- Combine rice, salt, and 2 ¼ cups water in a medium-sized pot with tight-fitting lid. Bring to a boil, then reduce heat and simmer, covered, until all water is absorbed, 15 minutes. Turn off heat and let sit 10 minutes, then remove lid and fluff with a fork.
- Meanwhile, in a medium bowl, whisk together soy sauce, chicken broth, vinegar, brown sugar, garlic, sesame oil, cornstarch, ginger, and Sriracha.
- In a large deep-sided skillet, heat oil. Cook steak in batches until nicely browned, about 4 minutes, then transfer to a plate.
- Add remaining oil to skillet along with broccoli and red pepper and cook until broccoli is bright green, 1 to 2 minutes. Add ½ cup water and let steam, covered, until vegetables are tender-crisp, 2 to 3 minutes.
- Add sauce and steak to skillet and bring to a boil. Let simmer until thickened, 3 minutes more.
- Serve beef and broccoli with cooked rice and garnish with crushed red pepper, if using.

- In a large cast-iron or other heavy skillet, cook beef over medium heat until no longer pink,6-8 minutes, breaking into crumbles; drain., Add tomatoes, broth, chili powder, salt and garlic powder; bring to a boil. Stir in rice and peppers. Reduce heat; simmer, covered, until liquid is absorbed, 8-10 minutes. Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted. Freeze option: Before adding cheese, cool beef mixture. Freeze beef mixture and cheese separately in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary. Sprinkle with cheese.

BYERLY'S EXCELLENT BEEF AND BROCCOLI
Got this recipe from the on-staff nutritionist of an upscale grocery store where I live. I've tried many beef/broccoli and beef/peppers recipes and this one was a hands down hit with my 7, 12 and 16 yr-olds, not to mention my DH. There are no onions or mushrooms in this recipe for my kids to pick out, yet it was very tasty. You can add all sorts of alternative ingredients, (like onions and mushrooms, but it doesn't need it). I make the marinade, do all the chopping and cook the broccoli early in the day so I can quickly cook it at night. Prep Hint: a semi-frozen steak is much easier to slice. Garlic, Ginger, Peppers, Broccoli amounts can all be adjusted to your taste.

Steps:
- Combine Soy Sauce, Oyster Sauce, Sherry, Corn Starch and Sugar.
- Marinate the cut steak in mixture for 30 minutes.
- Stir-fry (or skillet-fry) the Broccoli in 2 Tbsp Peanut oil over medium-high heat for 2-4 minutes.
- Add Broth and cook, covered until crisp and tender, approximately 1-2 minutes. Remove from skillet.
- In same wok or skillet, heat remaining 2 Tbsp oil over high heat; stir in Garlic, Ginger and Red Pepper.
- Add Steak and marinade.
- Stir-fry, turning constantly, until lightly browned, approximately 2-4 minute
- Return broccoli to the wok or skillet, and heat through.
- If the sauce is too thick, or you want to make more sauce, just add in more broth. I used more than the 2 tablespoons.
- Serve over your favorite rice or Asian noodles, garnish with Chow Mein Noodles and chopped Scallions.

FANTASTIC SKILLET BEEF AND BROCCOLI LO MEIN
No need for a wok to make this, I have made this recipe using packaged stir-fry strips from the grocery store it makes it so much easier, reduce the broccoli slightly and throw in some pea pods too! Prep time does not include cooking the pasta, this is very good!

- Combine the cooked pasta and sesame oil; toss well to combine.
- Heat the peanut oil in a large skillet over medium-high heat.
- Add in ginger, garlic and dried chili flakes; saute for about 1 minute.
- Add in the broccoli and onion slices; saute for 3 minutes.
- Add in steak slices; saute for about 4-5 minutes or until cooked.

- Soak mushrooms in warm water until soft, about 30 minutes. Drain. Rinse in warm water, drain. Remove and discard stems. Cut caps into 1/2 inch pieces.
- Trim fat from beef. Cut grain-wise into 2 inch strips. Cut the strips across the grain into 1/8 inch strips.
- Toss the strips with: 3 T vegetable oil, 1 T cornstarch, 1 T salt, 1 T sugar, 1 T soy sauce, and 1/4 tsp white pepper in plastic or glass bowl. Cover and refrigerate for at least 20 minutes.
- Cut broccoli into 1 inch pieces. Steam broccoli. Cook to al dente. When done, rinse under cold water and drain. Set aside.
- Cut green onions into 1/4 inch rings. Mix together in a bowl green onions, 1/2 cup chicken broth, 1/4 cup oyster (or soy) sauce, and 2 tablespoons cornstarch. Set aside.
- Heat wok until 1 or 2 drops of water bubble and skitter when sprinkled into wok. (Or if you're using a skillet, put on medium-high heat.) Add 2 tablespoons oil and rotate to coat wok. (Skillet-1 tablespoon and coat bottom of pan).
- Add beef and garlic (mix the garlic with the beef first to prevent burning it). Stir-fry until beef is brown-about 3 minutes.
- Remove beef from wok (or skillet). Set aside.
- Add mushrooms and broccoli with 1 cup water. Cover for 5 minutes.
- Stir in beef. Heat to steaming.
- Stir in Sauce Mixture. Cook and stir until thickened, about 15 seconds.
- Serve over rice.
