TACO CASSEROLE WITH RICE

This Taco Casserole with Rice includes layers of zesty ground beef, tomatoes, corn, gooey cheese and crunchy tortilla chips for an easy dinner that the entire family will love!

Number Of Ingredients 12

1 lb. lean ground beef
1 small onion, diced ((or about 1 cup of frozen pre-diced onion for a shortcut))
2 cans (10.75 ounces each) condensed tomato soup, NOT diluted
1 cup milk
1 (1 ounce) packet taco seasoning mix
½ teaspoon salt
4 cups cooked rice ((I use 2 packets of Uncle Ben's Ready Rice microwaved according to package instructions))
1 (14.5 ounce) can petite diced tomatoes, NOT drained
1 (11 ounce) can corn with red and green bell peppers, drained
1 cup grated cheddar cheese
1 cup crushed tortilla chips
Optional garnish: chopped fresh parsley, green onions, or cilantro

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
  • In a separate bowl, stir together condensed soup, milk, taco seasoning and salt.
  • Add cooked rice, soup mixture, tomatoes and corn to the cooked beef. Stir to combine. Transfer to prepared baking dish. Sprinkle cheese over top.
  • Bake, uncovered, at 350 degrees F for 25-30 minutes, or until hot and bubbly. Top with crushed chips, allow to rest for 5 minutes, and then garnish with parsley, green onion or cilantro just before serving.

1 pound lean ground beef
2 (8.8 ounce) pouches UNCLE BEN'S® Ready Rice® Garden Vegetable
1 (1.25 ounce) package sodium-reduced taco seasoning
¾ cup water
½ cup shredded Cheddar cheese, divided
2 roma (plum) tomatoes, seeded and chopped
1 avocado - peeled, pitted and sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 10-inch round baking dish.
  • Heat a 10-inch non-stick skillet over medium heat. Cook ground beef, breaking up chunks, until until browned throughout, about 10 minutes. Drain off fat.
  • Stir in tomatoes, taco seasoning, and water and bring to a low simmer; simmer about 5 minutes.
  • Cook rice according to package directions.
  • Stir together ground beef mixture, rice, and 1/4 cup cheese. Spread into prepared baking dish.
  • Top with remaining cheese and bake until cheese is melted and bubbly, about 10 to 15 minutes .
  • Serve with your favorite toppings such as chopped tomatoes or avocado slices, if desired.

A delicious new way to spend Taco Tuesday.

Number Of Ingredients 13

1 lb extra lean ground beef
1 cup long grain white rice (uncooked (do not use instant rice)
1 can tomatoes with diced chilis
1/2 cup heaping favorite salsa (I love my homemade salsa or mateos!)
1 packet low sodium taco seasoning (ortega is my favorite brand if not making homemade)
1 cup 98% fat free beef or chicken broth
1 can 98% fat free cream of celery (cream of mushroom/chicken will work as well )
Cooking Spray
lettuce
shredded cheese
crushed tortilla chips
light sour cream
cilantro

Steps:

  • Preheat oven to 375 degrees. In a skillet add ground beef, salt, and pepper, and cook until browned. In a large bowl combine rice, diced tomatoes with chilis, salsa, taco seasoning, broth, cream soup, and cooked ground beef. Stir together until combined well. Spray a casserole dish with cooking spray spread mixture inside. Cover with tin foil. Place into oven and cook for 45-50 minutes until the rice is cooked. Divide into 6 servings. Top with desired toppings such as cheese, lettuce, sour cream, and/or crushed up tortilla chips!

¾ pound ground beef
⅓ cup diced onion
1 clove garlic, minced
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (8 ounce) can tomato sauce
1 cup long-grain white rice
1 cup water
1 (1.25 ounce) package taco seasoning
aluminum foil
½ (8 ounce) package grated sharp Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch casserole dish with cooking spray.
  • Heat ground beef in a skillet over medium heat. Cook and stir, breaking up into crumbles, until browned, about 5 minutes. Add onion and garlic and cook for 5 more minutes. Mix in diced tomatoes and green chiles, tomato sauce, rice, water, and taco seasoning; stir to combine. Transfer mixture to the prepared casserole dish and cover with foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and sprinkle Cheddar cheese evenly over the top. Continue baking until cheese is golden and lightly browned, about 15 minutes more.

Crispy Chickpeas With Beef image

Related to a classic chili, this fast-cooking recipe combines legumes, meat and spices, with excellent results. This dish works equally well with canned or home-cooked chickpeas; if you like a bit more kick, double or triple the ancho chiles or chile powder. Turmeric or saffron also work well. Don't want to use ground beef? Ground turkey, chicken or pork would sub in well here; add a little oil to the pan first. For a bit more flavor, add a clove or two of chopped garlic to the browning meat. The point is: improvise.

Number Of Ingredients 8

1/2 to 1 pound ground beef or other meat
4 cups cooked chickpeas (about 1 28-ounce can), drained (reserve 1 cup liquid)
2 teaspoons ground cumin
1 ancho or chipotle chile, soaked, stemmed, seeded and minced; or 1 teaspoon good chile powder
2 teaspoons minced garlic
Salt and pepper
1 tablespoon extra virgin olive oil
Minced cilantro or parsley for garnish (optional)

Steps:

  • Turn heat to high under a large, deep skillet, and add meat a little at a time, breaking it into small pieces as you do. Stir and break up meat a bit more, then add chickpeas. Keep heat high, and continue to cook, stirring occasionally until chickpeas begin to brown and pop, 5 to 10 minutes. Don't worry if mixture sticks a bit, but if it begins to scorch, lower heat slightly.
  • Add cumin, chili or chili powder and garlic. Cook, stirring, for about a minute. Add reserved cooking liquid, and stir, scraping bottom of pan to loosen any browned bits. Season with salt and pepper, then turn heat to medium-low. Continue to cook until mixture is no longer soupy but not dry.
  • Stir in olive oil, then taste, and adjust seasoning if necessary. Garnish if you like, and serve immediately, with rice or pita bread.
