1 pound ground beef
¼ white onion, chopped
½ teaspoon garlic powder
½ teaspoon dried oregano
1 (26 ounce) jar chunky tomato sauce (such as Ragu®)
3 tablespoons white sugar
18 lasagna noodles
1 (15 ounce) container ricotta cheese
1 egg, beaten
2 tablespoons chopped fresh parsley
¾ cup grated Parmesan cheese
1 (12 ounce) package shredded mozzarella cheese, or as needed
¼ cup grated Parmesan cheese

Steps:

  • Cook and stir ground beef, onion, garlic powder, and oregano in a large skillet over medium heat until onion is tender and beef is browned, about 10 minutes. Add tomato sauce and sugar; simmer until sauce is heated through, about 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Mix ricotta cheese, egg, parsley, and 3/4 cup Parmesan cheese together in a bowl.
  • Place a lasagna noodle on a work surface. Spoon one layer of ricotta cheese mixture, one layer meat sauce, and one layer mozzarella cheese atop the lasagna noodle; top with another lasagna noodle. Roll up the stuffed lasagna noodles in the jelly-roll style; place in the prepared casserole dish. Repeat with remaining lasagna noodles, ricotta cheese mixture, meat sauce, and mozzarella cheese. Spread a spoonful of meat sauce atop each lasagna roll; top with remaining mozzarella cheese and 1/4 cup Parmesan cheese.
  • Bake in the preheated oven until cheese is melted and bubbling, 30 to 35 minutes.

1-1/2 pounds boneless beef round steak
1/4 cup chopped onion
1/4 cup butter, melted
2 cups fresh bread cubes
1/2 cup chopped celery
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
1 cup all-purpose flour
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/3 cups water
3/4 teaspoon browning sauce, optional

Steps:

  • Flatten steak to 1/3-in. thickness. Cut into six pieces. In a small bowl, combine the next eight ingredients. Place 1/3 cup on each piece of steak; roll up and fasten with a toothpick. Roll in flour. , In a large skillet, brown roll-ups in oil. In a small bowl, combine the soup, water and browning sauce if desired; pour over roll-ups. Cover and simmer for 2 hours or until meat is tender, turning occasionally.

This is an old fashioned German recipe that my family enjoys. It has been passed down from my mother who is from Germany, try it you will love it.

4 -6 thinly sliced steak (some grocery stores will call it rouladen)
1 large onion, chopped
8 -12 slices uncooked bacon, chopped (smoked bacon may be substituted)
pickle, chopped (opptional)
dry mustard
salt
pepper
garlic
2 -3 beef bouillon cubes

Steps:

  • Pound steaks ,if necessary, to thin them out. Season with garlic, salt, pepper and mustard to your liking. Place chopped bacon, onions, and pickles down the center of the steaks and roll up. Tie with string.
  • In large pot brown in vegetable oil, then add beef boullion and cover with water, let simmer for at least 3 hours. Add more water, if necessary, to keep them covered.
  • Remove rouladen from pot and thicken liquid to make gravy. Season to taste. Return meat to pot and heat through.
  • Serve with mashed potatoes or potato dumplings.

1 3/4 pounds center-cut top round steak (1 1/2 inches thick), sliced horizontally into 6 1/4-inch-thick slices
4 tablespoons unsalted butter
5 tablespoons olive oil
1/2 medium onion, finely chopped and 1/2 medium onion, thinly sliced
1 pound white mushrooms, finely chopped
Coarse salt and freshly ground pepper
6 tablespoons finely chopped fresh flat-leaf parsley
1/4 cup dry breadcrumbs
1 large clove garlic, minced
1 can (15-ounce) tomato sauce
1/2 cup red wine
Grated Beets, for serving
Buckwheat Groats, for serving

Steps:

