GARLIC BEEF ASADO "PINOYSHKI" PIROSHKI



Garlic Beef Asado

1 1/2 tablespoons active dry yeast
2 cups sugar
4 cups milk
2 cups (4 sticks) melted butter
1/2 cup sour cream
7 large eggs
12 cups all-purpose flour, plus additional for dusting
1/2 cup vegetable oil
1 1/2 cups oyster sauce
3/4 cup soy sauce
1/2 cup sugar
1/4 cup hoisin sauce
1 1/2 large onion, diced
1 cup minced garlic
1 teaspoon canola oil
6 pounds stew beef
1/2 cup cornstarch
1 large egg, beaten

Steps:

  • For the dough: Activate the yeast by adding it to a mixer bowl with 2 cups warm water and 1/2 cup of the sugar. Let it sit until it's foamy on top, about 5 minutes. Add the milk, melted butter, sour cream, eggs and remaining 1 1/2 cups sugar. Fit the mixer with the dough hook attachment, then mix on medium speed until well mixed. Add flour and oil and mix until dough starts pulling from the side. Cover with plastic wrap and let it rest for 2 hours.
  • For the garlic beef "asado:" Whisk together oyster sauce, soy sauce, sugar and hoisin in a bowl until sugar dissolves. Saute onions and garlic in oil in a saucepan over low heat until translucent. Add beef and cook until brown, stirring frequently to prevent onions and garlic from burning. Add sauce mixture and let simmer until beef is tender, about 2 hours. Make a slurry by stirring together cornstarch and 1/2 cup water, then add it to the sauce. Cook until it thickens. Turn off heat and let cool.
  • Preheat the oven to 350 degrees F.
  • Portion out the dough into 4-ounce balls on a floured surface and flatten out with a floured rolling pin. Add 4 ounces of the filling and seal into desired shape, then transfer to a baking sheet. Brush with egg wash and let stand for 15 minutes. Give a final brush of egg wash, then bake until golden, about 30 minutes.

Chorizo, 1 link per person
Chicken, quartered, 1 quarter per person
1 cup Italian parsley, picked
6 garlic cloves
1 teaspoon chopped fresh oregano
Pinch dried chile flakes
Salt and pepper
1/4 cup malt or red wine vinegar
1 cup olive oil
1/2 teaspoon saffron threads
1 tablespoon lemon juice
1/2 cup extra virgin oil
1/2 cup white wine vinegar
1 Spanish onion, small diced
2 garlic cloves, minced
1/4 cup Italian parsley, chopped fine
1 teaspoon fresh thyme
Salt and pepper

Steps:

  • Cook on a medium heated grill, slowly, basting with appropriate marinades until cooked perfectly. Eat each meat as it finishes cooking.
  • Chimichurri for Beef, Innards and Sausage: In a food processor, combine parsley, cloves, chile flakes, and salt and pepper. Completely puree until fine, in a serving container, add vinegar and oil.
  • Argentine Marinade for Chicken or Seafood: Steep saffron in lemon juice for 5 minutes. Combine all ingredients and keep covered.

Beef asado is a popular Filipino beef dish that are usually sold in carinderia or food courts serving Filipino dishes.

1 kilo beef (cut into desired pieces)
2 potatoes (pared and divided into 6)
1 big onion (peeled and cut into cubes)
1/2 head garlic
1 tsp. black pepper
1 1/2 cups native vinegar
2 1/2 Tbsp. cooking oil
1 pc. bay leaf
1 tsp. salt
2 Tbsp. soy sauce
2 small red/green pepper (cut into slices)
2 Tbsp. achuete juice
2 pieces tomatoes (cut into small pieces)

Steps:

  • Place the meat in a saucepan and add vinegar, pepper, 1/2 of garlic, salt, bay leaf and soy sauce.
  • Allow it to boil for 5 minutes.
  • Add 2 cups water and let boil until meat is tender. Fry the potatoes until golden brown, then set aside.
  • Saute garlic, onions and tomatoes; then, add in meat mixture, potatoes and red/green pepper.
  • Add the achuete juice to the mixture and cook until done. Serve hot. Good for 6 persons.
  • For every 1 Tbsp. atchuete seeds, pour 2 Tbsp. hot water and let stand for at least 30 minutes.
  • Remove the seeds and the liquid is your achuete juice.

1 (4 pound) beef chuck roast, quartered
salt and pepper to taste
2 tablespoons cooking oil
1 onion, diced
2 cloves garlic, crushed
2 large tomatoes, chopped
1 tablespoon whole peppercorns, crushed
1 (5 ounce) jar pitted Manzanilla olives
1 onion, quartered
2 bay leaves
2 beef bouillon cubes
½ cup ketchup
1 large red bell pepper, sliced
4 small potatoes, peeled and quartered
1 tablespoon corn flour
1 teaspoon water

Steps:

  • Season the beef with salt and pepper; set aside.
  • Heat the oil in a skillet over medium heat; cook the diced onion and garlic in the hot oil until softened, about 5 minutes. Transfer the onion and garlic to a 6-quart pot. Individually brown the beef chunks on all sides in the skillet and place in the pot. Add the tomatoes, crushed peppercorns, olives with their juice, quartered onion, bay leaves, and bouillon cubes to the pot; bring to a boil. Stir the ketchup into the mixture, reduce heat to medium-low, and simmer 1 hour.
  • Remove the beef from the pot and set aside. Add the red bell pepper to the mixture and continue simmering another 30 minutes.
  • While the mixture continues to simmer, heat 2 tablespoons oil in the skillet. Cook the potatoes in the oil until golden brown; immediately add to the simmering mixture.
  • Slice the meat against the grain and add to the pot; stir. Cook together another 5 minutes before serving. If the sauce is too thin, mix the corn flour and water together and stir into the sauce to thicken.

This is a marinade for the churrasco dish. In Argentina, where this style of cooking developed, "churrasco" actually refers to many types of meats prepared on the grill. It's also popular with Nicaraguans. The churrasco cut steak is a long flat cut of skirt steak, cut from the "plate" of the cow. You might find it sold at some butcher shops as a "plate" steak. Don't confuse it with the flank steak, a similar cut, but NOT the same! The churrasco steak is typically marinated to make it tender and full of flavour. Serve topped with Recipe #456210. 3 heads garlic (about 30 to 40 cloves)
2 teaspoons salt
1 teaspoon black peppercorns
1 cup orange juice
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1 cup onion, minced
2 teaspoons oregano
1 cup Spanish olive oil
meat, of choice pounded or cut thin (beef, chicken, pork)

Steps:

  • Mash garlic, salt, and peppercorns into a paste, using a mortar and pestle. Stir in orange juice, lime juice, lemon juice, onion, and oregano. Let sit at room temperature for 30 minutes or longer. Whisk the garlic-orange juice mixture with the olive oil until well blended.
  • Preparing the Meat: Preparing the meat is very easy. Place the meat in a large bowl or pan. Add enough marinade to cover the meat. Place a cover over the bowl or pan and place in the refrigerator a minimum of five hours, but preferably overnight.
  • Grill the marinated meat outdoors on the barbecue. (Make sure your coals are hot and white!). For the steak - you can cook them however you like your it -- from rare to well done. However, the rarer the meat, the more tender and flavorful!
