- Combine the olive oil, ground beef and chorizo in a skillet over medium-high heat. Cook, stirring, until browned, 5 to 6 minutes. Season with salt and pepper.
- Add the onion and garlic to the skillet and cook, stirring, until softened, about 4 minutes. Clear a space in the pan and add the tomato paste, chili powder, cumin, coriander and paprika; cook, stirring, until incorporated. Add the tomato sauce and 1 cup water; stir everything together and simmer until thickened, 6 to 7 minutes.

- For the beef, make sure there are two available shelves in your oven and preheat the oven to 160C/320F/Gas 3. Heat the olive oil in a flameproof casserole and brown the beef. (You will need to do this in batches, so don't overcrowd the pan.) Using a slotted spoon, lift out the meat and set aside.
- Add the chorizo and onion to the pan and fry until softened and the fat runs from the chorizo.
- Add the carrots and parsnips and continue to cook until tinged with colour and beginning to soften. Sprinkle in the flour and cook for 2-3 minutes, stirring frequently. Pour over the wine and stirring constantly, bring to the boil. Stir in the beef stock.
- Return the beef to the pan and season with salt and freshly ground black pepper. Cover with a tight fitting lid and braise on the bottom shelf of the oven for two hours, or until the meat is tender - check during the cooking time to ensure that the meat doesn't become too dry. If it does, add a splash of boiled water.
- For the dumplings, line a baking tray with non-stick baking paper. Sift the flour into a bowl with a pinch of salt. Add the suet and rosemary and bind together with enough cold water to form a soft dough.
- Using floured hands and working as lightly fingered as possible, divide the mixture into eight and shape into oval dumplings. Place on a baking tray slightly spaced apart.
- Bake the dumplings on the shelf above the beef for the last 25 minutes of the beef's cooking time, until they are puffed up and cooked through.
- Meanwhile, for the mash, boil the potatoes in a pan of boiling, salted water for 15 minutes, or until tender. Drain well and press through a potato ricer into a warm bowl. Mix in the horseradish, butter and cream. Season to taste with salt and freshly ground black pepper.
- Serve the mash with the beef and dumplings.

- Place the dried chili peppers in a glass bowl and cover with boiling water. Let the peppers sit for 15 minutes until soft. Once softened, cut off the stems and place in a blender along with the spices, garlic, onion, lemon juice and water. Blend until it becomes a paste.
- In large bowl, mix the chili paste with the ground beef until well combined; set aside. Heat oil in a pan. Cook the sweet potatoes, onions and garlic until the potatoes soften. Remove from the pan; set aside.
- Add ground beef and chili mixture to the pan; cook through, stirring often and breaking up with a wooden spoon. Remove half the ground beef with a slotted spoon and set it aside. To the remaining ground beef in the pan, stir in the softened sweet potato and onion.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Place peppers, cut-sides down, onto the prepared baking sheet.
- Roast peppers in the preheated oven until the skins are brown and crispy, about 15 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins. Dice flesh and set aside.
- Combine ground chuck and chorizo in a bowl, kneading together as evenly as possible.
- Heat 1 tablespoon oil in a pot over medium heat. Add meat and cook and stir until browned and crumbly, about 10 minutes. Strain out 90% of the grease.
- Stir beer, salsa, chile powder, garlic powder, cumin, onion powder, salt, marjoram, black pepper, and cayenne into the meat. Stir in 1/2 of the diced chile peppers. Crank up the heat and bring to a boil. Reduce heat to low and simmer until most of the liquid has disappeared, about 2 hours; don't let all the liquid evaporate or you'll have dry meat.
- Brush one side of a tortilla with some of the remaining canola oil. On the dry side, about 1/2 inch from one side of the tortilla, spoon a line of beef and chorizo, sprinkle with Colby-Jack cheese, and top with some diced chile peppers. Roll the loaded side over multiple times until the tortilla is in a tight roll. Make sure it is tight by tucking the first rotation up under the meat. Set rolled tortilla seam-side down on the wire rack of an air fryer. Repeat with remaining tortillas.
- Preheat an air fryer to 375 degrees F (190 degrees C) according to manufacturer's instructions.
- Fry in the preheated air fryer for 6 minutes. Serve immediately.

- Tip the flour into a bowl with 1 tsp salt and add the butter. Rub the butter and flour with your fingertips until crumbly. Add the eggs and 100ml cold water, bring together to a dough then turn out onto a floured surface and begin to knead until soft and smooth. Cover with cling film and put in the fridge to rest for 20 mins.
- Remove the chorizo from its casing and add to a mixing bowl with the mince, onion, coriander, parsley, paprika, cumin and chilli flakes. Mix everything together, then cook in a frying pan over a medium heat for 2 mins. Add the tomato purée and cook for a further 7-10 mins until everything is cooked through. Remove from the heat and allow to cool.
- Heat the oven to 180C/160C fan/gas 4. Divide the dough into four portions and roll out each one into a thin sheet. Use a 10cm biscuit cutter to cut out discs. Place 1 tsp of filling in the centre of each disc, wet the edges, pinch both sides up and fold in half to seal. Use a fork to crimp the edges.
- Arrange on a lined baking tray, brush with beaten egg and bake for 20 mins. When the empanadas are ready, remove from the oven and cool for 5 mins before serving.
