2 lb beef shank (cut into 3/4 - 1" pieces)
tap water
1 tbsp salt
2 tbsp soy sauce
2 tbsp hoisin sauce
2 tsp salt
1 tsp Vietnamese beef stew seasoning
2 tbsp neutral cooking oil
4 cloves garlic (roughly chopped)
1 tsp paprika (optional, for extra color boost)
1 tbsp Vietnamese beef stew seasoning
1 medium onion (quartered)
1.5 tbs fresh ginger (sliced or pounded)
1-2 stalks lemon grass (use ~7" of the aromatic root area, pounded)
2 tbsp tomato paste
2 tbsp dark soy sauce
3-4 pods star anise
4-5 bay leaves
1 can chicken broth (about 2 cups)
6 oz coconut soda, Coke, or Sprite
5 cups filtered water (or enough to barely cover the ingredients)
2-3 carrots (cut into 1" chunks)
6 12" Vietnamese bread loaves
2 sliced jalapenos
1 sliced lemon
salt and pepper
1 bunch Thai basil

Steps:

  • Clean the meat. Add beef to a large pot and add 1 tbsp salt and enough tap water to barely cover the meat. Bring to a boil on high heat, and once it hits a boil for 30 seconds, kill the heat, drain, and rinse under running water to clean. If you haven't cut the meat into 3/4 - 1" pieces yet, do it now.
  • Marinate the meat. Add all marinade ingredients to the meat in a covered bowl or a bag for at least two hours, but overnight would be better.
  • Aromatics. Preheat a large pot on medium high. When hot, add the oil, let it warm a bit, then add all the garlic and stir to slowly saute until it turns light brown. Then add the paprika an stir until it releases its aroma, about 30 seconds.
  • Broth. Add all broth ingredients to the pot except the carrots. Turn the heat to high until it hits a boil, then reduce heat so it maintains a low boil. Cook until the meat is as tender as you'd like it, about 60-90 minutes. Add carrots towards the final 10 minutes so it softens. Discard the cooked onions and star anise pods.
  • Serve with accoutrement as shown: tearing fresh Thai basil onto your plate, taking occasional bites of jalapeno, and dipping a few pieces of meat into the salt / pepper / lemon juice side for variety.

This Vietnamese beef stew takes a bit of time to make, but it's totally worth it.

2 to 2 ½ pounds stew cut beef or boneless beef chuck cut into 1½-inch chunks
3 large cloves garlic, minced
3 Tablespoon minced fresh ginger (about 3" knob)
2 ½ tsp Chinese five-spice powder
1 ½ tsp brown sugar
1 tsp ground black pepper
3 Tablespoon fish sauce
3 Tablespoon canola oil
1 medium yellow onion, finely chopped
3 Tablespoon tomato paste
3 stalks lemongrass cut into 3-inch lengths
2 whole star anise
3 cups of coconut juice (or coconut water)
3 cups of water
4 large carrots, peeled and cut into 1-inch chunks
3 large potatoes, peeled and cut into 1-inch chunks
¼ cup coarsely chopped fresh cilantro leaves or Thai basil
French bread or rice noodles (cooked according package directions)

Steps:

  • In a small bowl set aside 1 tsp five-spice powder, 1 clove minced garlic, 1 tsp ground black pepper. In a large bowl, combine beef, fish sauce, 2 cloves minced garlic, ginger, 1 ½ tsp five-spice powder, and 1 ½ tsp brown sugar. Toss to evenly coat and set aside to marinate for 30 minutes while you peel and chop carrots and potatoes. In a 5-quart Dutch oven, heat over high heat until it shimmers. Brown the beef on all sides by working in small batches: add enough beef to cover the bottom without any overlap. Transfer to a plate before browning the next batch. Lower the heat to medium. Add the onions and cook until fragrant and soft, making sure to stir and scrape up the brown beef bits (approx 5 minutes). Add the tomato paste and stir into onions. Cook for 5 minutes. Add the reserved spice mix from seep #1, lemongrass talks, and star anise. Stir and let it cook uncovered until you can smell all the spices, about 5 minutes. Return the beef to the pot and add coconut juice and water. Bring pot back to a boil, then cover and lower heat. Simmer for about an hour or until the beef is chewy and tender but not falling apart. Add carrots and potatoes. Return to a simmer and cook uncovered until vegetables and beef are tender, about 30 minutes. Taste and add salt or fish sauce as needed. To serve, remove the lemongrass and star anise. Spoon into bowls and garnish with chopped cilantro or Thai basil. Serve with warmed French bread. Alternately, spoon over cooked rice noodles (instead of bread).

