PEACH AND BLUEBERRY CRUMB PIE

1/4 cup quick cooking tapioca pearls, such as Minute Tapioca
1 pound frozen blueberries, thawed and drained, or 1 1/2 cups fresh blueberries
1 pound frozen peaches, thawed, or 3 large fresh peaches, pitted and thinly sliced
1/2 cup brown sugar
2 tablespoons fresh lemon juice
2 teaspoons pure vanilla extract
1 1/2 teaspoons ground cinnamon
Zest of 1 large lemon
One 9-inch unroll-and-bake refrigerated pie crust
1 egg white, lightly beaten
1/2 cup slivered almonds
1/2 cup (1 stick) butter, cut into 1/2-inch pieces, chilled
1/2 cup quick cook oats
1/2 cup almond flour
1/2 cup brown sugar

Steps:

  • Place an oven rack in the center of the oven and preheat to 375 degrees F. Butter a 9-inch ceramic or glass pie dish.
  • For the filling: Finely grind the tapioca in a food processor or spice grinder, about 1 minute. Combine the blueberries, peaches, sugar, lemon juice, vanilla, cinnamon, lemon zest and tapioca in a medium bowl.
  • Unroll the pie crust and place in the pie dish. Brush the inside with the egg white.
  • For the topping: Pulse the almonds, butter, oats, flour and sugar until small chunks form in a food processor.
  • Pour the filling into the crust. Crumble the topping over the filling and bake until the top is golden brown, about 55 minutes. If after 30 minutes of baking the edges of the crust begin to brown too quickly, cover the edges of the pie dish with strips of foil. Cool the pie for 30 to 40 minutes before slicing.

1/4 cup cornstarch
Juice of 1/2 lemon
1/4 cup all-purpose flour

1/4 teaspoon ground cinnamon

Pinch salt
4 tablespoons unsalted butter, cut into small cubes
1/3 cup sliced almonds
1 roll store-bought pie dough (recommended: Pillsbury)
2 tablespoons unsalted butter, thinly sliced

Steps:

  • Heat the oven to 375 degrees F.
  • To make the filling:
  • In a large bowl, combine the peaches, sugar, and cinnamon. Add the cornstarch to a small bowl and whisk in the lemon juice so no lumps remain. Pour the cornstarch mixture over the peaches and toss. Let the peaches sit for 15 minutes while you roll out the pie dough and make the streusel topping.
  • To make the topping:
  • Mix the flour, brown sugar, cinnamon, allspice, and salt in a large bowl. Blend the butter into the mixture with your fingers until it forms pea-size lumps and looks crumbly. Stir in the almonds.
  • To assemble:
  • Roll out the dough an extra inch on a lightly-floured surface. Place the dough in the bottom of a 9-inch pie pan. Crimp edges as desired.
  • Pour the pie filling into the pie shell and sprinkle the streusel topping over the pie. Dot the top with sliced butter. Bake for 45 to 50 minutes. Remove from the oven and let cool before serving.

2 tablespoons cornstarch

  • Preheat the oven to 375 degrees F.
  • For the peach filling: Bring a large pot of water to a boil over high heat and fill a large bowl with lots of ice and cold water. Cut a small "X" into the base of each peach with a paring knife. Gently lower the peaches into the boiling water with a slotted spoon or tongs, then cook until the skin starts to peel away from the flesh, 30 to 60 seconds. Transfer immediately to the ice-water bath. Once cool enough to handle, peel the peaches and discard the skin. Remove the pit and cut flesh into 1/2-inch-thick wedges.   • 3. Top the peaches with the filling ingredients.
  • 4. Mix together well.
  • 5. Pour peach mixture into a prepared pie shell. Place on foil-lined baking sheet.
  • 6. Add the topping mixture, except for nuts, to a small bowl.
  • 7. With a fork, cut into the butter until pea size.
  • 8. Sprinkle topping evenly over peaches. Add the nuts to the topping last.

If the whole idea of starting with a "from scratch" pie shell intimidates you, then you certainly may substitute a purchased pie shell and prebake it according to the package directions, then proceed with the rest of the instructions. Prep time does not include the 30 minutes of chilling time for the pastry crust.

