Leftover Pot Roast Pot Pie uses the potatoes, carrots and beef to make a delicious beef pot pie for a quick and easy dinner recipe.

1 to p and bottom pie crust for a 10 inch pie (homemade or store bought (I made a whole wheat crust))
2 cups cooked (cubed beef (I used leftover pot roast))
3-4 cups total of cooked potatoes
2 1/2 cups beef gravy (I used the leftover drippings to make some. You can make homemade or use storebought.)
1 teaspoon Worcestershire sauce
Salt and Pepper to taste.
1 egg (beaten (to brush on the crust if desired))

Steps:

  • Preheat oven to 425 F. Prepare the pie dough and line the bottom of the pie plate with the bottom crust.
  • In a large bowl, mix together the beef, potatoes, carrots, peas, gravy, Worcestershire sauce and salt and pepper. Gently fill the crust with the mixture and top with the second crust. Crimp the edges and brush with a beaten egg, if desired.
  • Bake at 425 F for 30-35 minutes or until the crust is golden brown and cooked through. Serve immediately.
  • ***You can also cook fresh beef and vegetables for the pie instead of using leftovers, but it will take a bit longer.***

2 russet potatoes (diced)
1/2 yellow onion (diced)
4 tablespoons unsalted butter
1/4 cup flour
2 cups beef broth
1 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
2 cups frozen mixed vegetables (corn, peas, carrots and green beans)
1 1/2 cups roast beef (cooked and chopped)
2 refrigerated pie crusts
1 large egg (beaten)

Steps:

  • Preheat oven to 375 degrees.
  • Add potatoes to a large pot with water and boil them for 10 minutes.
  • Drain and set aside.
  • Add butter to skillet along with onions and cook for 4-5 minutes until translucent.
  • Whisk in the flour until combined then add the broth and whisk well until smooth.
  • Cook for 4-5 minutes until thickened.
  • Add in the potatoes, mixed vegetables, roast beef, salt and pepper and stir well.
  • Line pie plate with pie crust.
  • Pour mixture into pie plate (if your plate is shallow and it will overfill stop filling it).
  • Cover with seconds pie crust and seal around the edges.
  • Cut two small slits into the top of the pie and gently press out any air stuck inside.
  • Brush with beaten egg and top with kosher salt and pepper if desired.
  • Bake for 30 minutes then lower temperature to 325 and bake an additional 30 minutes.

3 cups beef broth

1 tablespoon parsley (dried)
1 batch pie pastry (for ​a 1-crust pie)
2 tablespoons evaporated milk (or regular milk; more or less as needed)

Steps:

  • Gather the ingredients.
  • In a medium saucepan, cook onion in butter until onion is tender.
  • Stir in flour and salt and cook, stirring constantly, for about 2 minutes.
  • Slowly stir in beef broth. Continue to cook, stirring constantly, until thick and bubbly.
  • Add leftover beef, peas, carrots, and parsley; heat through.
  • Taste and adjust seasonings, adding more salt if necessary.
  • Preheat oven to 450 F. Pour beef mixture into a 2-quart casserole dish.

1 (10 3/4 ounce) can cream of mushroom soup

1 1/2 cups milk
1/2 cup butter, melted

Steps:

  • Spread beef pieces over bottom of 13 x 9 baking pan. Spread vegetables over top. Spoon cream of mushroom soup over veggies and spread out. Pour beef broth over this.

4 slices bacon, chopped
1 onion, thinly sliced
1 clove garlic, minced
1/2 pound mushrooms, trimmed and thinly sliced
2 cups leftover pot roast, cut into bitesized cubes or strips
1 cup thawed "petite" peas
3 tablespoons butter
3 tablespoons flour
2 1/2 cup chicken broth or beef broth
1/4 cup chopped dill weed
1 Kosher dill pickle, chopped
Salt and pepper
Refrigerated pastry crust for top of 9inch pie

Steps:

  • In a skillet heat bacon and cook until bits have rendered. Strain and reserve the bits for later. In remaining fat in skillet (add some oil if not enough) add onions and saute for 5 minutes or until tender. Add garlic and mushrooms and continue to saute a couple of minutes or until cooked through. Remove the skillet from the heat and strain out any excess fat and liquid by pouring contents through a sieve; add bacon bits to onions and mushrooms in a mixing bowl. Stir in leftover pot roast and peas and set aside. In a small saucepan, heat 3 tablespoons of butter and add the flour. Cook for a minutes to make a roux. Add broth and whisk vigorously . Bring to a simmer and cook for a few minutes or until thickened. Add dill weed and pickle and adjust the seasoning.
  • Preheat oven to 475 degrees. Pour sauce over the beef, peas, etc. and season to taste with salt and pepper. Pour the mixture in a quartsize, 2 inch deep round baking dish. Roll out pastry and set over the pie. Tuck excess dough under the rim and crimp the edges decoratively if you wish. Cut a couple of slits in the crust to allow steam to escape. Set pie on a baking sheet and set in middle of oven. Bake at high heat for 15 minutes. Lower heat to 375 degrees and bake for 15 minutes more or until crust is golden and the filling is hot.