Bo kho is a delicious Vietnamese pot-roasted beef stew, fragrant with lemongrass, star anise and cinnamon. When the meat is fork tender, carrots are added to complete the dish. If you wish, include turnips or daikon radish or potatoes. Serve it with rice, rice noodles or a freshly baked baguette.

2 tablespoons Vietnamese fish sauce, such as Red Boat
1 tablespoon brown sugar
2 tablespoons grated fresh ginger
2 teaspoons Chinese 5-spice powder
1/2 teaspoon black pepper
3 pounds beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
6 large shallots or 1 medium red onion, thinly sliced
1 cup chopped tomato, fresh or canned
2 tablespoons grated fresh ginger (from a 2-inch piece)
3 garlic cloves, minced
3 tablespoons finely chopped lemongrass, tender center only
1 teaspoon kosher salt
1/2 teaspoon annatto powder (optional)
4 star anise pods
1 (2-inch) cinnamon stick, or substitute cassia bark
1 or 2 Serrano or Thai chiles, stem on, split lengthwise
1 1/2 pounds medium carrots, peeled, cut into 2-inch chunks
1/2 cup thinly sliced scallions
1 cup cilantro sprigs, for garnish
1/2 cup mint leaves, for garnish
1/2 cup small basil leaves, preferably Thai, for garnish

Steps:

  • Make the marinade: Stir together fish sauce, sugar, ginger, 5-spice powder and pepper.
  • Put beef in a large bowl, add marinade and massage into meat. Let marinate for at least 15 minutes, or longer if time permits (may be wrapped and refrigerated overnight if desired).
  • Put oil in a Dutch oven or heavy-bottomed pot over medium-high heat. When oil is hot, fry the beef cubes in small batches, taking care not to crowd them, until nicely browned. When all beef is browned, return chunks to pot. Add shallots, stir to combine and continue cooking for 4 to 5 minutes, or until softened.
  • Add tomato, ginger, garlic, lemongrass, salt and annatto, if using, and stir well to coat, then add star anise, cinnamon and chile. Cover with 4 cups water and bring to a boil.
  • Reduce heat to a simmer, cover with lid ajar and cook for about 1 hour 15 minutes, or until fork-tender.
  • Add carrots to pot and cook 15 minutes more. Skim fat from surface of broth as necessary (or refrigerate overnight and remove congealed fat before reheating).
  • To serve, ladle into individual bowls. Garnish with scallions, cilantro, mint and basil.

Ideal for weekends or winter comfort food, this slowly braised Vietnamese stew heroes tender beef and a beautifully balanced sauce, that's just begging to be mopped up with a crispy baguette. Soul-restoring stuff!

1.2kg (2.6 lb) chuck steak, cut into roughly 4cm cubes
vegetable oil for shallow frying
5 small Asian shallots, finely chopped
3 garlic cloves, finely chopped
3 tbsp tomato paste
3 slices of fresh ginger
3 whole star anise
1 cinnamon stick
2 small carrots, cut into bite-sized chunks
1½ tbsp fish sauce (or to taste)
coriander (cilantro) leaves to serve
baguette or steamed rice to serve
Marinade:
1 lemongrass stalk, tender part bruised and finely sliced
3 tbsp fish sauce
1 tbsp brown sugar
1 tsp Chinese 5-spice (try my ultimate Chinese 5-spice mix)

Steps:

