1 pound ground pork sausage with sage
1 teaspoon baking powder
20 grape tomatoes, sliced in half and sprinkled with salt
6 large eggs
10 ounces sharp Cheddar cheese, grated (about 2 1/2 cups)
Salt and pepper
Two 9-inch unbaked frozen pie shells (set them out to thaw while preparing the other ingredients)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, cook the sausage until browned and cooked through, about 10 minutes. Then remove with a slotted spoon and reserve.
  • In a large mixing bowl, whisk the baking powder, tomatoes and eggs together. Add the cooked sausage and the cheese to the egg mixture and stir together with a large spoon. Add salt and pepper and divide the mixture between both unbaked pie shells. Bake until the filling is set, about 30 minutes. Serve warm or at room temperature.

This is the best and CREAMIEST crust-less quiche I've ever eaten and I eat a lot of quiche! I asked my friend, Michele, to share her recipe with Zaar and she was kind enough to oblige. Thanks, girlfriend! Top this yummy quiche with tinned asparagus, chopped bacon, or tinned salmon. It makes it's own "crust" as it cooks. Very nice with a green salad on the side.

1 1/2 cups milk
1/4 cup butter, melted
1 cup cheddar cheese, grated
1 medium onion, chopped
1/2 cup self-rising flour
salt & pepper
325 g asparagus, canned drained (optional)
220 g salmon, canned (optional)
1/2 cup bacon, chopped and pre-cooked to half done (optional)

Steps:

  • Preheat oven to 180 degrees Celsius.
  • Beat eggs and milk.
  • Add melted butter and flour. Beat to combine.
  • Add cheese and onion, stir.
  • Pour into greased pie dish.
  • Arrange asparagus spears, salmon, or bacon on top.
  • Bake in center of oven for 45 minutes.
  • ENJOY!

This is my favourite quiche recipe mainly because it is very vesatile. I have made a number of variations using the basic egg mixture each time but with different filling. eg. subtituting canned asparagus,and,1/4 pint asparagus brine and 1/4 pint milk instead of 1/2 pint milk. The basic recipe I was given atleast 10 years ago - but I've improved on it over the years.

3 eggs
1/4 pint cream
1/2 pint milk
2 tablespoons melted butter
1 cup flour
1 teaspoon baking powder
1 large onion, chopped
1 cup grated cheese
1/2 cup crumbled feta cheese
2 slices bacon, fried and chopped
1 bunch spinach, washed,stems removed,cooked and roughly chopped
2 tomatoes
salt
freshly ground black pepper
1/2 cup blue cheese, crumbled

Steps:

  • Whisk the eggs, cream and milk and set aside.
  • Mix the flour, baking powder, onion and grated cheese.
  • Add to this the egg mixture and combine.
  • Add the melted butter and season with salt and pepper.
  • Pour this mixture into a well greased quiche/flan dish.
  • Then add all other ingredients- this ensures the filling is distributed evenly.
  • Bake in moderate oven for approxiamately 40 minutes or until the center feels set when pressed.
  • This is yummmmmmy served with a lettuce salad.

1 1/4 cups milk
1/2 cup self raising flour
3 medium eggs
1 cup cheddar cheese, grated
1 cup bacon or 1 cup ham, chopped
1 1/2 cups vegetables
1 onion, finely chopped

Steps:

  • Preheat oven to 165°C/325°F/Gas Mark 3.
  • Fry for 5 minutes any of the vegetables that you use if you don't want crunchy bits in your quiche. I don't bother with this as i like to have a bit of a crunch in my quiche.
  • Mix the milk, flour and eggs together in a large bowl, whisk/beat until smooth.
  • Add all the other ingredients into the mix.
  • Grease a flan dish with oil or butter (or a spray oil if you use those) - and pour the mixture into a flan dish, or any other dish that will hold the mix (or even split it into more dishes, just use what you have).
  • Bake in a pre-heated oven at 165°C (325°F/Gas Mark 3/moderate oven) for 45 minutes, or until browned on top. If you're using a fan oven, then cook this at 140°C.
  • Remove from the oven and leave to cool for 5 minutes.

2 cups cooked spinach
1 cup grated cheese
1 large chopped onion
2 cloves crushed garlic

Steps:

  • Grease an ovenproof dish placing in layers sliced cooked potatoes, spinach, cheese, onion, garlic and bacon.
  • Mix together eggs, self rising flour, salt and milk.
  • Pour egg mixture over potatoe mixture.
  • Bake at 180-350 degrees celsius for about 30 minutes or until set and lightly browned.
  • Leave sitting in the dish for about 5 minutes before it is cut.

Our Hash Brown Crust Bacon and Cheddar Quiche is a fun twist on a traditional quiche. It has a crispy hash brown crust! This is a crowd pleaser, and easy on you too because you can make it ahead!

Number Of Ingredients 12

20 ounces frozen hash browns (thawed)
½ cup white cheddar (shredded)
½ teaspoon salt
¼ teaspoon cracked black pepper
2 tbs unsalted butter
½ onion (thinly sliced)
6 large eggs (lightly beaten)
½ cup heavy cream (or whole milk)
4 rashers bacon (crispy cooked and crumbled (a rasher is a slice of bacon))
1 cup white cheddar cheese (shredded )
1 tbs chives (thinly sliced, plus more for garnish)
salt and pepper to taste

Steps:

  • Squeeze as much liquid from the thawed hash browns as possible and place into a large mixing bowl. Add cheddar, salt and pepper and stir together.
  • Lightly grease a 9" spring form pan with cooking spray and evenly press the hash browns mixture into the bottom and sides of the pan, making sure you don't have any holes within the crust (this is important to prevent any leakage)
  • Place the pan in the freezer and freeze for at least 1 hour.
  • Preheat oven to 425˚F.
  • Place frozen crust until the oven and par-bake for 15 minutes. Remove from oven and slightly cool.
  • In a skillet melt butter over medium heat. Add onions and lightly caramelize for 10 to 15 minutes. Season with salt and pepper. Set aside.
  • In a large mixing bowl, combine eggs and cream. Whisk together until light and fluffy. Add remaining ingredients, including caramelized onions and stir together until mixed up. Season with salt and pepper.
  • Pour filling mixture into the par-baked crust and place into the oven.
  • Lower oven temperature to 375˚F and bake the quiche for 25 to 30 minutes or until the eggs have just set.
  • Remove quiche from oven and run a paring knife around the perimeter of the springform pan. Loosen springform pan from sides of quiche and place quiche back into the oven for an additional 10 to 15 minutes. (this will help the crust get crisp on the sides)
  • Remove quiche form oven and cool for 10 minutes.
  • Slice quiches into wedges, top with sliced chives and serve.
