BEEF SINIGANG (BEEF IN TAMARIND BROTH)
Sinigang is tamarind base soup; Pork, shrimp, fish and beef can be use to make this soup. I like pork sinigang the best, and I am so very proud to say even before I hardly knew how to cook that I can make a really good sinigang but it didn't come from me, my sisters and even my mother said so :)

Steps:
- Put rice water if using or plain water, tomatoes and onion and tamarind in a large saucepan or big pot on high heat and bring to a boil.
- Heat grill and sear beef on both sides.
- Take tamarind out of the pan when they're very soft.
- Put in a bowl and add some water from the pot and mash or pulp it with the back of spoon.
- Strain and add tamarind liquid to the pot.
- Add the beef, green finger chillies and gabi (taro).
- Bring to boil on high heat then lower heat to medium and let it simmer until beef is tender.
- Add sitaw, if using then the okra.
- Season with fish sauce to taste and let it simmer/cook for about 5 minutes then add kangkong leaves.
- Cook for about 3 more minutes then turn off the heat.
- Serve hot with steamed rice! Happy Eating!

- Boil the tamarind and set aside.
- In a large pot, boil the beef bones and remove the bubbles appearing on top.
- Add salt, and ground black pepper. Boil for 1 hour.
- After 1 hour, add onion, tomatoes then cover and boil for another 30 minutes.
- After 30 minutes, check if the meat is still hard if so, boil it for another 30 minutes.
- Now add radish, string beans, green chili, okra, and eggplant. Boil for 5 minutes.
- After 5 minutes, extract the juice from the tamarind by squeezing it. Then get 1 1/2 cup tamarind juice and pour it into the pot.
- Add the water spinach and cook for 1-2 minutes.
- Serve hot and enjoy!

Steps:
- Saute ribs garlic onions and salt to taste until brown.
- In Separate large pot add water Sinigang tamarind soup packet (found in international food section) to taste I like the whole packet but less is more in this case if it is to sour for you.
- Remember you can eat this with rice.
- Then add the tomato and the pork, cook on medium heat for about 40 min and then add the potatoes cook for another 10 min and then add the Daikon Radish and the Bok choy cook about 10 more min.
- It is good if the meat easily comes away from the bone.
- You can eat this straight or over rice or both.

- Heat oil in medium stock pot. Saute onion and garlic until tender. Add beef to pot, and saute until browned. Pour in water. Bring to a boil, reduce heat, and simmer 20 to 30 minutes. Remove scum from top of soup and discard.
- Place tomatoes, taro, jalapenos green beans, and radishes in pot, and continue to simmer for 10 minutes. Stir in bok choy, broccoli and tamarind soup mix. Simmer for an additional 10 minutes.
