The best beef and egg noodles you'll ever have. Affordable, quick, and yummy! I have to give credit to my grandma. She used to cook this for her 5 kids and then later for all her grandkids.

1 pound sirloin steak, cut into 1-inch cubes
2 tablespoons butter
1 large onion, sliced
1 cup beef stock
2 bay leaves
1 pinch dried thyme
salt and ground black pepper to taste
1 cup frozen peas
1 tablespoon cornstarch
4 cups egg noodles

Steps:

  • Heat a skillet over medium-high heat; cook steak, working in batches, until seared and browned on all sides, about 5 minutes. Transfer seared steak to a plate.
  • Melt butter in the same skillet over medium heat and saute onion until softened, 5 to 10 minutes. Add steak to onion and pour beef stock over steak; season with bay leaves, thyme, salt, and pepper. Bring to a boil, reduce heat to low, cover skillet with a lid, and simmer until steak is tender, 50 minutes to 1 hour 50 minutes. Stir peas and cornstarch into steak mixture; cook uncovered until liquid thickens, about 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain. Serve beef mixture over noodles.

3/4 cup low-sodium chicken broth

1 bunch asparagus (1 pound), trimmed and cut into 1-inch pieces
1 pound sirloin steak, trimmed and thinly sliced against the grain

Steps:

  • In a large wok or skillet, heat 1/2 cup coconut milk over medium-high, stirring, until shiny and thick, 2 minutes. Add curry paste and cook, stirring, until fragrant, 1 minute. Add remaining coconut milk, broth, fish sauce, and brown sugar and bring to a simmer. Add bell pepper and cook until softened, 2 minutes. Add asparagus and cook until crisp-tender, 3 minutes. Steps:

  • Toss beef with 1/2 teaspoon seasoning from a ramen seasoning packet (discard remaining opened packet). In a small bowl, mix hoisin sauce and 1/4 cup water. , In a saucepan, bring remaining water to a boil. Add noodles and contents of the unopened seasoning packet; cook, uncovered, 3 minutes. 1 1/2 cups packed fresh basil
1/4 cup packed fresh parsley
2 tablespoons pine nuts
1 tablespoon capers
1 small clove garlic
Kosher salt and freshly ground pepper
1/4 cup plus 1 tablespoon extra-virgin olive oil
Pinch of red pepper flakes
3 cups baby arugula
1 teaspoon finely grated lemon zest, plus more for topping

Steps:

  • Snap off the woody ends of the asparagus stalks. Use a vegetable peeler to shave the asparagus into thin wide ribbons. (The last strip of asparagus will be a little thicker than the others but it¿s fine to use.)
  • Pulse the basil, parsley, pine nuts, capers, garlic, 1/2 teaspoon salt and a few grinds of pepper in a food processor until coarsely ground. With the machine running, drizzle in 1/4 cup olive oil and process until the pesto is mostly smooth.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the asparagus noodles, red pepper flakes and a pinch each of salt and pepper. Cook, stirring, until the asparagus is tender, 3 to 5 minutes.
  • Add the arugula and cook until just wilted, about 1 minute. Remove from the heat; add the pesto and 1 tablespoon water and toss to coat. Stir in the lemon zest and season with salt. Top with more zest.

1 egg white
1 teaspoon cornstarch
1 teaspoon sesame oil
1/8 teaspoon white pepper
1 (11 1/4 ounce) package fresh Chinese noodles or 8 ounces angel hair pasta (uncooked)
2 cups frozen asparagus cuts, thawed
1/2 medium red bell pepper, cut into 1 1/4 inch strips
1/3 cup stir-fry sauce with garlic and ginger

Steps:

  • Trim fat from beef.
  • Cut beef into 1/2 inch cubes.
  • Mix egg white, cornstarch, sesame oil and white pepper in medium glass or plastic bowl.
  • Stir in beef.
  • Let stand 10 minutes.
  • Cook and drain noodles as directed on package.
  • While noodles are cooking, spray 12-inch nonstick skillet or wok with nonstick cooking spray; heat over medium to high heat.