  • Step 1.Combine the marinade ingredients in a large bowl. Add the chuck steak and mix well. Allow to marinate for 5-10 minutes.
  • Step 2.Preheat oven to 150°C/300°F.
  • Step 3.Heat a tablespoon of oil in a large heavy-based casserole dish or dutch oven over high heat. Sear the beef (in batches if necessary) until you have good colour on the outside. Transfer the beef to large bowl. Pour over any leftover marinade from the bowl.
  • Step 4.In the same pan over medium-high heat, add another tablespoon of oil. Add the shallots and garlic cook, stirring for 2-3 minutes or until the shallots have softened. Add the tomato paste and cook for another minute. Then add the ginger, star anise and cinnamon stick. Add the beef and any resting juices and toss to coat. Add the carrots and 3 cups of water and stir to combine. Bring to a gentle simmer then cover and place in the oven for 2 hours or until the beef is fork tender. (alternatively, simmer on low on the stovetop for 2 hours). When the beef is cooked, taste the stew for seasoning and the fish sauce (add more or less according to taste).
  • Step 5.Transfer the beef stew to serving plates and top with coriander. Serve with a chunk of baguette and/or steamed rice.

BEEF AND VEGETABLE STEW

1 pound cubed beef stew meat
1 tablespoon vegetable oil
1 onion, thinly sliced
1 (6 ounce) can tomato paste
1 (14.5 ounce) can low fat, low sodium beef broth
1 cup chopped carrots
3 potatoes, cubed
1 sprig fresh rosemary
1 teaspoon dried thyme
1 bay leaf
¼ teaspoon crushed red pepper flakes
10 ounces button mushrooms, quartered
1 (10 ounce) package frozen green peas, thawed

Steps:

  • Remove any bits of fat from the meat. Heat the oil in a large pot over medium high heat. Saute the meat in the oil for 10 minutes, or until browned on all sides. Remove meat and set aside.
  • Add the onion and tomato paste to the pot and saute over medium heat for 5 minutes, or until onion is tender, stirring often. Return the meat to the skillet along with the beef broth, combining with the onion and tomato paste mixture. Reduce heat to low, cover and simmer for 1 to 1 1/2 hours, or until meat is tender.
  • Add the carrots, potatoes, rosemary, thyme, bay leaf and crushed red pepper flakes and simmer, covered, for another 45 minutes. (Note: It may be necessary to add some water if the stew seems too thick.)
  • Finally, add the mushrooms and the peas and allow stew to heat through, about another 10 to 15 minutes. Remove bay leaf and rosemary sprig before serving.

1 can or bottle beer
4 cups beef broth, more as needed

Steps:

  • Heat the oil and butter in a pan and brown the beef. Remove the beef from the pan, throw in the garlic and onions and cook until softened, about 3 minutes. Beef stew is still favoured by many food lovers. Today, I introduce you very easy and tasty beef dish with the slow-stew cooking method. The fine broth comes with soft, chewy beef with elegant, sweet flavour of potatoes, carrots. This dish absolutely consumes a lot of pieces of bread. So, we will start now. I am starving now.

1 kg Beef tendon (or beef shank)
3 tomatoes
2 carrots
4 large potatoes
Large Fresh Root Ginger
6-8 cloves Garlic
Handful of coriander or spring onions
wine, fresh red chili, star anise and cinnamon ((optional))
2 loads of bread baguette
Others: Butter, five-spice powder, fresh ground black pepper, fish sauce, sugar, turmeric powder.

Steps:

