Steps:
- Preheat the oven to 350°
- In a large skillet brown and crumble the ground beef, drain any excess grease.
- Add the onions, garlic and salt saute for about 5 minutes until the onions are slightly softened. Stir in the 3 tbsp water, 2 tsp chili powder, 1 tsp cumin.
- If using the cilantro, stir it in now. Remove the pan from the heat.

- Brown beef and onion together
- Drain - if necessary
- Add seasoning to beef and stir in
- Mix enchilada sauce and tomato sauce together
- Place enough to cover the bottom of a 9×13 inch casserole dish
- Cover with half of the tortillas - tearing them in half where needed
- Add half of the sauce, half of the cheese, and all of the ground beef
- Layer with the rest of the torillas
- Add the rest of sauce
- top with cheese
- Bake at 350 degrees for 20 minutes

- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet, sprinkling in pepper and taco seasoning, until browned and crumbly, 5 to 7 minutes. Add onion, bell peppers, and carrots; saute for 5 minutes.
- Pour guajillo sauce into a large measuring cup and stir in sugar. Pour sauce over the beef mixture; stir in black beans.
- Place 3 tortillas on the bottom of a casserole dish. Add half the meat mixture on top. Sprinkle 1/2 of the shredded cheese on top. Repeat the layers, ending with cheese on top.
- Bake in the preheated oven until cheese is melted and golden brown, about 25 minutes.

GROUND BEEF ENCHILADAS WITH RED SAUCE
I dont like the store bought red enchilada sauce, so I make my own. You can use any beans you like, black, pinto, chili or kidney. I have also left the beans out, and spread the tortilla with refried beans before adding the beef mixture. Either way is great. I like to make the sauce and beef mixture the night before, then all I have to do is assemble and bake, and its super easy. This recipe freezes well. Sometimes I like to make a double batch of the sauce, and freeze for later use.

- Add the onion and garlic to a large saucepan with the olive oil. Saute 5 minutes. Add the green chilis, tomato sauce, tomato paste, water, chili powder, cayenne, cumin, pepper and salt. Bring to a low boil and simmer covered for 30 minutes. Let cool to room temperature.
- Saute with the ground beef and onion until cooked through. Drain. Add the beans to the beef mixture. Add 2/3 cup of the enchilada sauce to the beef mixture and stir.
- To each tortilla, add 1/2 cup ground beef mixture.
- In a 9x13 pan, add 1 cup enchilada sauce. Put the filled torillas in the baking dish seam side down. Pour the remaining sauce over the tortillas.
- Bake in an oven at 350 degrees for 20 minutes covered with foil. Remove the foil and top with shredded cheddar cheese. Bake for an additional 10 minutes or until the cheese is melted. Serve with salsa and sour cream if desired.

BEEF ENCHILADAS WITH RED SAUCE
This recipe was handed down to me from my Mother, LaNelle who received it from my Grandma Laura (my Daddy's Mother). This is one of the first entrees I learned to make as a teenager. Over the years I have tweaked the recipe a little, but overall it is pretty much the same. My friends and family request this the most - I am known for my enchiladas. This is a classic Tex-Mex recipe.

- For the Sauce: Melt butter in bottom of large sauce pan, add diced onion and bell pepper, cook on medium heat until onions are translucent. If using fresh garlic cloves, add the two minced garlic cloves after onions are cooked. Stir the flour into butter/onion mixture stir for two minutes. Add in the tomato sauce, mix thoroughly with whisk (mixture will thicken quickly). After adding tomato sauce, slowly add in the water and continue to stir until the sauce is smooth. Begin to add the dry spices; 4 heaping tablespoons chili powder, ¼ teaspoons cayenne pepper, ½ teaspoons black pepper and the garlic powder if you did not add in garlic cloves. Stir and let simmer several minutes, taste sauce for any addition of salt if necessary. Start with 1 teaspoons additions until adjusted. If using sauce right away - allow to simmer for 15 additional minutes. Enchilada Sauce recipe makes approximately 4 cups of sauce.
- To put enchiladas together: Heat vegetable oil in small skillet on medium/low to medium heat. Cook tortillas in oil for approximately 5-7 seconds, until tortillas are softened. Remove tortillas from hot oil with tongs onto paper towels to drain. Once tortillas are cool enough to handle, fill with heaping tablespoons of cooked, drained, ground meat and sprinkle with shredded cheese. Roll up tortilla, place seem side down into 9 x 13 casserole dish; continue rolling tortillas until pan is full. Pour enchilada sauce over filled tortillas, sprinkle with remaining cheese, and bake in 350° oven for 25 minutes or until bubbly around edges.

- boil chicken and spices in water until cooked.
- when cool, chop chicken and mix with sour cream and half the cheddar-jack mix (shredded cheese).
- put the chicken broth in a smaller ramekin (I used a 7" x 3").
- place a tortilla on the bottom, you can slice it to fit better.
- add chicken mixture.
- add another tortilla on top.
- top with remaining cheese.

- Cook the ground beef. Add the seasonings, the soup, and the sour cream. Pour a thin layer of the enchilada sauce on the bottom of your pan.
- Place 4 tortillas in pan and 1/3 of the meat mixture. Then top with cheese. Layer like this until all the meat mixture and tortillas are used. Top with cheese and any remaining sauce. Cook @ 350 degrees for 30 minutes.

FREEZER FRIENDLY BEEF ENCHILADA CASSEROLE
This layered enchilada dish freezes well and has great flavors. If desired, you can quickly fry the tortillas for 1-2 seconds per side in 3 to 4 tablespoons vegetable oil over medium heat before adding to the dish. Make sure to thoroughly drain excess oil after frying.

- Brown meat and onion in large skillet.
- Meanwhile, prepare sauce: In medium bowl, combine red and green enchilada sauces, sour cream and cream or milk. Whisk together until well blended and smooth.
- Drain meat and return to pan. Add dry taco seasoning, salt, pepper, green chiles, green chile salsa, and water. Mix well, cover, simmer for 15 minutes. Check to see that most of the water has been absorbed, but do not allow the meat to become dry. Adjust seasonings if needed.
- In foil and plastic wrap lined 9x13 baking dish, pour 3/4 cup of sauce on bottom of dish to cover. Place half of the tortillas in single layer on sauce. Top with half meat mixture, the sprinkle with cheese. Repeat tortilla/meat/cheese layers. Pour remaining sauce over layers and top with cheese. Cool enchiladas completely. Wrap and freeze.
- To serve, thaw completely and bake at 350 degrees for 18 to 20 minutes until cheese is bubbly and heated through.
- Serve with lettuce, tomato, guac, sour cream if desired.

- Brown the ground beef until almost completely done. Add the garlic and onion and cook until softened. Drain. Add the salsa, 1 cup of the cheese, and 2 tablespoons of the enchilada sauce. Stir until the cheese is melted.
- In a separate pan, heat the oil. Add the flour to make a roux. Cook until bubbly (about 3 minutes).
- Add the remaining enchilada sauce, the whipping cream, and the cumin. Let cook until thickened (about 5 minutes), stirring frequently.
- Pour 1 cup of this sauce in a greased, 13x9" baking pan.
- Take the tortillas and place 3 tablespoons of the beef filling on the tortilla. Roll it into the traditional enchilada shape and place together in the pan with the rolled ends underneath. Pour the rest of the sauce over the rolled enchiladas.
- Cover the baking pan with foil and bake at 350 degrees for 30 minutes.
- Remove the foil and sprinkle with the remaining cheese.
- Bake, uncovered, for 5 to 10 minutes more.
- If desired, garnish each serving with the sour cream, olives, and/or green onions.
