5 minutes. Add mushrooms and cook until tender, about 5 more minutes. Season with salt and pepper to taste. Sprinkle in flour and cook for 2 minutes. Whisk in beef broth and cream. Bring to a boil. Add Worcestershire sauce and season to taste with salt and pepper.Add noodles and cook for the length of time recommended on the package, or until cooked to your preferred firmness. Remove from heat. Stir in beef (along with the juices), sour cream, and parsley. Taste once more to adjust seasoning and serve.Notes:• It's easiest to slice beef thinly when it's still somewhat frozen but not rock-hard.• You can substitute ground beef for the steak if you prefer. If you do make that substitution, you can brown the meat "dry" in the pan and leave out the extra 2 tablespoons of butter.

1 1/2 lbs boneless beef cubes
1/2 cup yellow onion
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon paprika
10 ounces cream of mushroom soup (I use campbells)
8 ounces beef and onion soup mix
9 ounces canned mushrooms (do not drain)
16 ounces broad egg noodles (I use no yolks)
4 ounces cream cheese
1/2 cup sour cream

Steps:

  • cook the noodles according to pkg directions in seperate pot. *drain and add at the end of recipie.
  • in slow cooker mix envelope of beefy onion with the cream of mushroom soup. Add jared mushrooms, paprika, pepper, garlic powder cubed beef and onions.
  • cover and cook 3-3 1/2 hours on high or 6-7 hours on low.
  • In the last 30 minutes of cook time add into the mixture the cream cheese.
  • In the last 10 minutes add the sour cream.
  • Put the finished stroganoff over the noodles and ENJOY!

1 envelope Lipton Onion Soup Mix
3 tablespoons flour
2 tablespoons canned tomato paste
2 1/2 cups water
1/2 cup sour cream
1 (12 ounce) package egg noodles, cooked
snipped parsley, for garnish

Steps:

  • In large skillet, stir meat until browned.
  • Blend in Lipton Onion Soup mix, flour and tomato paste.
  • Stir in water; simmer, covered, 10 minutes.
  • Stir in sour cream.
  • Serve over noodles.
  • Garnish with snipped parsley.

This recipe was taken and adapted from The Lady & Sons Savannah Country Cookbook by Paula H. Deen. I like this recipe because it is very simple and requires minimal prep. The outcome is very delicious and my family eats it up (including my VERY picky 3 year old and my 1 year old). I hope you enjoy it as much as I have. I am working on adapting it for the crock pot!

6 tablespoons all-purpose flour
2/3 cup water
4 tablespoons butter
2 lbs stewing beef or 2 lbs boneless beef cubes
1 (10 1/2 ounce) can condensed cream of mushroom soup
1 (10 1/2 ounce) can condensed French onion soup
1 cup sour cream
1/2 teaspoon garlic salt
1/2 teaspoon black pepper
0.5 (16 ounce) bag egg noodles

Steps:

  • Mix the flour and water together and put aside. Heat the butter in a large skillet. Season the beef with the garlic salt and pepper and add to the skillet. Brown the beef on both sides. Add the cream of mushroom soup, french onion soup, flour mixture and 1 soup can of water to the skillet. Simmer the mixture stiring constantly until thickened, if too thick add a little water until it reaches the consistancy you want. Simmer for 45 minutes. Add the sour cream and heat through, till bubbling. Serve over the cooked egg noodles.

Make a classic beef stroganoff with steak and mushrooms for a tasty midweek meal. Garnish with parsley and serve with pappardelle pasta or rice.

1 tbsp olive oil
1 onion, sliced
1 clove of garlic
1 tbsp butter
250g mushrooms, sliced
1 tbsp plain flour
500g fillet steak, sliced
150g crème fraîche
1 tsp English mustard
100ml beef stock
½ small pack of parsley, chopped

Steps:

  • Heat 1 tbsp olive oil in a non-stick frying pan then add 1 sliced onion and cook on a medium heat until completely softened, around 15 mins, adding a little splash of water if it starts to stick.
  • Crush in 1 garlic clove and cook for 2-3 mins more, then add 1 tbsp butter.
  • Once the butter is foaming a little, add 250g sliced mushrooms and cook for around 5 mins until completely softened.
  • Season everything well, then tip onto a plate.
  • Tip 1 tbsp plain flour into a bowl with a big pinch of salt and pepper, then toss 500g sliced fillet steak in the seasoned flour.
  • Add the steak pieces to the pan, splashing in a little oil if the pan looks dry, and fry for 3-4 mins, until well coloured.
  • Tip the onions and mushrooms back into the pan. Whisk 150g crème fraîche, 1 tsp English mustard and 100ml beef stock together, then stir into the pan.
  • Cook over a medium heat for around 5 mins.
  • Scatter with some chopped parsley, and serve with pappardelle or rice.

Easy and yummy -- my mommy's, of course! I've given measurements here as a guide, although you really need to use the ketchup, dry mustard, and sour cream to taste. Of course, you can always add onions to the beef when cooking it.