  • Cubes the beef tendon into bite-sized pieces then soak it through boiled water. Drain to dry.
  • Finely chop peeled garlic and ginger. Take half of it to marinate the beef tendon with 1 tbsp of fish sauce, ½ tbsp ground sea salt, 1 tbsp five-spices, ½ tbsp of turmeric powder and leave it for 30 minutes for the beef can penetrate all the spices.
  • Wash and slice tomatoes into wedges or according to your preferences.
  • Wash and cut peeled potatoes and carrots into bite-sized pieces.
  • Heat 1 ½ tbsp of butter in a deep pan over the medium heat. When oil boils, add the remaining of chopped garlic, ginger, and fry regularly until it becomes fragrant.
  • Then, add wedged tomatoes into the pan, continue to fry evenly for further 2 minutes.
  • Next, add the beef into the pan and quickly fry over medium heat until it becomes firm. Then add 1tbsp of wine (if preferred) to cook with until the smell of wine disappears.
  • Pour an appropriate amount of water into the pot, make sure the water surface is 1 cm higher than the meat. Season to taste with a pinch of ground sea salt. Cover the pot with a lid and simmer it for at least 30 minutes. If seeing the water runs out, then add more.
  • After that, add potatoes, carrots, and cook, pieces of star anise and cinnamon for further 6-7 minutes until the veggies are done. Season to taste one more time according to your preference. I prefer ground black pepper and a bit of sugar for the flavour enhancement.
  • If you see the water is not a bit condensed then add a pinch of tapioca starch into the broth.
  • Quickly bake loads of bread before serving
  • Ladle the broth over a medium deep bowl. Top with pieces of coriander or finely chopped spring onions, sliced fresh red chili if preferred. Serving with cups of red wine like Cabernet Sauvignon will be the best! Yummy!

I was pleasantly surprised with this recipe because it had so few ingredients. I was searching for a new recipe that used beer instead of my usual recipe with red wine and this was perfect. Time is your friend with this recipe. The beef needs to braise for at least 2.5 hours, maybe longer. I used 1 1/2# of beef and did not decrease the liquid amounts. I only use 2 cups broth out of the suggested 4 cups, so you may want to hold off on adding all of it at once. Just keep checking while it simmers and add more as needed along the way. It's a winner.

1 tablespoon butter
2 lbs beef stew meat, I used 1 1/2 #
1/2 teaspoon kosher salt
fresh ground black pepper
3 garlic cloves, minced

12 ounces beer, I used Heineken
4 cups beef broth, more as needed, I used less
1 tablespoon Worcestershire sauce
2 -3 tablespoons tomato paste

2 parsnips, peeled, roughly sliced
1 small turnip, peeled roughly sliced, I did not use

2 tablespoons all-purpose flour, I used Wondra (optional)
minced fresh parsley, for garnish

Steps:

  • Trim any excess fat off the beef and cut into 2" cubes.
  • Heat the oil and butter in a pan. I use a Dutch oven.
  • Season beef with salt & pepper. Add beef to hot pan and brown the beef.
  • Remove the beef from the pan, (I moved the beef to the outsides of the pan) throw in the garlic and onions and cook until softened, about 3 minutes.
  • Pour in the beer, 1/2 of beef broth, (I started with 1/2 the beef broth and added more when necessary, I only used 2 cups total)
  • Add Worcestershire sauce, tomato paste, sugar, paprika.
  • Return the beef to the pan, cover and simmer on a low heat until the meat is very tender, 1 1/2 to 2 hours. *This may take longer depending on how large your beef chunks are.
  • If the liquid level gets too low, add more broth as needed.
  • About 30-45 minutes before the beef is tender, add the carrots, potatoes, parsnips and turnips and continue to simmer until the vegetables are tender and the liquid is reduced, about 30 minutes.
  • If the stew is still too liquidy, remove a cup of cooking liquid from the pan and stir in the flour / Wondra. Add the flour mixture back into the pan and stir. Simmer for 10 minutes until the stew is thick. The meat should be very tender; if it's tough, let it continue to cook.
  • To finish, add the parsley and stir through the stew.

Inspired by: Inspired by Food Network Although this recipe originally calls for pot roast, I prefer large chunks of stew meat. I also toss several mushrooms into the gravy while baking.

