PUMPKIN, BUTTER BEAN, AND SPINACH CURRY
Mild, creamy vegetarian curry that the whole family will love! And so EASY to make!

Steps:
- Heat the oil in a large saucepan over medium heat, and stir in the onion. Cook and stir until the onion is soft and beginning to brown, about 8 minutes. Stir in the curry paste, cook for 2 minutes longer, then add the coconut milk water, and pumpkin. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the pumpkin is nearly tender, about 10 minutes.
- Stir in the butter beans, and continue simmering until the pumpkin is tender, about 5 minutes. Season to taste with salt and pepper, then stir in the spinach and cilantro. Simmer a few more minutes to reheat, and serve.

EASY BEAN PUMPKIN CURRY

Steps:
- Add olive oil to a pan (on a medium flame) and then add in the chopped onion and let cook, stirring a bit for about 5 minutes.
- Add in the garlic, ginger, coconut milk, pumpkin puree, vegetable stock, green beans, garam masala, coriander, salt and pepper and stir till well incorporated. Then, let simmer uncovered, for about 10-12 minutes - till sauce has thickened.
- Serve warm with naan, paratha or rice.
BEAN AND PUMPKIN CURRY
The peanut butter gives this recipe a lovely flavour. It is easy to prepare and it's quicker to cook than ordering take away. You can use frozen beans or peas. Just make sure that the beans or peas are thawed and drained of any liquid. Actually, the basis of this curry can be used for most vegetables. Just let your head go when making it.

Steps:
- Steam or boil pumpkin.
- Blanch beans in boiling water and refresh in cold water.
- Cut each into three pieces and set aside.
- Heat Wok, and add 2 tablespoons of the thick coconut milk scooped from the top of the can.
- Heat through, then add curry paste and fry, stirring constantly, until mixture smells fragrant.
- Add pumpkin pieces, beans, bamboo shoots, lemon grass and remaining coconut milk, and simmer for 5 minutes.
- Add peanut butter and sugar.
- Stir through until sugar is dissloved, add sweet basil leaves and serve with jasmine rice.

I am very pleased with this recipe and is one of my favourite dishes, hence the publication! It is spicy and tasty, Perfect for a cool winter evening or a hot summer night! Serve on hot steamed Jasmin rice and garnish with lots of coriander leaves. Enjoy!

Steps:
- Remove all excess fat from chicken thighs.
- Dice chicken into 2-3 cm pieces.
- Peel pumpkin, dice into 2X3 cm pieces.
- Wash beans, cut off tail ends.
- Cut beans into 4-5cm pieces (typically just halve them).
- Heat oil in wok then add the curry paste and shallots, cook, stirring for about 2 minutes or until fragrant.
- Add chicken, stir in fish sauce, stir-fry until just starts to be tender. You may add a little water, but you'll find that the chicken pieces release enough water to cook them.
- Chicken should be nearly cooked when you add the pumpkin pieces and 100 ml water. Simmer for 3-5 minutes covered, then add green beans. Simmer for a further five minutes. Make sure neither the pumpkin, nor the beans become too soft. The beans should stay slightly crunchy.
- Stir in coconut milk/cream. Raise heat until just to boil. Simmer uncovered until the mixture is heated through.
- Shred some coriander leaves -- place some on the surface of the red curry, save the rest for garnish on serving.

- Preheat oven to 350°F. Using a small sharp knife, cut a 4-inch circle around the pumpkin’s stem. Cut off any stringy membrane attached to top; set aside. Use a large spoon to scrape and remove seeds and stringy membrane from inside pumpkin.
- Set pumpkin on a parchment paper– or aluminum foil–lined rimmed baking sheet. Add rice, coconut milk, 1/4 cup water, and curry paste to pumpkin; stir to dissolve curry paste. Place top on pumpkin.
- Bake pumpkin in preheated oven until filling is bubbling, about 1 hour. Carefully remove top, and stir in green beans, fish sauce, and salt to taste. Replace top, and bake at 350°F until pumpkin flesh and green beans are fork-tender and rice has a risotto-like texture, 30 to 45 minutes. Let stand 15 minutes; taste and adjust seasoning with salt or fish sauce. Scoop rice and tender pumpkin into bowls, and top with cilantro, mint, and fried shallots.