1/4 cup shortening, chilled
1 3/4 cups all-purpose flour
1/2 teaspoon salt

10 large fresh peaches
1/2 cup granulated sugar
1/4 teaspoon almond extract
1/4 cup cornstarch
6 tablespoons unsalted butter
3/4 cup granulated sugar
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • For the crust, combine very cold butter pieces with shortening, flour and salt in a large bowl.
  • Using a pastry blender or two knives, mix until pea-sized crumbs are formed.
  • Add 1 Tbsp of the ice cold water and mix, using a fork, then add another Tbsp of the water, and mix with the fork- do this until the dough forms into a mass (you may not need all of the water).
  • Don't add too much water or it will get gluey.
  • Wrap in plastic wrap and chill in fridge for 30 minutes.
  • Roll out dough on a floured surface to 1/4" thickness.
  • Line an UNGREASED 9" pie plate with the pastry, trimming excess and crimping edges.
  • Line crust with a circle of wax paper, then pour raw rice or beans into the shell.
  • Bake in a preheated 350 F oven until the crust turns golden brown, about 15 minutes.
  • Let cool, removing the rice and paper, and set aside.
  • Once pastry has cooled, preheat oven to 375 degrees F.
  • For the filling,set whole peaches into a bowl of cold water to cover.
  • Set this bowl near the stove.
  • Remove peaches from the water using a slotted spoon, saving the bowl of water, and set the peaches onto a paper towel-lined plate.
  • Fill a large saucepan with water- one big enough to hold the peaches.
  • Bring water to a boil, then drop in the peaches briefly, about 30 seconds- just to blanch them.
  • Immediately remove them using a slotted spoon and put them back into the bowl of cold water.
  • This will help make peeling the peaches easier (you can skip the blanching step if you wish and just peel the peaches with a paring knife).
  • Once the peaches are cool enough to handle, remove the skins (stubborn bits can be removed with a paring knife).
  • Cut peaches into halves, discard pits, then slice peaches and put into a large mixing bowl.
  • Add sugar, almond extract, and cornstarch, stirring to coat.
  • Pour the filling into the cooled pie shell.
  • Make the topping by first melting the butter over low heat in a small pan.
  • Once the butter melts, add the sugar, flour, salt, and cinnamon and stir until crumbly.
  • Immediately remove from the heat and mound the topping over the peaches.
  • Place pie plate onto a rimmed cookie sheet, then pop the whole thing into the oven, preheated to 375 F, and bake until the top is golden brown and the filling is bubbling around the edges, about 60-70 minutes.
  • Check often to make sure the topping isn't getting too dark- if it does, place a tent of foil over it.
  • Let cool on a wire rack.

  • 1. Crumb the butter, sugar, flour and salt with a pastry blender until well mixed 2. Set aside 3/4 cup of the crumbs 3. Press remaining crumbs into the bottom of a 9 inch pan about 3/4 of the way up the side 4. Combine peaches, cornstarch, sugar and lemon juice and mix well 5. Arrange peach mixture in crumb shell 6. Bake in 425 degree oven for 20 minutes 7. Remove from oven and sprinkle remaining top with reserved crumbs. 8. Return to oven and continue to bake for 20-30 minutes.

1 unbaked pie crust

⅓ cup white sugar
1 teaspoon ground cinnamon
¼ cup butter, softened

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk together the 3/4 cup sugar, the 2 tablespoons flour, and salt. Beat in the sour cream, egg, and vanilla. Stir in the sliced peaches. Pour the mixture into the pie crust.
  • Bake in the preheated oven for 12 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C), and continue baking until the filling is set, about 30 minutes. Remove from oven.
  • Raise oven temperature to 400 degrees F (200 degrees C).
  • Whisk together the 1/3 cup flour, 1/3 cup sugar, and cinnamon in a small bowl. Mix in the butter with a fork until mixture resembles coarse crumbs. Sprinkle the crumb topping evenly over the pie.
  • Return the pie to the preheated oven and bake until topping is golden, about 10 minutes. Let pie cool slightly before slicing.

1/2 teaspoon salt
1/2 cup cold butter, cubed
FILLING:
4 cups unsweetened sliced peaches (about 6 medium)
1 cup sugar, divided
2 tablespoons all-purpose flour
1 egg
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup sour cream
TOPPING:
1/3 cup sugar
1/3 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup cold butter, cubed

Steps:

  • In a small bowl, combine flour and salt; cut in butter until crumbly. Press into a 9-in. pie plate. , For filling, place peaches in a large bowl; sprinkle with 1/4 cup sugar and toss gently to coat. In another small bowl, combine the flour, egg, vanilla, salt and remaining sugar; fold in sour cream. Stir into peaches. , Pour into crust. Bake at 400° for 15 minutes. Reduce heat to 350°; bake for 20 minutes. , Meanwhile, prepare topping. In a small bowl, combine the sugar, flour and cinnamon. Cut in butter until crumbly. Sprinkle topping over top of pie. Bake at 450° for 15 minutes or until topping is browned. Cool on a wire rack. Store in the refrigerator.

I personally don't like pie crust. I want the fruit, not the crust (and fat and calories). This has less fat but still gives you the satisfaction of a crust. I also eyeball filling ingredients so they are guesstimates.

8 cups peaches, peeled and sliced
1/2 cup sugar (white or brown, both work)
3 tablespoons cornstarch
2 teaspoons cinnamon (or to taste)
1 pinch nutmeg
1/4 cup butter
1/3 cup all-purpose flour
1/3 cup oat bran
1/4 cup additional oat bran

Steps:

  • Preheat oven to 400°F.
  • To make filling: Mix the sugar and the cornstarch and spices, add to the peaches and coat well. Place in baking dish. A 9-incj Pyrex pie dish works for me.
  • To make strudel: Melt butter in a large bowl. Add sugar, flour, and 1/3 cup oat bran. Mix well until combined and crumbly. (you may want to taste test :) it's yummy.).
  • Sprinkle 1/4 cup plain oat bran on top of peaches, then the strudel.
  • Bake at 400°F for 20 min, then reduce to 350 and bake until it's done (the outside will be bubbly and the center will be crusty and golden brown).
