SAUSAGE AND BEAN SOUP

Sausage and Bean Soup image

There are American, Hungarian, French, Portuguese, African and Scandinavian variations of the story of Stone Soup--a parable that teaches how each of us can contribute a little to the whole, which then becomes something much greater than the sum of its parts. So many different cultures telling a similar story of neighborliness and gathering around a pot of soup is a lesson in and of itself. Think of all the people in your community right now with whom you could share this wonderful recipe.

Categories     main-dish

Time 50m

Yield 6 servings

Number Of Ingredients 15

2 tablespoons olive oil
1 large onion, chopped
1/2 pound Italian sausage, casing removed
4 cups chicken stock
3 garlic cloves, sliced
2 bay leaves
1/2 cup diced carrots
1/2 cup diced celery
1 large potato, peeled and diced into 1/2-inch cubes
1 small zucchini, diced
Two 15.5-ounce cans cannellini beans, drained and rinsed
1/4 cup chopped fresh parsley
One 2-inch-square piece Parmigiano cheese rind
1/2 pound small shell pasta
Grated Parmigiano cheese, for serving at the table

Steps:

  • In a large pot, heat oil over medium heat. Add onion and cook, stirring occasionally until softened--about 3 minutes. Add sausage, breaking it up with a wooden spoon, and cook until browned--about 5 minutes. Add stock, scraping up the browned bits on the bottom of the pot with a wooden spoon. Add garlic, bay leaves, carrots, celery, potato, zucchini, beans, parsley and cheese rind. Bring to a boil, and then reduce to a simmer. Cover and cook for 30 minutes; the stock will slightly thicken. Remove and discard bay leaves and cheese rind.
  • Meanwhile, cook pasta in salted water until al dente. Place 1/2 cup of pasta in each soup bowl and ladle soup over pasta. Serve with cheese.

BEAN SAUSAGE SOUP

Bean Sausage Soup image

I made this colorful, robust stew often when our three kids were living at home. Since it calls for lots of canned vegetables, it stirs up in a jiffy. It's versatile, too-you can substitute cubed turkey, chicken, ham or beef for the sausage. Plus, you can replace the beans with other vegetables of your choice.

Provided by Taste of Home

Categories     Dinner

Time 10m

Yield 6-8 servings (2 quarts).

Number Of Ingredients 9

1 pound smoked sausage, halved and cut into 1/4-inch slices
2 cans (10 ounces each) diced tomatoes and green chilies, undrained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) lima beans, drained
1 can (15 ounces) black beans, rinsed and drained
1/2 teaspoon salt
1/8 teaspoon pepper
Hot cooked rice, optional

Steps:

  • In a large saucepan, combine the first eight ingredients. Heat through. Serve with rice if desired.

BEANS & SAUSAGE SOUP - OR NOT

BEANS & SAUSAGE SOUP - OR NOT image

My mother-in-law, Mary Bales, gave me this recipe about 25 years ago and I have made and enjoyed it many, many times. I hope you enjoy it too.

Provided by Ellen Bales

Categories     Other Soups

Time 4h50m

Number Of Ingredients 8

1 pkg 15-style bean soup mix (found with dry beans)
1 lb beef or pork smoked sausage, sliced & quartered
1 onion, chopped
1 clove garlic or 1/4 tsp. garlic powder
1/2 tsp salt
1 medium can tomatoes
1 can(s) tomatoes and chiles
1 Tbsp lemon juice

Steps:

  • 1. Soak the beans overnight in Dutch oven full of cold water. Pour off water and add 8 cups fresh water to the beans.
  • 2. Add sausage, onion, garlic, salt, can of tomatoes, and lemon juice.
  • 3. Bring to a boil and then simmer, covered, for about 4 hours. Then add the can of tomatoes and green chilies. Simmer at least another half hour. Remove cover and let cook down a bit.
  • 4. NOTE: You may use the seasoning packet that comes with the beans, but I don't use it. Instead of serving as a soup, I serve it over hot rice with some garlic bread.