  • Preheat oven to 350 degrees. Place slices of steak between two pieces of plastic wrap, and pound to an even thickness; set aside.
  • In a large skillet, heat 1 tablespoon butter and 1 tablespoon oil over medium-high heat. Add chopped onions, and cook until translucent. Add mushrooms; season with salt and pepper. Cook until the mushrooms have released all of their liquid and it has evaporated. Stir in parsley. Transfer to a small bowl; set aside.
  • Place one piece of steak on work surface. Spoon 1/6 of the filling onto the center of the steak. Sprinkle with 1/6 of the breadcrumbs. Roll up steak to enclose filling. Tie each end with a piece of kitchen twine. Repeat with remaining steak, filling, and breadcrumbs.
  • In the same large skillet, heat 2 tablespoons olive oil and 2 tablespoons butter. Add roll-ups, and cook until browned on all sides, about 4 minutes. Transfer roll-ups to a baking dish just large enough to hold them in a single layer.
  • In a small saucepan, heat remaining tablespoon butter and remaining 2 tablespoons olive oil over medium-high heat. Add garlic and sliced onions. Cook until onions are translucent, about 2 minutes. Stir in tomato sauce and wine. Cook until heated through. Pour over roll-ups and bake, covered, until tender, about 1 1/4 hours. Remove twine, and serve with grated beets and buckwheat groats.

8 thin sliced sirloin steaks
2 - 3 tbsp Worcestershire sauce
1 TBS garlic powder
1 TBS onion powder
1 tbsp olive oil
1 orange red and 1 yellow peppers
1 cup of Gruyere cheese
1 sliced medium onion
2 tsp butter
2 tbsp finely chopped shallots
1/4 cup balsamic vinegar
2 tbsp brown sugar
1/4 cup beef broth

Steps:

  • Lay out the sirloin steaks, if they are a little thick, use a meat mallet and bash them a little.
  • Add the seasonings, olive oil and Worcestershire sauce to the meat, (mix into the meat well on both sides) then set aside and prepare the filling.
  • Cut the peppers and onion to matchstick size and set aside.
  • In a pan, melt the butter then add the shallots and cook until translucent.
  • Add the remaining ingredients and stir, bringing it to a boil. Once boiling, reduce the heat a little and allow the sauce to reduce in volume to half the original amount. As this reduction takes place, you will notice the sauce becomes thicker and a little sticky. Once reduced, transfer to a bowl and set aside.
  • Using the same pan from the sauce, lightly saute the peppers with a drop of olive oil for 1 minute and remove from heat.
  • Lay the rolls flat, then in the centre of each, place the peppers and onion, and divide the cheese between the 8 rolls. Season with salt and pepper if you wish.
  • Roll them tightly then using a toothpick, secure the end so the rolls don't come apart.
  • Heat a large fry pan (you don't need any oil as there is oil on the meat already), and when hot enough, place the beef rolls in the pan, seam side down. As soon as they are sealed (30 - 60 seconds), turn the rolls so they cook on all sides. Medium to rare is the most popular, however, you can cook for a s long or short a time as you like.
  • When done, remove from the heat, place on a plate and allow to rest for a minute or two, and remove the toothpicks.
  • Drizzle the balsamic glaze over the tops as in my photos and serve! Enjoy!

1/4 cup chopped dill pickles
2 tablespoons ketchup
1 tablespoon drained horseradish

2 large sweet onions, sliced
2 teaspoons chopped fresh thyme
2 tablespoons dry sherry
1 cup low-sodium beef broth

12 ounces deli-sliced roast beef

Steps:

  • Make the dressing: Mix the mayonnaise, pickles, ketchup, horseradish, dill, onion powder and hot sauce in a small bowl; season with salt. Cover and refrigerate.
  • Make the sandwiches: Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Melt the butter in a large skillet over medium heat. Pour 4 tablespoons of the butter into a small bowl and set aside. Add the onions and thyme to the skillet with the remaining butter and cook, stirring occasionally, until deep golden, 12 to 15 minutes.
  • Add the sherry to the skillet; cook until evaporated. Add the beef broth and Worcestershire sauce and return to a simmer. Cook until the liquid is reduced by half and the onions are caramelized, 2 to 3 minutes. Season with salt and pepper.
  • Trim the ends off the bread loaf. Cut the bread on an angle into 12 slices, leaving the bottom of the loaf intact. (You can position chopsticks along the long sides of the bread to keep from cutting all the way through the loaf.) Transfer to the baking sheet.
  • Brush the reserved melted butter between the bread slices and all over the loaf. Set aside about one-third of the onions. Fill every other slice of the loaf with the remaining onions, starting with the first slice. Fold the roast beef and tuck into the onion-filled slices, along with the cheese. Top the loaf with the reserved onions and any onion juices.
  • Bake until the cheese is browned and bubbly, about 20 minutes. Pull apart or slice into individual sandwiches. Serve with the dressing.

