1/4 cup (packed) brown sugar
1 tablespoon lime juice
Sour cream and 1/2 cup chopped toasted pecans, optional

Steps:

  • Preheat the broiler,. Peel bananas and slice crosswise into 1/2-inch thick slices. Mix the sugar and lime juice and toss with bananas. Spread bananas in shallow baking pan and broil until sugar has melted into a glaze, about 3 to 5 minutes. Serve immediately with sour cream and chopped pecans if desired.

  • In a large saute pan over medium heat, add butter and melt. Add the cinnamon and stir to combine. Add the brown sugar and stir until melted. Remove pan from heat and add the rum. Return pan to the heat and stir until a light caramel forms. Add the bananas and toss to coat. Serve over vanilla ice cream and garnish with a sprig of mint.

2 bananas (not too ripe)
2 tablespoons sugar
2 tablespoons ground cinnamon
2 tablespoons honey
Vanilla ice cream, for serving
Bourbon or other liqueur, for drizzling, optional

Steps:

  • Build a charcoal fire or preheat a gas grill.
  • Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes.
  • Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired.

3 large ripe bananas, peeled
Seeds from 1 vanilla bean, or 1 teaspoon pure vanilla extract

Steps:

  • Cut each banana into 6 chunks and freeze until rock solid, preferably overnight.
  • Put the banana chunks and vanilla bean seeds or extract in a food processor and process. Hang on, your food processor may jolt in the very beginning! The bananas will look crumbly at first, then gooey and eventually light and creamy- just like ice cream. Stop the food processor frequently to scrape down the sides of the bowl and break up any clumps. Serve right away or scrape into a container and freeze until ready to serve.

1 heavy cream
1 cup half and half
2 vanilla beans
5 large egg yolks
1/2 cup granulated sugar

Steps:

  • In a medium heavy sauce pan, combine the cream and the half and half. Split the vanilla beans in half lengthwise and, using the tip of a knife, scrape out the small seeds into the cream mixture and drop in the pods. Bring the mixture to a boil, then remove from the heat.
  • In a large bowl, whisk together the egg yolks and sugar until thickened and pale. Pour in the hot cream mixture and stir until well combined. Strain into a large container and refrigerate until cold. Wash and dry the vanilla pods and reserve for another use.
  • When the cream mixture is cold, pour it into the bowl of an ice cream maker and freeze according to the manufacturers instructions.

1 cup packed brown sugar
3 tablespoons bourbon
1/3 cup chopped pecans, plus 2 tablespoons for garnish
4 ripe bananas, halved lengthwise then halved again
1 pint premium vanilla ice cream, slightly softened

Steps:

  • Heat grill to high. Melt the butter in a large saute pan on the grates of the grill. Whisk in the sugar and cook until melted and smooth. Standing back, carefully add the bourbon and cook for 2 minutes. Add 1/3 cup pecans and cook for 30 seconds. Add the bananas and spoon the sauce over the bananas constantly until softened, about 4 to 5 minutes.
  • Scoop the ice cream into bowls and top with the bananas and sauce. Garnish with the remaining chopped pecans and serve.

Steps:

  • In a small bowl, combine rum, honey and cinnamon; set aside. Cut bananas in half lengthwise, leaving the peel on. , Place bananas cut side down on grill. Cover and grill over medium heat for 3 minutes. Turn and brush with honey mixture. Cover and grill until tender, 5-6 minutes. Peel bananas. Serve immediately with ice cream.

2 bananas, peeled and cut into 1-inch pieces (not too ripe)
1/4 cup light brown sugar, plus
2 tablespoons packed light brown sugar
1/2 cup light rum
1 pint premium vanilla ice cream

Steps:

  • Melt butter in a skillet over medium heat. Add bananas and saute until they turn brown, about 3 minutes. Sprinkle brown sugar over the bananas and cook until the sugar melts, about another 3 minutes. Remove from heat and pour rum into skillet; ignite with a match and let the flames die out.
  • Divide ice cream among 4 serving dishes and spoon bananas over. Serve immediately.
