This White Bean Cookie Dough is made with only 6 wholesome ingredients. It's quick and easy to make. So if you're kinda lazy but want some sweets, this is for ya!

1/2 can white beans (net weight 120 g)
45 g oat flour
1 1/2 Tbsp maple syrup
1/2 tsp vanilla extract
1 1/2 Tbsp nut butter
2 Tbsp drinking water
2 Tbsp dark chocolate chips

Steps:

  • Drain out the water from the white kidney beans and give them a rinse.
  • Add all ingredients except for the chocolate in a food processor. Blend until smooth.
  • Add more maple syrup or water to your taste and to adjust the consistency.
  • Stir in the chocolate chips. EAT!

2 cups flour
1 cup brown sugar
1 cup butter, softened
2 tablespoons milk
1 teaspoon vanilla
1 teaspoon salt
¼ cup chocolate chips
¼ cup mini chocolate chips
5 sandwich cookies
¼ cup peanut butter
3 peanut butter cups
¼ cup chocolate candy
⅓ cup chocolate, melted
¼ cup white chocolate chip
¼ cup chocolate chips

Steps:

  • Preheat oven to 350˚F (180˚C).
  • For the Base Dough, evenly spread flour out on a baking tray and bake for 5 minutes.
  • In a large bowl, mix flour, sugar, butter, vanilla, milk, and salt until combined evenly.
  • Refrigerate mix for 30 minutes.
  • Separate dough into 4 sections
  • For the Chocolate Chips, add one section of dough in a large bowl, mix in the chocolate chips and mini chocolate chips until combined.
  • For the Cookies and Cream, crush sandwich cookies in plastic bag until evenly separated.
  • Place crushed sandwich cookies into a large bowl, and add in one section of dough mixing until combined.
  • For the Peanut Butter Chocolate, add chocolate candies, chocolate peanut butter cups, and peanut butter, into a large bowl with one section of dough and mix until combined.
  • For the Triple Chocolate Chunk, add melted chocolate into a large bowl with the last section of dough and mix until evenly combined and consistent color.
  • Add the chocolate chips and white chocolate chips, then mix until combined.

1 can unsalted chickpeas, drained and skins removed (15 ounce - 425 grams)
2 ½ cups hot water
2 tablespoons lemon juice, divided, plus 1 teaspoon
2 teaspoons unrefined coconut oil
½ cup almond meal
¼ cup dark brown sugar
1 tablespoon granulated sugar
½ teaspoon vanilla extract
¼ teaspoon kosher salt
⅛ teaspoon baking soda
⅔ cup vegan dark chocolate
food processor

Steps:

  • In a large bowl, mix together the skinned chickpeas, hot water, and 2 tablespoons of lemon juice. Soak for 10-20 minutes to help remove some of the canned chickpea flavor. Drain and rinse the chickpeas in cold water to cool.
  • Add the drained chickpeas, remaining teaspoon of lemon juice, and the coconut oil to a food processor. Blend until completely smooth. Add the almond meal, brown sugar, granulated sugar, vanilla, salt, and baking soda. Blend until completely smooth, scraping down the sides as necessary.
  • Transfer the 'dough' to a medium bowl and fold in the chocolate chips.
  • Cover the bowl and transfer to the refrigerator to cool for 1 hour (or freeze for 30 minutes), until stiffened to the consistency of cookie dough. The dough will keep in an airtight container in the refrigerator for up to 5 days.
  • Enjoy!

1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 (14 ounce) can white kidney beans
1/4 cup butter
1 cup brown sugar
1 large egg
1 teaspoon vanilla
1/2 cup chocolate chips
1/2 cup raisins or 1/2 cup dried cranberries
1/4-1/2 cup chopped walnuts or 1/4-1/2 cup pecans
2 tablespoons ground flax seeds

Steps:

  • Preheat oven to 325°F.
  • Place oats in the bowl of a food processor and pulse until it resembles coarse flour. Add flour, baking powder, baking soda, cinnamon & salt & process until combined. Transfer to a large bowl.
  • Put beans in food processor & pulse until roughly pureed. Add butter & process until well blended. Add brown sugar, egg & vanilla & pulse until smooth, scraping down the sides of the bowl.
  • Poor bean mixture into oat mix & stir by hand until almost combined; add chocolate chip, raisins, nut & flaxseed & stir until just blended.
  • Drop large spoonfuls of dough onto a cookie sheet that has been sprayed with non-stick spray, & flatten each one a little with hand.
  • Bake 14-16 minute.
  • Makes 2 dozen. Each cookie contains 138 calories & 3.5 grams fat.

3/4 cup packed dark brown sugar
1/2 cup cooked or canned cannellini beans, drained and rinsed
2 tablespoons pure maple syrup
2 large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together on medium-high speed until smooth and fluffy, 4 to 5 minutes. Meanwhile, put the beans in a food processor; add the maple syrup and puree until very smooth.
  • Add the bean mixture to the creamed butter in the bowl of the stand mixer and beat on medium speed until completely smooth, stopping and scraping down the bowl with a rubber spatula several times, 3 to 4 minutes. Add the eggs, one at a time, beating well between additions; add the vanilla and mix until combined. Scrape down the bowl. Don¿t worry if the mixture looks curdled; it will smooth out when you add the dry ingredients.
  • Meanwhile, sift the flour, baking soda and salt together into a bowl. With the mixer on low speed, slowly add the flour mixture and mix until just combined. Remove the bowl from the mixer and stir in the chocolate chips. Drop heaping tablespoonfuls of dough onto the prepared pans, spacing them about 2 inches apart. Bake until the cookies begin to turn golden around the edges, 10 to 12 minutes; do not overbake. Remove the cookies from the oven and cool for at least 10 minutes on the pan before transferring them to a rack to cool completely.
  • Store the cookies in an airtight container for up to 5 days.
