- In a medium pan, pour boiling water over the broccoli then boil for 4 mins.
- Heat the olive oil in a non-stick wok and stir-fry the ginger, garlic and onion for 2 mins, add the mild chilli powder and stir briefly. Add the vegetarian, chicken-style pieces and stir-fry for 2 mins more. Drain the broccoli and reserve the water. Tip the broccoli into the wok with the soy, honey, red pepper and 4 tbsp broccoli water then cook until heated through. Meanwhile, heat the rice following the pack instructions and serve with the stir-fry.

This is my go-to recipe when I want Chinese food without having to go out. Very easy and delicious. Substituting chicken for the beef works great too. Serve over rice.

- Whisk together the oyster sauce, sesame oil, sherry, soy sauce, sugar, and cornstarch in a bowl, and stir until the sugar has dissolved. Place the steak pieces into a shallow bowl, pour the oyster sauce mixture over the meat, stir to coat well, and marinate for at least 30 minutes in refrigerator.
- Heat vegetable oil in a wok or large skillet over medium-high heat, and stir in the ginger and garlic. Let them sizzle in the hot oil for about 1 minute to flavor the oil, then remove and discard. Stir in the broccoli, and toss and stir in the hot oil until bright green and almost tender, 5 to 7 minutes. Remove the broccoli from the wok, and set aside.
- Pour a little more oil into the wok, if needed, and stir and toss the beef with the marinade until the sauce forms a glaze on the beef, and the meat is no longer pink, about 5 minutes. Return the cooked broccoli to the wok, and stir until the meat and broccoli are heated through, about 3 minutes.

THE BEST EASY BEEF AND BROCCOLI STIR-FRY
I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

- In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
- Add beef and toss.
- In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
- Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
- Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
- Cook and stir for 2 minutes.
- Serve over rice and garnish with toasted sesame seeds (optional).

- Pour ¼ cup soy sauce, 1 tablespoon sesame oil, 1 tablespoon of garlic, the brown sugar, water, and cornstarch over the sliced flank steak. Mix well, then let marinate in the refrigerator for at least 1 hour.
- In a wok or deep skillet, cook the beef and marinade thoroughly, then set aside.
- In the same pan, heat the oil over medium heat. Sauté the onion, remaining tablespoon of garlic, and broccoli until the onion is translucent. Push the cooked vegetables to the side of the pan.
- Beat the eggs and pour into the empty half of the pan. Scramble the eggs and mix with the rest of the vegetables.

- Microwave the broccoli in a glass bowl covered with plastic wrap (holes poked for ventilation), about 1 to 2 minutes.
- In a small bowl, whisk together the soy sauce, sesame oil, 1 teaspoon cornstarch and baking soda. Slice the beef against the grain into thin strips and add it to your marinade. Let it sit for at least 20 minutes, or as long as overnight in the refrigerator.
- In a separate small bowl, stir together the stock, rice wine, oyster sauce and remaining 1 teaspoon cornstarch until the cornstarch is fully dissolved.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain, transfer to a bowl and toss with 1 tablespoon sesame oil.
- Mix the soy sauce, sugar, vinegar, garlic, the remaining 2 tablespoons sesame oil and ¼ cup water in a small bowl. Toss 3 tablespoons of the mixture with the beef in a medium bowl. Whisk the cornstarch into the remaining soy sauce mixture.
- Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the broccoli and let brown on the bottom, 1½ minutes, then toss and continue cooking, tossing occasionally, until bright green, 3 to 5 minutes. Season lightly with salt. Remove to a baking sheet.
- Add another 1 tablespoon vegetable oil to the skillet and heat until shimmering. Add half the meat and let brown on the bottom, 30 seconds, then turn the meat and cook until the other side browns a bit, another 30 seconds. Add to the baking sheet with the broccoli. Repeat with the remaining 1 tablespoon vegetable oil and meat.
- Reduce the heat to medium. Add the water chestnuts and half the chile to the skillet and toss just to heat, 30 seconds. Stir the soy sauce-cornstarch mixture, add it to the skillet and bring it to a simmer.
- Add the broccoli and meat with any accumulated juices to the skillet and toss to coat and heat through, about 1 minute. Serve over the pasta and top with the scallions and remaining chile.

- Slice the beef, against the grain, into very thin 1/8" strips. Place the meat in a medium size bowl or in a large ziploc bag, sprinkle with cornstarch and add the soy sauce.
