Categories     Dinner

Time 3h15m

Number Of Ingredients 6

Foil
Roasting pan (or rimmed baking sheet)
Silicone basting brush (optional)
Country-style pork ribs*
Salt and pepper
Your favorite BBQ sauce

Steps:

  • Preheat your oven to 300°F. Salt and pepper both sides of your ribs and place in a single layer in your pan, fattier side up.
  • Cover the pan tightly with foil and bake for 2 hours. Carefully (steam and liquid in the tray will be hot!) remove ribs from the oven and check the meat. They should be starting to become tender. If they still feel tough, re-cover them and place them back in the oven for 15 to 30 minutes.
  • Transfer ribs to a plate and drain liquid from the pan. Return ribs to tray and brush with a generous coating of BBQ sauce.
  • Turn oven down to 275°F and bake ribs, uncovered, for 1 hour more, or until you can pull the meat apart with a fork (if your ribs were small and already pretty tender when you put them back in the oven, start checking after 20 minutes). Brush with another coat of BBQ sauce, rest for 5 minutes, serve and enjoy!

GRILLED COUNTRY-STYLE PORK RIBS

Grilled Country-Style Pork Ribs image

The country-style pork ribs are rubbed with a dry rub, grilled over a two-zone fire, and finished in BBQ sauce. An inexpensive weeknight grilling recipe!

Provided by David & Debbie Spivey

Categories     dinner     Main Course

Time 1h10m

Number Of Ingredients 3

6 country-style pork ribs ((about 3-5 pounds)
6 tablespoons pork dry rub
1 cup barbecue sauce

Steps:

  • Rinse the ribs gently under cool running water in the sink and pat dry with paper towels. (See Notes)
  • Rub the country-style ribs with a dry rub of your choice, using your hands to press it onto the meat so it will adhere. Let them sit out on the counter while preheating the grill or for best results, cover the ribs with plastic wrap refrigerate for two hours or overnight.
  • Light a chimney full of charcoal. When the coals are lit and gray with ash, pour out the coal into the grill and set up the coals for a two-zone fire for indirect heat. Preheat to 350 degrees F.
  • Place the ribs over direct heat on a clean and oiled grate. Grill until golden brown with a slight char on them, about 3 to 5 minutes (depending on size), then flip the ribs and char the other side for an additional 3 to 5 minutes.
  • When both sides of the ribs are charred, move them over to the cooler (indirect) side of the grill. Close the lid and allow the ribs to cook for about 20 to 30 minutes at 350 degrees F. Add charcoal and adjust the vents of the grill to maintain temperature.
  • After 20 minutes, check the temperature of the ribs with an instant-read thermometer. The thickest part of the ribs should read somewhere around 135 to 140 degrees F.
  • At this point, move the ribs back over direct heat and baste with warm barbecue sauce to caramelize the sauce. It's important to pay close attention not to let the ribs get to charred and black.
  • Double-check the temperature which should be at 145 to 150 degrees F before removing from the grill. Remove them and allow the ribs to rest at least 10 minutes before serving.

GRANDMA'S FALL OFF THE BONE BBQ COUNTRY STYLE PORK RIBS

Grandma's Fall Off the Bone BBQ Country Style Pork Ribs image

My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

Provided by Heidi

Categories     Main Course

Time 2h40m

Number Of Ingredients 16

5 pounds bone-in country style pork ribs
kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons canola oil
2 medium yellow onions (, sliced 3/8" thick)
3/4 cup ketchup
3/4 cup water
1/2 cup granulated sugar
1/3 cup dry sherry wine
2 tablespoons apple cider vinegar
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 cloves garlic (, pressed or minced)
1 teaspoon kosher salt
3/4 teaspoon paprika
3/4 teaspoon chili powder

Steps:

  • Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
  • Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
  • Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
  • While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
  • Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
  • Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
  • Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

Categories     BBQ     Dinner Recipes     Main Dish     Pork Dishes

Time 2h40m

Number Of Ingredients 4

1 1/2 lbs country style pork ribs ((boneless))
1/2 tsp each, salt & pepper ((to taste))
2 Tbsp apple cider vinegar
1/2 cup BBQ sauce ((or more, as desired))

Steps:

  • Preheat your oven to 350°F (175°C) and trim any excess fat cap (an even layer of thick fat) from your boneless country style pork ribs as needed.
  • Season both sides of the country style ribs with salt and pepper, then arrange them on a couple of sheets of aluminum foil (large enough sheets to wrap around your pork ribs and seal securely). Place the foil with the ribs into a baking dish or onto a rimmed baking sheet.
  • Create the 'pouch' around your seasoned country style ribs, pulling up the sides so it will hold in the liquid, then pour the apple cider vinegar over the ribs. Seal the aluminum foil securely.
  • Bake at 350°F (175°C) for 2 hours or until your pork ribs are fork tender (small 4 ounce ribs may cook quickly, and large 10 ounce ribs may take a bit longer).
  • Remove from the oven and open the aluminum foil carefully (vent the steam away from your body!). Transfer the pork ribs to a clean sheet of aluminum foil and drain the fat from your baking dish or sheet pan, then discard the used aluminum foil.
  • Move the ribs back into your baking dish and coat all sides of the pork ribs generously with the BBQ sauce. Return to the oven and bake uncovered for an additional 20 minutes.
  • Remove from the oven when done and allow the pork ribs to rest for 10 minutes before serving. Slather with more BBQ sauce if desired.

  • Place the ribs in a large pot and add just enough cold water to cover them completely. Add the quartered onion, garlic, salt and pepper to the pot and place over high heat. Bring the water to a boil and then reduce the heat to low. Cover the pot and simmer the ribs for 45 minutes.
  • About 15 minutes before the ribs are done simmering, preheat the oven to 350 degrees and spray a 13" x 9" baking dish with cooking spray. Remove the ribs from the pot and arrange them in the prepared baking dish. Pour the entire bottle of barbecue sauce over the ribs and use a brush or spoon to coat every surface with the sauce.
  • Cover the dish with heavy-duty aluminum foil and bake for 30 minutes. After 30 minutes, remove the aluminum foil and use a spoon to baste the ribs with the barbecue sauce that has accumulated in the bottom of the pan. (Try to get as much of the sauce off of the bottom of the pan and onto the ribs as possible.) Return the pan to the oven and bake the ribs, uncovered, for an additional 25 minutes.

  • Preheat the oven to 325°. On a large work surface, pat the pork ribs dry and drizzle with 1 tablespoon of Canola oil. Sprinkle with 1 teaspoon Kosher salt and 1/2 teaspoon pepper, and rub to coat evenly on all sides.
  • Add remaining Canola oil to an enameled cast iron Dutch oven over medium-high heat. If you do not have a Dutch oven, see notes below.
  • Brown the pork ribs by adding 2-3 ribs to the oil at a time, taking care not to overcrowd the pan, and allow to sear on the first side for 4-5 minutes without moving or jostling. Turn the ribs over, and sear 3-4 minutes more. Repeat with the remaining ribs. Remove from the pan and set aside on a large plate to rest.
  • Reduce the heat to medium and add the peppers and the onions. Sauté for 5 minutes, or just until softened.
