This comforting beef casserole is a perfect winter warmer and, although it seems rich, it is actually suitable for a low-calorie diet of 1200-1500 calories a day. Each serving provides 429 kcal, 43g protein, 18g carbohydrates (of which 11g sugars), 16g fat (of which 5g saturates), 6g fibre and 1g salt.

700g/1lb 9oz braising steak, trimmed of excess fat and cut into 3-cm/1¼-in chunks
2 tbsp olive or sunflower oil
2 onions, thinly sliced
2 tbsp plain flour
2 tsp dried mixed herbs
150ml/5fl oz red wine
450ml/16fl oz beef stock, made with 1 stock cube
2 tbsp tomato purée
1 bay leaf
3 carrots (about 300g/10½oz), peeled and thickly sliced
300g/10½oz closed cup mushrooms, sliced
sea salt and freshly ground black pepper
handful fresh flatleaf parsley, roughly chopped, to garnish
575g/1lb 4½oz floury potatoes, preferably Maris Piper or King Edward, peeled and cut into roughly 5-cm/2-in chunks
25g/1oz butter
4 tbsp semi-skimmed milk
100g/3½oz kale, trimmed, hard stalks removed, roughly chopped
sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Season the beef well with salt and pepper.
  • Heat half of the oil in a large, non-stick frying pan and fry the beef in two batches for 2-3 minutes, or until browned on all sides. Transfer to a casserole dish using a slotted spoon or spatula once each batch is done.
  • Add the remaining oil and the onions to the pan and fry over a medium-high heat for 4-5 minutes, or until lightly browned. Place the onions into the casserole dish and sprinkle with the flour and dried herbs. Toss well together.
  • Pour the red wine and stock into the casserole dish and add the tomato purée and bay leaf. Stir well and bring to a simmer on the hob. Cover with a lid and bake in the oven for 1½ hours.
  • Carefully remove the casserole from the oven and stir in the carrots and mushrooms. Cover and bake for a further 45 minutes, or until the beef and vegetables are just tender.
  • Meanwhile, to make the kale mashed potato, place the potatoes into a large saucepan and cover with cold water. Bring to the boil and cook for about 15 minutes, or until very tender. Drain well then return to the saucepan. Mash with the butter and milk until smooth. Season with salt and pepper.
  • Place the kale into a saucepan and add 500ml/18fl oz water. Cover with a lid and bring to the boil for 5 minutes, or until tender, removing the lid and stirring the kale three or four times as it cooks. Drain well then stir into the mash.
  • Serve the kale mash alongside the casserole, garnished with the parsley.

2kg/4lb 8oz shin of beef
50g/1¾oz plain flour
salt and freshly ground black pepper
6 tbsp vegetable oil
10 small shallots, peeled
6 sticks celery, roughly sliced
8 carrots, roughly chopped
25g/1oz dried porcini mushrooms
600ml/1 pint red wine or stout
300ml/½ pint beef stock
3 sprigs thyme
500g/1lb 2oz button mushrooms
2 tbsp redcurrant jelly
mash, to serve

Steps:

  • Cut the beef into 2.5cm/1in chunks and trim off any excess fat. Place the flour on a plate or in a plastic bag with plenty of salt and black pepper and toss the meat in it until well coated.
  • Heat the oil in a large flameproof casserole and add the beef. Fry until browned on all sides - you may need to do this in batches, as you don't want to over-crowd the pan. It is important to brown the beef and not stew it.
  • Remove the meat from the pan using a slotted spoon and set aside. Add the shallots, celery and carrots to the pan and fry for five minutes, or until softened a little.
  • Meanwhile, soak the mushrooms in a bowl in 300ml/½ pint boiling water until softened. Drain, reserving the soaking liquid and chop the mushrooms into smaller pieces.
  • Return the meat to the pan and add the red wine or stout. Bring to the boil for 4-5 minutes, or until the volume of liquid has reduced by about a third. Add the stock,soaked mushrooms and their soaking liquid and the thyme.
  • Bring to the boil and then cover and simmer on a low heat for about 2½ hours, or until tender. If you prefer you can cook it in a preheated oven at 150C/300F/Gas 3 (130 fan) for the same time.
  • Add the button mushrooms and the redcurrant jelly and cook for a further 30 minutes. Serve with mash.

3 cloves of garlic
3 sprigs of Thyme
3 heaped table spoons of Plain flour
3 medium carrots (diced)
3 Parsnips (cubed around small roast potato size)
2 medium white onions (sliced)
1 diced Turnip
700g cubed beef
600ml beef stock
Table spoon of Worcestershire sauce
3 bay leafs
Tomato purée 2 large table spoons
500g mushrooms
Rapeseed oil
1/4 tea spoon of Black pepper
Table spoons of English mustard powder

Steps:

  • Put on a high heat slow cooker and add the beef stock to the slow cooker.
  • Put all of the flour, mustard powder and pepper in a bowl and use to completely coat the diced beef. Add any left over coating add to slow cooker.
  • Fry the coated beef with the rapeseed oil until browned off. Put seared beef in slow cooker.
  • Using the pan from the beef, fry mushrooms and onions until onions are slightly browned and translucent, then add to slow cooker.
  • Put diced carrots, turnip and Parsnips in slow cooker, with crushed garlic, Worcester sauce and tomato purée. Mix up and add bay leafs and thyme Turn down heat to medium and leave to cook
  • Remove bay leafs and thyme stalks before serving. Serve on its own or with creamy mash potato and cabbage.

8 oz. extra wide egg noodles ($1.00)

Steps:

  • Cook the noodles according to the package directions, but until slightly less done. The noodles will further cook while the casserole bakes. Once cooked, drain the noodles and set it aside.
  • While the noodles are cooking, finely dice the onion and slice the mushrooms.
  • Add the cooking oil and ground beef to a large skillet. Cook over medium heat until the beef is fully browned. If using a higher fat content beef, drain off the excess fat before continuing.
  • Add the diced onion, sliced mushrooms, garlic powder, salt, and some freshly cracked pepper to the skillet. Continue to sauté over medium heat until the mushrooms are soft and the onions are transparent. Add the tomato sauce and Worcestershire sauce to the beef and mushroom mixture. Stir to combine, then simmer for a few minutes, or until it thickens slightly.
  • Preheat the oven to 350 degrees. Return the drained noodles to the pot they were boiled in (heat turned off) and add the beef and tomato mixture, diced tomatoes (drained), sour cream, half of the shredded cheddar, and half of the green onions. Stir to combine and then transfer the mixture to a 9x13 inch casserole dish.
  • Top the casserole with the remaining shredded cheese, then bake in the preheated oven for 30 minutes, or until it is bubbling around the edges and the top is starting to brown just slightly. After removing from the oven, sprinkle the remaining green onions over top.

Steps:

  • In a large skillet, brown the beef over medium high heat with the onion and mushroom until the beef is no longer pink and the onions are translucent.
  • Drain any fat, then transfer the beef mixture to a large casserole dish (9x13) mix in the mushroom soup, sour cream, rice, and beef broth. Combine well, and spread evenly in the dish.
  • Spread cracker crumbs over the top of the casserole and drizzle with butter.

Steps:

  • Dredge beef tips in flour, shaking off the excess.

Since the basic recipe is fairly neutral, you could probably add some taco seasoning to give it a southwest flavor or some Italian seasoning. I sprayed the bottom of the dish lightly with cooking spray and had problems with sticking.
