Have you ever had BBQ Chicken Lollipops? They're the juiciest, tastiest chicken you'll ever try. The best part? They don't take long to make!

Number Of Ingredients 6

2 pounds of frenched chicken drumsticks
1/2 cup barbecue sauce
1/2 cup ketchup
1/4 cup Apple Cider Vinegar
1/2 Cup Brown Sugar
2 Tbsp of the BBQ Rub you used to season the Chicken Lollipops

Steps:

  • Wrap the bone end of each drumstick with foil, and then season the meat with bbq rub.
  • Setup your smoker to cook at 365 degrees.
  • Place the drumsticks directly on the grill grate and let them cook for ten minutes, and then flip.
  • Combine all of the sauce ingredients in a bowl and set aside.
  • After 20 minutes spot check the internal temperature of the drumsticks. When the internal temperature hits 165 dip each of the drumsticks in the sauce, and then place them back on the grill grates.
  • Continue to cook the chicken drumsticks until the internal temperature hits 175 degrees.

Number Of Ingredients 11

700 g ground chicken
1 egg yolk
1/2 teaspoon salt
2 garlic cloves, crushed
1 tablespoon fresh grated gingerroot
1 tablespoon coarsely ground coriander seed
1 lime, zest of
1 red chili pepper, finely chopped
oil (for cooking)
lime wedge (to garnish)
24 ice cream sticks

Steps:

  • In a bowl mix the ground chicken, egg yolk and salt. Add the next 5 ingredients and mix thoroughly.
  • Shape into elongated patties of even size around the top half of the ice cream sticks, making them look like a lollipop.
  • Place on a plate and chill for 2 hours.
  • Cook patties on an oiled barbecue hotplate heated to medium and cook until golden brown and cooked through (keep patties lightly oiled during cooking to prevent them becoming dry).
  • Serve hot with lime wedges and squeeze juice over.
