Beef Kabobs with Parmesan Orzo image

Skewers of grilled top beef sirloin cubes and colorful red and yellow bell pepper chunks, lightly seasoned with Italian dressing, are served atop a bed of orzo, a tiny rice-shaped pasta, flavored with fresh basil and Parmesan. Add a tossed green salad, fresh baked corn muffins and lemon-infused iced tea to complete the meal.

1 pound Sirloin Or Flank Steak cut 1-inch thick
2 ea Bell pepper red or yellow, cut into 1-inch pieces
1 teaspoon Dried basil or 1 tablespoon fresh basil
1 tablespoon Italian dressing
2 large Garlic Cloves minced
1 cup Pasta, orzo cooked
1 cup Basil or Parsley
2 tablespoons Parmesan
2 teaspoons Olive oil

Steps:

  • 1. Soak eight 8-inch bamboo skewers in water 10 minutes. 2. Cut beef steak into 1 1/4-inch pieces. Toss beef and bell peppers with 1 tablespoon basil, dressing and garlic in large bowl. Alternately thread beef and peppers onto skewers. 3. Toss orzo ingredients in medium bowl; keep warm. 4. Place kabobs on grid over medium, ash-covered coals. Grill, uncovered, about 8 to 10 minutes for medium rare to medium doneness, turning occasionally. Serve with orzo.

Beef-Vegetable Kebabs with Orzo image

This is a grilling recipe that you'll want to make over and over again. Beef-vegetable kebabs with orzo will leave you and everyone feeling satisfied!

4 tsp. salt
2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1/4 tsp. ground oregano
1/4 tsp. ground thyme
2 1/4 lb. top sirloin or tri-tip steak, trimmed of fat and cut into 1-inch pieces
Salt, to taste
1 1/2 c. orzo
Olive oil for the orzo and kebabs
Black pepper, to taste
2 pt. yellow or red cherry tomatoes
1 large red bell pepper, seeded and cut into chunks
1 zucchini, halved lengthwise and sliced crosswise into chunks
1 large red onion, cut into chunks

Steps:

  • For the spice mix: Mix the salt, paprika, garlic powder, onion powder, black pepper, cayenne, oregano and thyme in a small bowl.
  • For the kebabs: Pat the meat dry and sprinkle with the spice mix. Place in large resealable plastic bags and refrigerate 2 to 3 hours. Remove from the fridge 30 minutes before grilling.
  • For the orzo: Bring a pot of salted water to a boil. Add the orzo and cook according to the package directions. Drain and return to the pot. Toss with olive oil and season with salt and pepper. Keep warm while you grill the kebabs.
  • Preheat a grill or grill pan to medium high. Thread the meat, cherry tomatoes, bell pepper, zucchini and red onion onto 18 skewers, alternating ingredients. Brush lightly with olive oil and season the vegetables with salt.
  • Grill the kebabs, turning a few times, until charred, about 4 minutes for medium-rare steak. Serve with the orzo.

  • Soak 8-inch skewers in water 10 minutes; drain.
  • Cut beef steak into 1 inch pieces.
  • Combine 1 Tablespoon basil, dressing and garlic in large bowl.
  • Add beef, onions, & bell peppers; toss to coat.
  • Cook orzo according to package directions; drain.
  • Toss with basil, cheese and oil; keep warm.
  • Alternately thread beef, onions and peppers evenly onto bamboo skewers.
  • Place on grid over medium ash-covered coals.

½ cup butter
¼ cup finely chopped onion
⅓ cup ketchup
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon paprika

1 clove garlic, minced
1 tablespoon Worcestershire sauce
1 dash hot sauce
2 pounds beef sirloin, cut into 1 inch cubes
½ pound fresh mushrooms, stems removed
1 pint cherry tomatoes
1 large onion, quartered
1 large green bell pepper, cut into 1 inch pieces

Steps:

  • In a saucepan over low heat, mix the tomato juice, butter, onion, ketchup, mustard, salt, paprika, pepper, garlic, Worcestershire sauce, and hot sauce. Simmer for 30 minutes, remove from heat, and allow to cool.
  • Preheat grill for medium heat.
  • Thread the sirloin cubes, mushrooms, cherry tomatoes, onion quarters, and green pepper pieces onto skewers, alternating as desired. Drizzle some of the sauce over the kabobs.
  • Oil the grill grate. Arrange kabobs on the grill. Grill 10 minutes, or until meat is cooked through, occasionally turning kabobs. Baste with sauce during the last 5 minutes.

1 bottle (8 ounces) French or Russian salad dressing
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 pound beef top sirloin steak, cut into 1-1/2-inch cubes
8 to 10 bacon strips, cut in half
1 sweet red pepper, cut into chunks
1 green pepper, cut into chunks
2 small zucchini squash, cut into chunks
8 medium fresh mushrooms
1 large onion, quartered, optional

Steps:

  • In a small bowl, whisk the first five ingredients. Place half of marinade in a large resealable plastic bag. Add beef; seal bag and turn to coat. Refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in bag. Wrap bacon around beef cubes.