¾ cup lukewarm milk
5 tablespoons lukewarm water
3 tablespoons butter, softened
1 ½ teaspoons salt
3 tablespoons white sugar
1 teaspoon onion powder
3 tablespoons dried minced onion
¼ cup instant potato flakes
3 cups all-purpose flour
1 (.25 ounce) envelope active dry yeast
1 egg white
1 tablespoon water
¼ cup dried minced onion

Steps:

  • Place the milk, water, butter, salt, sugar, onion powder, 3 tablespoons of dried onion, potato flakes, flour and yeast into the pan of a bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press Start.
  • When the cycle has completed, remove the dough from the machine, and knead on a lightly floured surface. Cut into 8 equal pieces, and form into balls. Gently flatten the balls until they are 4 inches in diameter. If they keep shrinking back, just let them relax for a minute before flattening. Place on a baking sheet, and cover loosely with a towel. Set in a draft-free place to rise until doubled in size, about 40 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Whisk together the egg white and water in a cup. Brush over the tops of the risen rolls, and sprinkle with remaining minced onion.
  • Bake for 15 to 20 minutes in the preheated oven, until golden brown. Cool completely, then slice in half horizontally before using.

1 1/2 lbs bacon
1 large onion, sliced
2 cups sliced button mushrooms
kosher salt
pepper
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • If not precut, cut beef into strips.
  • Lay a piece of bacon on top of each piece of beef and roll up. Secure each with a toothpick.
  • Season with salt and pepper.
  • Fry remaining bacon in large skillet and crumble. Reserve bacon fat in pan.
  • Sear roll-em-ups on all sides in bacon fat.
  • Put roll-em-upa, bacon pieces,onion,and mushrooms in a crock pot set to low.
  • Add more salt and pepper to your taste.
  • Cook 6 hours.
  • Stir together cornstarch and water and mix in gently to thicken sauce.
  • Serve over or alongside mashed potatoes.(remember to remove toothpick!).

A recipe from one of my mom's friends...it's quick and easy, and the kids seem to like them. Since I originally started making these, there are several new varieties of the onion soup mix...I've tried it also with Beefy Onion, Golden Onion/mushroom, and it's good with either of those.

1 package onion soup mix
8 ounces shredded cheese (I like Cheddar Jack, you can use whatever kind you like)
2 packages refrigerated crescent dinner rolls

Steps:

  • Brown ground beef in a large skillet; drain grease.
  • Add the onion soup mix and mix well.
  • Add cheese and cook until cheese is melted and the mixture is pretty sticky.
  • Separate the crescent rolls into individual rolls.
  • Spoon about 2 tablespoons of the meat mixture into each crescent and fold the crescent up around the meat.
  • Bake according to package directions.

1/2 cup dry red wine

Steps:

  • Place onions in slow cooker. Cut steak into 8 equal pieces. Spread with mustard; top with bacon and pickles. Roll up each steak piece, starting at one short side; tie with kitchen string to secure.
  • Heat oil in large nonstick skillet on medium heat. Add roll-ups; cook 3 to 4 min. or until evenly browned, turning occasionally. Transfer to slow cooker. Add wine and bouillon cube; cover with lid.
  • Cook on LOW 7 to 8 hours (or on HIGH 5 to 6 hours). Use tongs to transfer roll-ups to platter; remove and discard string. Cover roll-ups to keep warm. I made these for New Year's Eve this year and they went down pretty well. I had some of the French onion spread left. I served it on the side for people that wanted to dip the pinwheels. The cooking time includes the time chilling the spread before assembling the dish.

3 large tortillas
4 slices roast beef, thickly sliced
1 cup sour cream
1 cup light mayonnaise
1 (1 1/4 ounce) packet Knorr french onion soup mix

Steps:

  • Mix the French onion spread ingredients and chill in the fridge for an hour.
  • Once the spread has been chilled, roll out a long piece of foil and lay the tortillas on the foil so that the ends of the tortillas overlap on the inside.
  • Generously spread the French Onion mixture over the tortillas. Try to cover as much of the surface as possible.
  • Place the slices of roast beef down the middle of the tortillas. Overlap them so it is like one continuous strip of roast beef.
  • Roll the tortillas carefully and tightly.
  • Cover the rolled tortilla with the surrounding foil. Be careful to make sure the ends are sealed.
  • Chill in the fridge for a few hours or overnight.
  • Take out and slice the big roll into smaller pieces.