1 (14.1 ounce) package double-crust pie pastry, thawed
4 tablespoons butter
4 tablespoons all-purpose flour
1 ½ (14.5 ounce) cans beef broth
1 dash hot pepper sauce, or more to taste
salt and ground black pepper to taste
2 cups shredded leftover pot roast
1 cup diced cooked potatoes
¾ cup diced cooked carrots
½ cup diced cooked onions
½ cup frozen peas
½ cup frozen corn

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place one pie crust into a pie pan and press into place; prick bottom and sides with a fork. Set the second pie crust aside.
  • Bake pie crust in the preheated oven for 3 to 5 minutes; it will still be pliable so you can seal it with the top crust later. Remove from the oven and lower temperature to 375 degrees F (190 degrees C).
  • Melt butter in a large pan over medium heat. Whisk in flour to make a roux; cook and whisk until golden, 3 to 4 minutes. Whisk in beef broth; continue to cook, whisking constantly, until thickened, 3 to 5 minutes. Add hot pepper sauce, salt, and pepper.
  • Stir in shredded pot roast, potatoes, carrots, onions, peas, and corn. Pour into the partially baked pie crust and cover with the remaining pie crust. Fold the edges of the top crust under the bottom crust and press edges together to seal. Cut 3 to 4 slits in the top crust to allow steam to escape.

1 pound sirloin steak, cubed
salt to taste
ground black pepper to taste
1 (14 ounce) can beef broth
3 large carrots, diced
3 potatoes, cubed
1 cup frozen green peas, thawed
3 tablespoons cornstarch
⅓ cup water
2 (9 inch) refrigerator pie crusts

Steps:

  • In a saucepan over medium heat, brown the pieces of meat on all sides. Pour in some water to almost cover. Bring to a boil and reduce heat. Simmer until meat is tender and falls apart easily; about 2 to 3 hours. Transfer meat to a large mixing bowl. Shred the meat slightly and add salt and pepper to taste.
  • In another 2 quart saucepan over medium heat, pour in beef broth and add carrots and potatoes. Cook until almost tender; about 15 to 20 minutes. Preheat oven to 350 degrees F (175 degrees C).
  • When the carrots and potatoes are done, transfer to the large mixing bowl with the beef; leaving the liquid in the pan. Combine the peas with the carrots, potatoes and beef.
  • Dissolve the cornstarch with the 1/3 cup of water. Pour into the saucepan of beef broth, stirring constantly. Bring to a simmer and reduce heat; cook for 5 minutes.
  • Line a 9 inch pie plate with one of the pie crust following the package directions. Place the beef mixture into the pie crust. Pour the gravy over the top of the mixture, then cover with the other pie crust. Bake in a preheated oven until the crust is golden brown; about 25 minutes. Let cool for 5 minutes before serving.

I always make this pot pie with the left over gravy from my blade pot roast (recipe#151068) if I don't have 2 cups I add in some consomme or beef broth to make up the 2 cups, but you can use any leftover gravy recipe or just use canned consomme or beef broth, but I have to say it's much better using gravy --- this can also be made using a double pastry but I don't bother with that it's just as good, and easier using just one pastry top --- make certain to simmer all the sauce with the cooked beef on top of the stove for about 15-20 minutes, this will improve and intensify the filling mixture --- do not season with salt until just before ready to transfer into the pie dish or casserole, trust me the beef filling is so good you may find that you will have it half eaten before you even get a chance to bake it in the crust and it's also wonderful topped on baked puff pastry shells too --- please do not omit the potatoes and carrots, they add so much to this pot pie --- you will love this!

2 carrots, peeled (cut into about 1/4-inch cubes or a little larger)
1 (10 ounce) can sliced mushrooms, well drained
salt & freshly ground black pepper (to taste)

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare a 10-inch deep-dish pie plate or use a medium casserole dish.
  • In a small saucepan cook the cubed potatoes and diced carrots together in boiling water with a teaspoon of salt until the potatoes are JUST until fork-tender (about 6-8 minutes) they should cook at the same time, don't worry if the carrots are a bit more firmer (do not overcook the potatoes) drain and set a side.
  • Heat butter in a large skillet over medium-high heat; add in onion, celery, dried chili flakes (if using) saute until soft (about 3-4 minutes).
  • Add in garlic and cook 2 minutes.
  • Stir in the tomato paste for 1 minute.
  • Stir in flour, then whisk for 1 minute.
  • Add in the gravy (or consomme or broth) whisk until thickened (about 2-3 minutes).
  • Add in the Worcestershire sauce (ONLY if you are using just the beef broth, if you are using leftover beef gravy then omit).
  • Add in the cooked beef and mushrooms; simmer for about 15-20 minutes on top of stove.
  • Add in the cooked potatoes and carrots; mix to combine.
  • Season with salt if needed.
  • Pour the mixture into deep-dish pie plate or casserole dish.
  • Top with pie pastry, leaving about 1-1/2 inches all around the dish.
  • Flute the ends of the pastry all around the dish, then cut a couple of slits on top to let steam escape.
  • Place on a baking sheet to catch any spills.
  • Bake for about 40-45 minutes, or until the filling is bubbly and the pastry is browned.
  • Delicious!
