Thick and Beefy Beanless Chili image

This is a fairly mild chili. Feel free to add jalapenos along with the onions and poblanos, some hot sauce or some chopped chipotles in adobo sauce. All would be delicious and add some good, hot spice!

4 pounds ground beef
1 large sweet onion, chopped
2 medium poblano peppers, chopped
3 tablespoons chili powder
1 teaspoon chipotle chili powder
1 teaspoon ancho chili powder
1 1/2 teaspoons ground cumin
2 14- ounce cans tomato sauce
3 14- ounce cans fire-roasted diced tomatoes, do not drain
kosher salt & freshly ground black pepper, season it well!!

Steps:

  • In a large pot or dutch oven, cook ground beef until almost no pink remains. Drain off fat. Add onions and poblano peppers, cook another 2-3 minutes. Add spices, cook another two minutes or so, stirring occasionally.
  • Add tomato sauce and diced tomatoes, stirring well. Bring to a boil then reduce heat and simmer, mostly covered with just a small amount of space for heat to escape, for at least another hour (and up to two or three if you've got the time). SEASON TO TASTE (be sure to add enough salt until the flavors really pop)!
  • Top with sour cream, shredded cheese, diced poblano and/or jalapenos, chopped green onion and anything else you prefer!

1 TBS Olive Oil
1 Pound Ground Meat (Beef, Turkey or Sausage) ( - at room temperature & gently patted dry (SEE NOTES))
Kosher Salt & Ground Black Pepper
1 small Yellow Onion ( - small dice( about 1 ½ cups))
1 small Bell Pepper ( - small dice (about 1 cup))
2 cloves Garlic ( - minced)
1 TBS Chili Powder
2 tsp EACH: Ground Cumin, Smoked Paprika & Dried Oregano
2 TBS Tomato Paste
1 Cup Beer OR Beef Broth
1 (14 ounce) Can Fire Roasted Diced Tomatoes
1 (8 ounce) Can Tomato Sauce
1 ½ tsp EACH: Dark Brown Sugar & Worcestershire Sauce
1 Bay Leaf

Steps:

  • Brown beef: In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef and cook, undisturbed for 2-3 minutes, or until edges start to brown. Season with a ½ teaspoon of salt and a ¼ teaspoon of pepper. Use a spatula to flip the beef over and use the back of a wooden spoon to break up the beef into large crumbles. Cook, stirring occasionally, until beef is browned, but not completely cooked through, about 3-4 additional minutes. Use a large slotted spoon to transfer the beef to a plate or bowl. Drain off all but 1 tablespoon of oil from the pan, or if the pan seems dry, add a splash of oil (SEE NOTES).
  • Sauté vegetables: Reduce heat to medium. Add the onion and bell pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, chili powder, cumin, paprika and oregano. Season to taste with salt and pepper. Cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 1-2 minutes.
  • Add the liquids: Add in the beer (or broth), using the back of a spoon to scrape of any brown bits stuck on the bottom of the pan. Let cook for 1-2 minutes. Add the diced tomatoes, tomato sauce, sugar, Worcestershire and bay leaf. Add in the beef along with any accumulated juices. Bring to a gentle boil over medium-high heat. Immediately reduce heat to simmer and cover.
  • Simmer: Cook, uncovering to stir a couple times, for 30 minutes. Uncover and cook for 10 minutes, or until chili is thick and saucy. Use tongs to remove bay leaf and discard. Taste and adjust for seasoning with salt and pepper.
  • Serve: Ladle warm chili into individual bowls and garnish with optional toppings. Enjoy!

2 large onions, diced
2 pounds ground beef

4 red bell peppers, seeded and diced

1 (26 ounce) can tomato soup (such as Campbell's®)
1 pound chorizo sausage, ground
2 (4 ounce) cans diced green chiles
3 tablespoons chili powder (such as McCormick®)
1 tablespoon adobo seasoning (rojo adobo)

Steps:

  • Bring water to a boil in a large soup pot, reduce heat to low, and cook onions in the simmering water until translucent, 5 to 8 minutes. Add ground beef to onions; cook and stir until ground beef is browned and crumbly, about 10 more minutes. Sprinkle beef with salt and black pepper as it cooks. Drain excess grease.
  • Heat olive oil in a large skillet over medium heat; cook and stir bell peppers in the hot oil until softened, about 5 minutes. Add peppers to meat mixture. 2 tablespoons canola oil
One 2 1/2-pound beef chuck roast, cut into 1/2-inch cubes
2 medium chopped yellow onions
1 tablespoon chili powder
1/2 teaspoon red pepper flakes
1/2 teaspoon cinnamon
1 small chopped jalapeno pepper
1 tablespoon chopped garlic
One 28-ounce can chopped tomatoes
1 cup beef broth
Kosher salt, to taste
Black pepper, to taste
1/2 cup sour cream
1 teaspoon chili powder
1 teaspoon lime juice
1 teaspoon hot sauce
2 scallions
2 tablespoons chopped fresh cilantro

Steps:

  • Put a deep heavy-bottomed pot over medium-high heat and add the oil. Put in the beef, season with salt and pepper, and cook until it is well browned, about 10-15 minutes. Remove the meat to a bowl with a slotted spoon and discard the fat from the pan. Pour half the broth into the pan and scrape up any browned bits.
  • Pour this into the bowl of a slow cooker. Add the onions and put the meat on top. Add the chili seasoning, red pepper flakes, cinnamon, jalapeno, and garlic.
  • Add the tomatoes with their juice and the remaining broth. Cover and cook on low for 4-6 hours. Taste, and adjust the seasoning. Serve garnished with spiced sour cream.

1/3 c chili powder
2 tsp sea salt or kosher
1 Tbsp black pepper
1 c banana (yellow) peppers, chopped
1/2 c jalapeno peppers, chopped
2 c tomato sauce
2 c chopped tomatoes
1 large chopped onion
1 tsp parsley, chopped
1/3 c crushed red pepper seeds
1/2 c water

Steps:

  • 1. Spray cooking spray in cast iron skillet and add the ground beef, onions. Cook on a medium heat and chop the beef up with wooden spoon until it like taco meat. Stir well to mix up with the onions...
  • 2. Add the spices,including the peppers,and stir to mix with the beef and onions..may need to turn down the burner a little so it isn't burning the meat or spices.
  • 3. Add the tomato sauce and chopped up tomatoes. Turn burner to simmer and add the water. Mix it well with wooden spoon and then just put a lid on the skillet and check it every few minutes, stirring it up. Cook for about 15 minutes and turn off the stove. Add the cornbread or fry bread, etc and you have a complete meal.
  • 4. I have used this as the chili to put on hotdogs..works good..

My father came up with this recipe when I lived at home. He always added the optional cayenne pepper, and we four kids would mop up the chili with slices of bread. I don't use the cayenne for my family, but it still warms you up on cold days.

5 pieces finely chopped garlic
1/4 cup vegetable oil
3 cups tomato puree

1 can (10 oz of diced tomatoes and green chilies (think RoTel))
1 can (15 oz of crushed tomatoes)

Steps:

  • In a heavy bottom pan, brown the ground beef.
  • Leave the rendered fat in the pan and saute the onions in the fat and meat.
  • Add the garlic and stir for 1 minute.
  • Skim the fat off the meat, if desired.

1 green bell pepper (diced)