2 lbs beef stew meat, large chunks or 3 lbs pot roast
kosher salt, to taste
pepper, to taste
3 tablespoons canola oil or 3 tablespoons olive oil
2 -3 tablespoons flour
1 large onion, peel and sliced thick in rounds
5 garlic cloves, peel and smashed
1 (15 ounce) can plain diced tomatoes with juice
1/2 cup dry red wine, good enough to drink
2 cups beef broth
2 teaspoons dried thyme leaves
2 whole bay leaves
2 medium red onions, peeled, sliced thick
3 large carrots, peeled and cut into 2-inch chunks
2 medium parsnips, peeled, cut into 1/2-inch coins
3 -4 yukon gold potatoes, peels on and cut into chunks
3 tablespoons olive oil
kosher salt, season to taste
fresh ground black pepper, season to taste

Steps:

  • Preheat the oven to 350°.
  • Heat a large Dutch oven, with a lid, over medium-high heat.
  • In a large bowl or ziplock bag, Add the meat: generously sprinkle with salt and pepper, and lightly coat with the flour.
  • Add the oil to the pot, lay the meat in the pan and sear on all sides until a deep mahogany brown, about 10 minutes.
  • Transfer the meat to a plate. Pour all but about 2 tablespoons of the oil from the pan, add more oil if necessary.
  • Add the onion and garlic to the pan, and cook until fragrant and soft, about 5 minutes.
  • Add the diced tomatoes w/ liquid to the pot, and cook until a deep brick red, about 2 minutes more.
  • Add the wine, and with a wooden spoon scrape up any browned bits that cling to the bottom of the pot.
  • Add the beef broth, thyme, and bay leaves, and bring to a boil.
  • Return stew meat to the pot, nestle it in the liquid, cover and transfer pot to the oven.
  • Cook until the meat is just tender, about 1 1/2 hours.
  • Meanwhile, In a large bowl or zip lock bag: toss the onions, carrots, parsnips, and potatoes with the olive oil, salt, and pepper.
  • Spread out on a oil sprayed baking sheet in 1 layer. You may have to use 2 baking sheets.
  • NOTE: Add more root veggies as you like. cut to similar size.
  • The veggies can be roasted in a 350° oven for about 45 -60 minutes while stew/roast is cooking.
  • Once the meat comes out of the oven, raise the temperature to 450 degrees F.
  • Roast the vegetables, turning about halfway through cooking, until caramelized and tender, about 30 to 45 minutes.
  • While roasting the root veggies, Keep the stew meat warm in the sauce on the stove top until ready to serve. Place the veggies in the pot before serving. Stir gently to combine.

2 stalks lemongrass, fresh (sub 2 tablespoons dried lemon grass)
2 lbs stewing beef, cut into 2-inch cubes (beef chuck fine)
2 red chilies, fresh, seeded and minced (we'll use dried whole)
2 teaspoons sugar
2 tablespoons gingerroot, grated fresh
2 teaspoons ground cinnamon
2 teaspoons curry powder
3 tablespoons fish sauce
black pepper, freshly ground, to taste
2 teaspoons salt
3 tablespoons vegetable oil
1 onion, minced (a big 'un)
6 garlic cloves, minced
1/4 cup tomato paste
4 star anise
2 carrots, cut into 1-inch chunks
2 potatoes, peeled and cut into 1-inch chunks
1 small daikon radish, peeled and cut into 1-inch chunks (2 medium turnips fine too)

Steps:

  • If you are using fresh lemon grass, discard the outer leaves and upper half of the stalk. Slice paper-thin; chop very fine. If you are using dried lemon grass, soak in warm water for 1 hour. Drain and finely chop.
  • In a bowl, combine the beef with the lemon grass, chiles, sugar, ginger, cinnamon, curry powder, fish sauce and black pepper to taste. Sprinkle in 1 teaspoon of the salt; mix well. Let stand for 30 minutes.
  • Heat 2 tablespoons of the oil in a large, heavy saucepan or pot over high heat. Add the beef and marinade and stir quickly to sear, about 2 minutes. Remove the meat to a bowl.
  • Add the remaining 1 tablespoon oil to the saucepan. When the oil is hot, add the onion and garlic and stir-fry until fragrant, about 1 minute. Add the tomato paste and stir for 2 minutes. Add the beef, star anise, the remaining 1 teaspoon salt and 4 cups of water. Bring the mixture to a boil. Reduce the heat to low, cover the pan and simmer until the beef is tender, about 1 ½ hours.
  • Add the carrots and simmer for 10 minutes. Add the potatoes and continue simmering for 10 minutes longer. Add the daikon and cook for another 10 minutes.
  • Serve hot with French bread.

