Bone-in beef short ribs are slow cooked in a sweet-and-spicy barbecue sauce for tender, flavorful, fall-off-the-bone meat. Serve this indulgent dinner with extra barbecue sauce and a side of Betty Crocker™ mashed potatoes.

4 to 4 1/2 lb bone-in beef short ribs, cut into individual ribs
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
3/4 cup Annie's™ Naturals organic sweet & spicy BBQ sauce
2 tablespoons whole grain mustard
Sliced green onions, if desired
Betty Crocker™ creamy butter mashed potato mix, prepared as directed on package, if desired

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Season ribs with salt and pepper. Cook ribs in two batches, on all sides 2 to 3 minutes per side, until browned. Transfer ribs to slow cooker; discard fat and drippings.
  • In small bowl, mix beef broth, 1/2 cup of the barbecue sauce and the mustard. Pour over ribs in slow cooker. Cover; cook on Low heat setting 8 to 9 hours or until tender.
  • With slotted spoon or tongs, carefully remove ribs to serving platter. In small microwavable bowl, heat remaining 1/4 cup barbecue sauce covered on High 30 to 60 seconds or until heated through. Brush ribs with heated barbecue sauce; garnish with sliced green onions. Serve with mashed potatoes.

1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/3 cup beef stock
1/4 cup red wine
1/2 cup water (divided)
Optional: 1/2 teaspoon liquid smoke
1 cup barbecue sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon garlic powder

Steps:

  • Gather the ingredients.
  • On a work surface, rub the ribs with salt and pepper.
  • In a large skillet, heat the olive oil and place the ribs to sear on all sides, or about 2 to 3 minutes. You want a nice brown color all over the exterior.
  • Remove the ribs from the pan and place them in the ceramic insert of the slow cooker.
  • In a medium-size bowl, combine the beef stock , red wine, 1/4 cup of water, and liquid smoke, if using.
  • Pour the stock mixture on top of the ribs and set the temperature of the pot for medium heat. Cook the ribs for 2 1/2 to 3 hours.
  • Check the ribs after 2 1/2 to 3 hours and discard all the rendered fat by carefully draining all the liquid in the pot. Keep the ribs in the ceramic insert.
  • In a medium-size bowl, combine the barbecue sauce, 3 tablespoons of the remaining water, the Worcestershire sauce, onion powder, chili powder , and garlic powder. Combine well.
  • Pour the barbecue sauce mixture over ribs and reduce the slow cooker heat to low. Allow the ribs to cook for another 2 to 3 hours. Stir well before serving.

6 x 300 - 350g / 10 - 12 oz beef ribs ((aka beef short ribs) (Note 1), patted dry)
1 tbsp brown sugar ((sub white))
2 tsp paprika
1 tsp garlic powder ((sub 1 tsp fresh garlic))
1 tsp onion powder ((sub garlic powder))
1/2 tsp cumin powder
3/4 tsp mustard powder ((Note 2))
1 tsp salt
1/2 tsp black pepper
2 garlic cloves (, minced (sub 2 tsp powder))
1/2 cup apple cider vinegar ((Note 2 subs))
1 1/2 cups ketchup (, or Aussie tomato sauce)
1/2 cup brown sugar (, loosely packed (ie don't pack it tight)(sub white))
2 tsp EACH black pepper, onion powder, mustard powder ((Note 2))
1 tsp cayenne pepper ((adjust to taste re: spiciness))
1 tbsp Worcestershire sauce ((sub soy sauce))
2 cups water
Parsley or chives (, chopped)

Steps:

  • Preheat oven to 160°C/320°F (all oven types).
  • Mix Rub in a small bowl large, enough to fit one rib.
  • Press beef ribs into the rub, coating all sides. Shake off excess.
  • Mix Barbecue Sauce ingredients, except water, in a baking pan. Then mix in water.
  • Place ribs in sauce, turning to coat. Arrange meat side down in the sauce, bone side exposed (sauce won't cover completely, that's ok).
  • Cover tightly with foil or lid, bake 3 1/2 hours.
  • Remove from oven, remove foil. Turn ribs (some may have fall over, that's ok, just turn them). Spoon over sauce.
  • Bake 30 minutes uncovered, spooning over sauce again halfway through, until surface is caramelised and sticky. Check to ensure ribs are tender - pry a bit apart using two forks. (If not, cover and return to oven, but after 4 hrs they certainly should be!)
  • Remove ribs onto serving plate (use a spoon as meat will barely be attached to bone, if at all). Mix sauce to bring together (Note 3 on adjustments). Serve with ribs!

1/2 cup onion, chopped
2 garlic cloves, minced

2 tablespoons prepared mustard (not dry)

Steps:

  • In a large skillet (with no oil or shortening), brown shortribs on all sides, then cover and cook for an hour at low heat and drain off drippings from pan.
  • Combine the rest of the ingredients for the sauce.
  • Pour sauce over shortribs in pan, cover tightly, and cook 1 1/2 hours longer at low temperature (or until meat is tender).

3 pounds bone-in beef short ribs
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
4 medium carrots, cut into 1-inch pieces
1 cup beef broth
4 fresh thyme sprigs
1 bay leaf
2 large onions, cut into 1/2-inch wedges
6 garlic cloves, minced
1 tablespoon tomato paste
2 cups dry red wine or beef broth
4 teaspoons cornstarch
3 tablespoons cold water
Salt and pepper to taste

Steps:

  • Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. Add carrots, broth, thyme and bay leaf to ribs., Add onions to the same skillet; cook and stir over medium heat 8-9 minutes or until tender. Add garlic and tomato paste; cook and stir 1 minute longer. Stir in wine. Bring to a boil; cook 8-10 minutes or until liquid is reduced by half. Add to slow cooker. Cook, covered, on low 6-8 hours or until meat is tender., Remove ribs and vegetables; keep warm. Transfer cooking juices to a small saucepan; skim fat. Discard thyme and bay leaf. Bring juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened; press cancel. If desired, sprinkle with additional salt and pepper. Serve with ribs and vegetables.
