Steps:
- Start by preparing the quinoa. Pour 3/4 cup water, vegetable broth, and quinoa into a sauce pan, and bring to a simmer. Let simmer for about 20 minutes stirring periodically, until the quinoa is soft and fluffy.
- While the quinoa cooks, get to work on the beef. Heat the olive oil in a skillet over medium heat. Add the beef, season it with salt and pepper, and use a wooden spoon stir the beef and break it up into small pieces. Once the beef has browned, stir in the salsa and diced tomatoes. Bring to a simmer, and let reduce while the quinoa cooks.
- Now prep the peppers - poblano peppers are spicy, and your hands can absorb some of that heat. BE CAREFUL. You might want to remove your contacts first. Slice each pepper in half. I like to remove the seeds to reduce the spice level. Don't rip the seeds out with bare hands. Use a spoon or wear gloves.
- With the quinoa and beef ready - it is time to stuff the peppers. Before stuffing the peppers I added 2 extra tablespoons of water to the quinoa so it didn't dry out too much. I individually added the quinoa, then beef, beans, corn, and cheese. It would be quicker and easier to mix the quinoa, beef, beans, and corn together then stuff the peppers, and add some cheese on top.
- Arrange the peppers in a baking dish, and bake at 350 degrees for 20 minutes. Serve with sour cream.

CHORIZO & QUINOA STUFFED POBLANO PEPPERS WITH ADOBO CHILE T
I looked at several recipes to create my own with the ingredients I wanted to use. These came out so well, I thought I would share the recipe. My young boys actually ate this, I made a mild version for them, and my husband loved it. If you like spicy, you will love it with 3-4 chile peppers. Bon Appetit!

Steps:
- Preheat the oven to 425°F (220°C). Line a baking sheet with a reusable baking mat or parchment paper.
- Arrange poblanos on the prepared baking sheet and roast for 20 minutes, turning occasionally, until the skins begin to turn brown and pull away from the flesh.
- Meanwhile, make the filling: Heat the olive oil in a large pan over medium heat. Add the red onion, season with salt, and sauté for 3 minutes, until beginning to soften. Add the garlic and sauté for 1 minute, until fragrant. Add the cumin, coriander, and cayenne and stir to coat the vegetables with the spices.
- Add the quinoa, beans, corn, tomato sauce, and lime juice and season with salt. Stir to combine, then cook until heated through, about 5 minutes. Remove the pan from the heat and stir in the chopped cilantro.
- Transfer the roasted poblanos to a bowl and cover with a plate or plastic wrap. Steam for 15 minutes.
- Reduce the oven temperature to 375°F (190°C).
- Peel the skins off the poblanos. Leaving the stem intact, cut a slit lengthwise down each pepper to form a pouch. With a small spoon, carefully remove the seeds. The poblano flesh will be delicate-it's fine if it tears a bit.
- Lay the peeled poblanos side by side in a greased 9-x13-inch (22 cm x 33 cm) baking dish. Stuff each pepper with about ½ cup of the filling. Top each pepper with 2 tablespoons of Monterey Jack cheese.
- Bake the stuffed peppers for 15-20 minutes, until the filling is completely warmed through and the cheese is melted and beginning to brown.
- Serve the peppers garnished with cilantro leaves and serve with avocado slices and lime wedges.
- Enjoy!

BEEF AND QUINOA STUFFED BELL PEPPERS
I made this recipe for a challenge in the Culinary Quest. Since I had quinoa to use up and wasn't sure what I was going to use it for, I decided to pretend it was rice. I used two other recipes to make this. The first being Recipe #16399 by dibs. Then prepared it like Debbwl suggested... Recipe #415970. I hope you enjoy this dish. *Note: Prep and Cook times do not include toasting of quinoa or resting times.
