STUFFED POBLANO PEPPERS {LOW CARB}
These Stuffed Poblano Peppers are a healthy low-carb dinner idea made with ground beef, red peppers, cheese and plenty of flavour!

Steps:
- Preheat oven to 400 F. Wash and de-seed poblano peppers, then drizzle with olive oil and season with salt and pepper if desired. Add to a parchment-lined baking sheet and bake for 10 minutes.
- Meanwhile, cook ground beef ove med-high heat until browned (about 5-7 min) then drain any excess fat. Add chili powder, cumin, paprika, salt, garlic, red pepper and red onion, sauteeing another 2 minutes until veggies are tender.
- Stuff ground beef mixture into poblano peppers, then top with cheese. Bake another 10 minutes until cheese is melted.
- Remove from oven and top with toppings of choice. Serve and enjoy!

- Cut each pepper in half and remove the seeds. Stuff peppers with cheese; set aside., Combine the seasonings; rub over pork. Grill, covered, over medium-hot heat until a thermometer reads 145°, about 15 minutes. Place peppers over indirect heat; cook until peppers are tender and cheese is melted, about 8-10 minutes.

BBQ PULLED PORK STUFFED POBLANOS - LOW CARB APPETIZER
These bbq pulled pork stuffed poblanos work as a low carb appetizer, snack or even dinner. The poblanos have bit of heat, while the bbq pork has sweetness and spice and the cheddar cheese pulls it all together. Only 4.3g net carbs per stuffed pepper.

Steps:
- heat to 400 degrees for 20 minutesboil peppers for 8 minutes
- Preheat oven to 400 degrees F.
- Get a large pot of water boiling as you cut the peppers.
- To prepare the peppers, cut them in half lengthwise and clean out the seeds. Drop them in the boiling water and cook for 8 minutes. Spoon them out and place in a bowl of ice water to retain their color and cool off.
- Meanwhile mix the cheddar and the pulled pork. When the peppers are cooled, stuff with the mixture and place in a baking dish.
- Bake for 20 minutes and when done, spoon a tablespoon of low carb bbq sauce over each pepper.
- NOTE* I am using already cooked pulled pork from this recipe and a low carb bbq sauce from this recipe. If you don't care about carbs you can use your own recipes or already prepared items.

- Place the cut peppers in a microwave safe baking dish and steam for 3-4 minutes or until softened. Pour out any water. (Alternately, cover the peppers in foil and bake for 15-20 minutes to soften. Pour out any accumulated water.)
- Stir the BBQ sauce and 1 cup of the cheese into the pulled pork and divide evenly among the peppers. Bake for 20-30 minutes or until the peppers are hot and bubbly. Top the peppers with remaining cheese and return to the oven until the cheese has melted. Garnish with cilantro and serve with a green salad.
- Refrigerate any leftovers. To reheat cover and place in the microwave for 60 - 120 seconds on high power or until the middle is hot. Alternately, place in an oven safe bowl and bake at 350 for 30 minutes or until the middle is hot.