Vietnamese Beef Stew image

This is a very substantial beef stew from an asian recipe. The ingredients in this beef broth have a depth of flavor that satisfys even someone with a strictly western palate. I used cellophane noodles added to the finished product but would suggest if using this type to use sparingly. You can also use linguine. I discovered this recipe in Jennifer Brennan's cookbook "The Cuisines of Asia".

1 3/4 tablespoons vegetable oil
2 lbs stewing beef, cut into 1 inch cubes
1 inch piece gingerroot, peeled, cut into paper thin slices
2 lemons, zest of
4 shallots, peeled and chopped or 1 large onion
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 teaspoon granulated sugar
8 cups cold water
1 cinnamon stick
2 bay leaves
2 teaspoons tomato paste
2 tablespoons fish sauce
5 -6 ounces bamboo shoots
1 medium carrot, roll cut into 6 pieces

Steps:

  • Brown meat in oil in soup kettle in 2 batches by browning 1/2 slightly, remove and brown remainder.
  • Introduce first batch back in and add ginger, lemon peel, shallots, and garlic stirring after each addition. Continue to stir for 1 minute and season with salt, pepper and sugar.
  • Stir again and add water, cinnamon stick, bay leaves, fish sauce and tomato paste. Stir to blend the ingredients and cover pot. Bring to boil, then reduce the heat to low and let the stew simmer for 2 hours or until meat is tender.
  • Remove the lid and add bamboo shoots and carrot. Increase the heat to medium and let the stew cook, uncovered, until the vegetables are tender, about 10 minutes, depending on the vegetables. Remove the bay leaves and cinnamon stick.
  • Add noodles to the stew if using cellophane noodles. Amount according to preference.
  • If using linguine it is suggested stew is poured over noodles in serving bowls. Rice sticks of course on top of stew.

My mom and dad make this dish in the winter a lot. Every time they do, the whole house smells wonderful. One time my mom came to visit me in boarding school in England. She cooked one pot, I ate for a whole week and got on the black list of all Asians in school. It taste good steaming hot with French bread, and also very good in sandwiches. Some ingredients are available at normal grocery stores. You can get star anise and Thai Basil at Asian stores, natural food stores

2 lbs boneless beef chuck, cut into 1.5 inch cube (weigh after trimming)
1 stalk lemongrass, cut into 2 inch pieces and bruised
3 tablespoons fish sauce
1 1/2 teaspoons Chinese five spice powder
1 1/2 teaspoons brown sugar
2 1/2 tablespoons minced ginger
1 bay leaf
3 tablespoons vegetable oil
1 medium onion, chopped
2 cups chopped fresh tomatoes or 1 (14 ounce) can crushed tomatoes
1/2 teaspoon salt
1 lb carrot, peeled,cut into 1 inch chunks
2 star anise
3 cups water
Thai basil (optional)
cilantro (optional)

Steps:

  • Mix lemongrass, fish sauce, 5-spice powder, ginger, brown sugar and bay leaf, marinate the beef for 30 minutes.
  • Over high heat, heat oil in a heavy-bottemed 5-quart pot, sear the beef quickly then remove, reserve lemongrass and bay leaf for later use.
  • Reduce heat to medium, cook onions till translucent (5 minutes), then add tomato and cook with lid on for another 12-15 minutes.
  • If sauce is too thick, add a bit of water.
  • Add back the beef, lemongrass, bay leaf and star anise, cook uncovered for 5 minutes then add water.
  • Bring pot to a boil, then reduce heat to simmer for 1 hour and 15 minutes.
  • Add carrots and simmer for another 45 minutes until beef and carrots are tender.
  • Remove bay leaf, lemongrass and star anise before serving with cilantro and Thai basil.
  • Taste great with steam rice or French bread.
