2 teaspoons butter
1/2 pound beef top sirloin steak, cut into 1/4-inch-thick strips
2 tablespoons diced onion
1-1/2 cups quartered fresh mushrooms
3/4 cup Burgundy wine or beef broth
1/4 cup plus 2 tablespoons water, divided
3 tablespoons minced fresh parsley, divided
1 bay leaf
1 whole clove
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups uncooked medium egg noodles (about 4 ounces)
1 tablespoon all-purpose flour
1/2 teaspoon browning sauce, optional

Steps:

  • In a Dutch oven or large nonstick skillet, heat butter over medium-high heat; saute beef and onion just until beef is lightly browned, 1-2 minutes. Stir in mushrooms, wine, 1/4 cup water, 2 tablespoons parsley and seasonings; bring to a boil. Reduce heat; simmer, covered, until beef is tender, about 1 hour., Meanwhile, cook egg noodles according to package directions. Drain., In a small bowl, mix flour and remaining water until smooth; stir into beef mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Discard bay leaf and clove. If desired, stir in browning sauce. Serve over noodles. Sprinkle with remaining parsley.

1 pound sirloin steak, cut into 1-inch cubes
2 tablespoons butter
1 large onion, sliced
1 cup beef stock
2 bay leaves
1 pinch dried thyme
salt and ground black pepper to taste
1 cup frozen peas
1 tablespoon cornstarch
4 cups egg noodles

Steps:

  • Heat a skillet over medium-high heat; cook steak, working in batches, until seared and browned on all sides, about 5 minutes. Transfer seared steak to a plate.
  • Melt butter in the same skillet over medium heat and saute onion until softened, 5 to 10 minutes. Add steak to onion and pour beef stock over steak; season with bay leaves, thyme, salt, and pepper. Bring to a boil, reduce heat to low, cover skillet with a lid, and simmer until steak is tender, 50 minutes to 1 hour 50 minutes. Stir peas and cornstarch into steak mixture; cook uncovered until liquid thickens, about 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain. Serve beef mixture over noodles.

1 teaspoon canola oil
1 cup water, divided
1/3 cup ketchup
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1/2 teaspoon paprika
1/4 teaspoon ground mustard
3 tablespoons all-purpose flour
1 cup uncooked egg noodles
Minced fresh parsley, optional

Steps:

  • In a small skillet, brown beef and onion in oil; drain. 2 tablespoons sherry wine
1 (10 3/4 ounce) can cream of mushroom soup
1 teaspoon sugar
2 garlic cloves, minced
1 small white onion, chopped
3/4 teaspoon thyme
1/4 teaspoon marjoram
1 teaspoon parsley
1/4 teaspoon black pepper
salt, to taste
12 -16 ounces wide egg noodles
1 -2 tablespoon butter (optional)

Steps:

  • Place beef cubes into crockpot. Add all remaining ingredients EXCEPT egg noodles. Cover and cook on low for 6-8 hours.
  • Just before beef is done, cook egg noodles according to package directions; drain. Use optional butter for the cooked noodles, if desired.

2 1/2-3 lbs beef stew meat, 1-inch cubes approx
1/2 thinly sliced onion
1 (15 ounce) can tomato sauce
2 tablespoons brown sugar, packed
1 tablespoon Worcestershire sauce
1 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon celery seed
1/2 teaspoon pepper
1/4 teaspoon salt
1 tablespoon cornstarch, dissolved in
1 tablespoon cold water
hot mashed potatoes or hot buttered egg noodles

Steps:

  • Place the beef cubes and onion slices in the crock pot.
  • Combine tomato sauce, brown sugar, worcestershire, thyme, basil, celery seed, pepper and salt and pour over meat and onions.
  • Cover and cook on low for 6-8 hours.
  • Turn to high. Dissolve the cornstarch in the water and then stir into the crock pot.
  • Cover and keep on high for 10 minutes.
  • Stir again and serve over mashed potatoes or hot buttered egg noodles.

My favorite Stroganoff recipe. This was the recipe my sister used when she was teaching me to cook. That was almost 30 years ago.

1 lb lean beef, cubed
2 beef bouillon cubes
4 tablespoons sour cream
1 1/2 cups hot water
3 tablespoons flour
6 tablespoons butter
8 ounces mushrooms, sliced
1/2 cup chopped onion
salt and pepper
1 lb wide egg noodles

Steps:

  • Cook beef slowly in butter.
  • Dissolve bouillon cubes in hot water to make broth.
  • Add flour to broth, whisk until smooth.
  • Add the following to the cooked beef:.
  • flour mixture, sour cream, onion and mushrooms.
  • Season to taste.
  • Keep warm on lowest setting in skillet, 20 minutes.
  • DO NOT SIMMER!
  • Serve over cooked egg noodles.

3 c beef stock
1 carrot, chopped
6 sprig(s) fresh thyme
1 bay leaf
2 lb chuck roast, cut into 2 inch cubes
kosher salt
freshly ground black pepper
1 medium onion, chopped
2 Tbsp cognac
5 Tbsp unsalted butter
1 lb mushrooms, sliced
3 clove garlic, choped
2 Tbsp sour cream, plus more for garnish
1 Tbsp dijon mustard
2 Tbsp fresh parsley leaves, chopped plus more for garnish
1 pkg wide egg noodles, 16 oz

Steps:

  • 1. Heat the beef stock with the carrot, 3 thyme sprigs, and bay leaf. Pat the beef dry and season it with salt and pepper. Heat 3 tablespoons oil in a large heavy bottomed skillet over high heat. Fry the meat in batches so that it is browned on all sides. Lower the heat to medium and return all the meat to the pot. Add the onions and cook until they are soft, about 5 minutes. Pour in the cognac and cook until the alcohol has burned off, about 5 minutes. Add the beef stock, discarding the carrot, thyme sprigs, and bay leaf. Cook, partially covered, over a very low flame for 1 1/2 to 2 hours.
  • 2. In a large skillet over medium heat, melt 3 tablespoons butter in the remaining 3 tablespoons olive oil. Add the mushrooms, garlic, and remaining 3 thyme sprigs and cook until the mushrooms are browned and cooked through. Remove from heat and set aside.
  • 3. When the meat is done, remove it from the heat and fold in the mushrooms, sour cream, mustard, and parsley. Taste and adjust the seasoning with salt and pepper.
  • 4. Meanwhile, cook the noodles in a large pot of boiling, salted water until tender. Drain the noodles well, toss with the remaining 2 tablespoons butter, and season with salt and pepper. Serve the stroganoff over the noodles; garnish with more sour cream and chopped parsley.
