Sinigang is tamarind base soup; Pork, shrimp, fish and beef can be use to make this soup. I like pork sinigang the best, and I am so very proud to say even before I hardly knew how to cook that I can make a really good sinigang but it didn't come from me, my sisters and even my mother said so :)

600 g Beef
1 pc Onion (large size)
2-3 pcs Tomatoes (medium size / quartered)
250 g Fresh Young Tamarind Fruit
Okra
Water Spinach (or kangkong)
Green Chilis
String Beans (sitaw)
Gabi (taro)
Fish sauce (patis)
Rice Water (optional)

Steps:

  • Put rice water if using or plain water, tomatoes and onion and tamarind in a large saucepan or big pot on high heat and bring to a boil.
  • Heat grill and sear beef on both sides.
  • Take tamarind out of the pan when they're very soft.
  • Put in a bowl and add some water from the pot and mash or pulp it with the back of spoon.
  • Strain and add tamarind liquid to the pot.
  • Add the beef, green finger chillies and gabi (taro).
  • Bring to boil on high heat then lower heat to medium and let it simmer until beef is tender.
  • Add sitaw, if using then the okra.
  • Season with fish sauce to taste and let it simmer/cook for about 5 minutes then add kangkong leaves.
  • Cook for about 3 more minutes then turn off the heat.
  • Serve hot with steamed rice! Happy Eating!

This Filipino dish is everyone's favorite because of its very sour yet savory taste. This menu is made of beef and tamarind, a perfect combination to satisfy your meal.

1 kg Beef bones (cleaned)
1/2 kg Tamarind
1 pc Red onion (cut into strips)
2 pcs Tomatoes
1/2 tsp Salt
1/2 tsp Ground black pepper
1 pc Radish (cut into rounds)
1 bunch String beans (cut into 3-inch long)
3 pcs Green chili
1 pc Eggplant (cut into rounds)
8 pcs Okra (cut into half)
1 bunch Water spinach (get the leaves only)
8 cups Water

Steps:

  • Boil the tamarind and set aside.
  • In a large pot, boil the beef bones and remove the bubbles appearing on top.
  • Add salt, and ground black pepper. Boil for 1 hour.
  • After 1 hour, add onion, tomatoes then cover and boil for another 30 minutes.
  • After 30 minutes, check if the meat is still hard if so, boil it for another 30 minutes.
  • Now add radish, string beans, green chili, okra, and eggplant. Boil for 5 minutes.
  • After 5 minutes, extract the juice from the tamarind by squeezing it. Then get 1 1/2 cup tamarind juice and pour it into the pot.
  • Add the water spinach and cook for 1-2 minutes.
  • Serve hot and enjoy!

3 lbs pork ribs, chopped into 1 inch pieces
2 tablespoons minced garlic
1 medium onion, chopped
1 packet sinigang tamarind soup mix (found in international food section)
16 cups water
1 bok choy, chopped in 1 to 2 inch slices
1 daikon radish, chopped in thin round slices (optional)
1 small tomatoes, chopped fine (optional)
2 small potatoes, chopped in large chunks (optional)
salt

Steps:

  • Saute ribs garlic onions and salt to taste until brown.
  • In Separate large pot add water Sinigang tamarind soup packet (found in international food section) to taste I like the whole packet but less is more in this case if it is to sour for you.
  • Remember you can eat this with rice.
  • Then add the tomato and the pork, cook on medium heat for about 40 min and then add the potatoes cook for another 10 min and then add the Daikon Radish and the Bok choy cook about 10 more min.
  • It is good if the meat easily comes away from the bone.
  • You can eat this straight or over rice or both.

2 tablespoons canola oil
1 large onion, chopped
2 garlic cloves, chopped
1 lb beef stew meat, cut into 1 inch cubes
1 quart water
2 large tomatoes, diced
1 lb taro root, large chunks
2 jalapenos, sliced
1/2 lb fresh green beans, rinsed and trimmed
1 radish, sliced diagonally
1/2 medium head bok choy, cut into 1 1/2 inch strips
1 head fresh broccoli, cut into bite size pieces
1 (1 1/2 ounce) package tamarind soup mix

Steps:

  • Heat oil in medium stock pot. Saute onion and garlic until tender. Add beef to pot, and saute until browned. Pour in water. Bring to a boil, reduce heat, and simmer 20 to 30 minutes. Remove scum from top of soup and discard.
  • Place tomatoes, taro, jalapenos green beans, and radishes in pot, and continue to simmer for 10 minutes. Stir in bok choy, broccoli and tamarind soup mix. Simmer for an additional 10 minutes.
