SLOW-COOKER BEEF AND PORK BARBECUE SANDWICHES



Slow-Cooker Beef and Pork Barbecue Sandwiches image

Stock the slow cooker with a barbecue sandwich recipe that calls for a mix of both beef and pork. It's a winning shredded-meat combo, especially when simmered in this zesty homemade sauce.

1 1/2 pounds beef boneless chuck roast, trimmed of fat
1 1/2 pounds pork boneless shoulder roast, trimmed of fat
1 large onion, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
1/2 cup packed brown sugar
1/4 cup cider vinegar
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon ground mustard
2 teaspoons Worcestershire sauce
1 can (6 ounces) tomato paste
15 sandwich buns, split

Steps:

  • Cut beef and pork into 3-inch pieces. Place beef, pork and remaining ingredients except tomato paste and buns in 4- to 5-quart slow cooker.
  • Cover and cook on Low heat setting 8 to 10 hours.
  • Remove beef and pork from cooker, using slotted spoon; place on cutting board. Strain liquid in cooker and return cooked vegetables to cooker. Shred meat, using 2 forks. Return meat to cooker. Stir in tomato paste. Increase heat setting to High. Cover and cook 10 to 15 minutes or until hot. To serve, spoon 1/3 cup meat mixture into each bun.

This is my Aunt Lorraine's recipe. She has been making it forever!!! Great when you have leftover pork roast! But if you truly want the flavor saute the onions,celery,and pepper in the pan you made the pork roast in.It is THE best barbeque recipes I have ever eaten. Freezes wonderfully too!

3 to 4 lb pork roast or
1 1/2 lb ground beef
2 medium yellow onions chopped
1 green bell pepper chopped
2 stalks celery chopped
1 20 ounce bottle of ketchup
1 can(s) tomato soup
1/2 can(s) water
2 Tbsp brown sugar
1 Tbsp lemon juice
1/2 tsp worcestershire sauce

Steps:

  • 1. If you are making a pork roast cook it long and slow. 325 degrees for 4 hours covered, wait till it cools then shred it.
  • 2. If you are making the beef just brown it.
  • 3. Saute with a little bit of butter, the onions, pepper, and celery. Just until soft.
  • 4. In a medium pot add all other ingredients, then add your cooked vegetables and the meat.
  • 5. Cook on low for about an hour and you are done!!

1 lb ground beef
1/2 lb ground pork
1 cup breadcrumbs
1/2 cup barbecue sauce
1 egg, beaten
1 onion, finely diced
1 green bell pepper, finely diced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1/4 cup barbecue sauce
1 tablespoon yellow mustard
1 tablespoon brown sugar
1 tablespoon vinegar

Steps:

  • Preheat oven to 350 F and line a baking sheet with parchment paper.
  • Combine the beef, pork, bread crumbs, barbecue sauce, egg, onion, bell pepper, garlic powder, salt, and pepper together in a bowl.
  • Transfer the mixture to the prepared sheet pan and shape by hand into a loaf, about 8x4 inches.
  • Whisk together the sauce ingredients and set aside 3 tablespoons. Brush the remaining sauce over the top of the meatloaf.
  • Bake for 1 hour.
  • Remove the meatloaf and brush the reserved sauce on top. Bake for 15-20 more minutes.

1/4 cup cider vinegar

1-1/2 pounds pork chop suey meat or pork tenderloin, cut into 3/4-inch cubes
3 medium green peppers, chopped
2 large onions, chopped
12 sandwich buns, split
Lettuce and tomatoes, optional

Steps:

  • In a 5-qt. slow cooker, combine the first six ingredients. Stir in beef, pork, green peppers and onions. Cover and cook on low for 6-8 hours or until meat is tender., Shred meat with two forks. Serve on buns, with lettuce and tomatoes if desired.

Steps:

  • In 3 1/2 to 4 quart slow cooker, combine all ingredients except tomato paste and buns.
  • Cover and cook on low setting for 8-10 hours.
  • With slotted spoon, remove meat from slow cooker. Shred meat with 2 forks; return to slow cooker and stir in tomato paste.

6 lbs country-style beef ribs or 6 lbs country-style pork ribs
4 onions, chopped
6 green onions, chopped
2 cups water
2 beef bouillon cubes
1/2 cup dark brown sugar, packed
1 cup ketchup
1/2 cup cider vinegar
1 (1 lb) can tomato puree
1 tablespoon garlic salt
1 tablespoon celery salt
1 tablespoon chili powder
1/2 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon ginger
1/2 teaspoon dry mustard
1/2 cup sweet pickle relish, drained

Steps:

  • Brown the meat in a heavy skillet (I use cast iron).
  • Combine remaining ingredients in large, deep kettle (I have a large electric roaster that works great for this).
  • Bring to a boil, stirring often, and simmer for 10 minutes.
  • Add meat, cover and simmer for 2 hours or until meat is tender.