SPICY SAUSAGE-KIDNEY BEAN SOUP

Spicy Sausage-Kidney Bean Soup image

The original is from Southern Living 1983 cookbook and is credited to Mrs. Frank Patton from Johnson City, Tenn. This is a favorite of ours that we often double and freeze in lunch size portions for DH. The original recipe calls for canned beans, but we process dried beans. If you don't have a pressure cooker, it will take longer, so if you're in a hurry, use the canned variety. We also tend to increase the spices and herbs and use hot sausage to increase the impact. (time does not include soaking)

Provided by OliveLover

Categories     < 4 Hours

Time 1h30m

Yield 2 cup servings, 6 serving(s)

Number Of Ingredients 14

1 1/2 cups dried kidney beans (or 2 cans, 16 oz. each kidney beans, un-drained)
2 cups beef stock (or water, enough to cover beans by 2 inches)
1 lb bulk pork sausage
1 large onion, chopped
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes, un-drained
1 bay leaf
1 quart beef stock (or water)
1 teaspoon salt (to taste)
1 1/2 teaspoons seasoning salt
3/4 teaspoon dried thyme
1/2 teaspoon salt
1 red bell pepper, chopped
1 cup potato, in 1/2-inch dice

Steps:

  • Pick over dried beans and soak for at least 4 hours. If not using a pressure cooker, soak beans overnight.
  • Place beans in pressure cooker with enough beef stock or water to cover by 2 inches and process 12-15 minutes, depending on how long they've been soaked. (Feel free to add extra garlic or a bay leaf if you so desire.) Allow to come down from pressure naturally. If not using a pressure cooker, place in pot and simmer for 2-3 hours until almost tender, adding more liquid if necessary.
  • In a large Dutch oven brown sausage, stirring to crumble the meat. Drain pan drippings if desired. Add onion and garlic and saute until transparent. Add tomatoes, bay leaf, stock or water, salt, seasoned salt, thyme and beans with their liquid whether canned or processed dry. Cover and simmer for 1 hour, stirring occasionally. Add bell pepper and diced potato; cover and simmer 20 more minutes until potatoes are tender. Remove bay leaf before serving.

WHITE BEAN SAUSAGE SOUP

White Bean Sausage Soup image

A very flexible recipe - you can cook the beans "from scratch" or use canned beans, use any kind of sausage you want (Jimmy Dean reduced fat works great - it comes in 12 or 14 oz. packages and I use it in place of the 1 lb. called for in the recipe) or substitute ham or turkey, you can add or substitute favorite veggies. This soup freezes well and can be halved or doubled. And it's delicious! To make a lower fat version, use the reduced fat sausage and 1% or skim milk. (The cooking time is for a crock pot - if you use your stove top, cooking time is greatly reduced.)

Provided by Knitting Granny

Categories     Beans

Time 4h30m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 cup dried white bean, cooked (or about 2 cups canned white beans)
2 cups carrots, cut in small bite-sized pieces
1 cup celery, cut in small cross-wise pieces
2 garlic cloves, peeled, mashed and cut into very fine pieces
1 (14 ounce) can diced tomatoes
2 cups chicken broth (1 14 oz. can will do)
2 bay leaves
1 lb sausage, cooked, crumbled and well drained (or the equivalent amount of ham or turkey, cooked if need be, and cut into bite sized pieces)
2 cups milk or 2 cups half-and-half cream
3 -4 cups kale (don't use the stems) or 3 -4 cups bok choy, rinsed and cut into bite-sized pieces (don't use the stems)

Steps:

  • Mix all ingredients except the milk and the greens in a large heavy pan or crock pot.
  • Cook on low for about six hours or on high for four hours. If cooking on the stove top, bring to a boil and then simmer until carrots and celery are tender.
  • Add the milk or half-n-half and heat until soup is good and hot again.
  • Stir in the greens and heat just until the greens become limp but are still brightly colored.
