HAWAIIAN BBQ'D CHICKEN
A tropical marinade sweetened with pineapple juice, soy sauce and brown sugar is the basis for this tender Grilled Hawaiian BBQ Chicken. Serve over rice with grilled pineapple and green onion garnish or all by itself, very ono!

Steps:
- Marinate the chicken thighs with the rest of the ingredients except the BBQ sauce (if using) for 30 minutes or up to overnight. Reserve some of the marinade for basting.
- Cook chicken thighs smooth-side down on a hot grill until grill marks show, about 3 minutes. Turn and cook until grill marks show on the other side, about 5 minutes.
- Keep cooking, turning over every 2 minutes, about 10 to 12 minutes.
- When chicken is almost finished cooking, brush with reserved marinade mixed with the *BBQ sauce if using, *when I use the BBQ sauce I go about half marinade, half BBQ sauce, measurements are approximate.
- Top with chopped cilantro and serve with grilled pineapple slices over rice.

- First of all, separate the canned slices of pineapples from the juice and reserve both for later use.
- Secondly, add BBQ sauce, soy sauce, reserved pineapple juice, ketchup, sesame oil, onions, powdered or chopped garlic, powdered or chopped ginger in a small mixing bowl, and combine them well. Also, reserve ½ cup of the prepared marinade for later use.
- Then marinate the chicken with the remaining marinade batter, cover it with cling wrap or aluminum foil, and refrigerate for about 2 to 8 hours.
- When it's time to BBQ the chicken, take a water-filled pan and boil the long-grain white rice in it.
- Now, for grilling the chicken, light up your smoker with the woodchips of your choice.
- Grill chicken over the smoker while brushing it using a food brush with reserved marinade and melted butter, especially in the last few minutes, and cook until the internal temperature of the chicken reaches 165 degrees F.
- In a pan, roast some black cumin in vegetable oil and then grease both sides of pineapple slices with vegetable oil. In the last few minutes, grill each side of pineapple slices for at least 2 minutes or until they have slightly softened and formed a grilled texture.
- Finally, top the boiled white rice with deliciously grilled chicken and pineapple slices for serving your meal. Sprinkle some thinly sliced green onions, and here you go. Enjoy!

Steps:
- Put chicken in large shallow dish.
- Drain pineapple, keep 1/2 cup juice.
- Set pineapple aside.
- Mix juice with the next 7 ingredients in small pan.
- Bring to a boil.
- Reduce heat and simmer for 5 minutes.
- Pour over chicken.
- Cover and chill for 1 hour.
- Remove chicken from marinade, reserve marinade.
- Alternate chicken, pineapple, green pepper, mushrooms, and tomatoes on skewers.
- Grill kabobs over hot coals 20 minutes or until chicken is done.
- Turn and baste frequently with marinade.
- Serve over hot rice.

This is a recipe that has been a family favorite for decades. My aunt gave it to my mom when she asked for it, I don't know where my aunt got this recipe. We would serve this on top of some white rice.

Steps:
- Set oven to 350°F.
- Place chicken in baking dish.
- Melt butter in large skillet on low heat.
- Mix corn starch and hot water in glass or small bowl until well blended; set aside.
- Add excess pineapple juice from can of pineapple chunks.
- Sprinkle pineapple chunks over chicken.
- Mix brown sugar, salt, vinegar, worcestershire sauce, and chili powder in skillet until well blended.
- Turn skillet to medium heat and let simmer for 2 minutes.
- Stir in ketchup and soy sauce.
- Stir in corn starch mixture and blend well, sauce will become very thick.
- Let simmer 2-3 more minutes.
- Pour sauce over chicken and pineapple chunks.
- Bake chicken for 50-60 minutes, or until chicken is cooked completely through.
- Remove with caution, pan may be heavy and it will be hot.

HAWAIIAN BBQ CHICKEN QUESADILLAS
I happen to love those BBQ chicken pizzas, especially with a little pineapple on top. So here's a lunch time creation when pizza dough or bread was not an option. Quick and so good! If I cook chicken for this I boil a chicken breast (can be frozen to begin with, just drop it in the water). After about 15-20 minutes just cut open the chicken to see if it is cooked all the way through and ready to use. If the chicken breast is defrosted it takes much less time, but time is estimated. I would encourage others to change this recipe up to create other pizza favorites making a pepperoni quesadilla, meat lovers, hawaiian, chicken alfredo, etc. Get creative! Pizza anyone?

- Start to heat up a skillet on the stove because this won't take long.
- Take flour tortilla and sprinkle half of it with cheese and 1/4 of cooked chicken.
- Add bacon bits and a little bit of crushed pineapple (no juice) if desired. Pour a little bit of BBQ sauce on top. Don't be too generous with the sauce or it will seep out of the quesadilla.
- Spray the pan with cooking spray. Fold the tortilla in half and place in pan. It only takes a few short minutes to brown one side and then flip over to brown the other side.
- When done, cut into wedges and serve with added BBQ sauce if you like to dip.

- In a bowl, whisk together bbq sauce, juice from the can of pineapple slices, soy sauce, and garlic. Pour half of the mixture into a large resealable bag. Add oil and chicken. Seal bag and chill for at least 30 minutes or up to overnight. Reserve remaining sauce mixture and chill until ready to use.
