These are great homemade onion rings that are batter fried rather than having a bread crumb coating. They are addictive...be careful :)

1 cup flour
1/2 teaspoon salt
6 large onions, peeled and sliced 1/4 inch thick
1/2 cup milk
1 teaspoon sugar
1 egg, well beaten
1 tablespoon melted shortening
vegetable oil (for frying)

Steps:

  • Cover onion slices with cold water and let stand 30 minutes.
  • Remove to paper towels and press to dry.
  • Separate into rings.
  • Combine flour, sugar and salt.
  • Combine milk and egg in a medium bowl and add dry ingredients and melted shortening; mix thoroughly.
  • Dip onion rings in batter and fry in deep fryer or skillet filled with a couple of inches of oil until golden brown on both sides.
  • Remove and drain on paper towels.
  • Serve immediately.

1 tablespoon olive oil
1/3 cup balsamic vinegar
2 cups ketchup
1 1/2 tablespoons packed dark brown sugar
1 teaspoon dry mustard
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
1/8 teaspoon cayenne pepper (optional
)1/4 teaspoon salt
1 1/4 cups all-purpose flour
1 1/4 cups club soda
1/2 teaspoon salt plus more for sprinkling
1 (1 1/4-pound) jumbo sweet onion such as Vidalia
1 to 1 1/2 quarts vegetable oil

Steps:

  • Cook garlic in oil in a 2- to 3-quart heavy saucepan over medium heat, stirring, until golden, about 1 minute. Add vinegar and boil over medium heat until slightly thickened, about 2 minutes. Stir in ketchup, sugar, mustard, cloves, allspice, cayenne (if using), and salt and bring to a boil, then reduce heat and simmer, stirring occasionally, 5 minutes, until it's thick and well blended. Transfer to a bowl and let cool to room temperature. Heat oven to 200°F. Whisk together flour, club soda, and salt in a bowl until smooth. Trim both ends of onion and then peel it. Halve onion lengthwise, then cut lengthwise into 3/4-inch-wide wedges. Separate wedges into pieces. Heat 2 inches oil in a 4- to 5-quart heavy pot over medium heat until it registers 365°F on thermometer. Working in batches of about 8, toss onion wedges in batter until coated. Lift onion pieces out of batter one at a time, letting excess batter drip off, and carefully transfer to hot oil. Fry onion dippers, turning with a slotted spoon, until golden, about 2 minutes, then transfer with slotted spoon to paper towels to drain. (Return oil to 365°F between batches.) Sprinkle dippers with salt while still hot and keep warm on a rimmed baking sheet in oven until all onions have been fried.

I have tried so many different recipes for Onion Rings and many were very good. However, I was looking for a real tasty, crispier Onion Ring and finally found this recipe posted by BlogChef. I made some modifications and this is my crispy, crunchy recipe.

2 cups canola oil, if required (for deep frying, or more)
1 large vidalia onions or 1 large regular onion, sliced into 1/4 inch slices and separated into individual rings
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon seasoning salt
1 large egg, lightly beaten
1 cup whole milk, homogenized
1 1/4 cups panko breadcrumbs (more if required)
1/2 teaspoon seasoning salt, for sprinkle

Steps:

  • In a deep 8 inch saucepan or a small deep fryer, add the oil and heat to 365°F.
  • Slice onions into 1/4 inch thick slices (across the onion) and separate into individual rings; set aside.
  • In a large bowl, sift together flour, baking powder and seasoning salt.
  • Dredge all the onion rings in the flour mixture until well coated; set aside.
  • In another bowl, whisk the egg and milk and add to the remaining flour mixture that was used for dredging the onion rings. Whisk, until a creamy batter is formed; not too thick. If too thick, add some milk to thin.
  • Place a wire rack on a sheet of aluminum foil to catch drippings.
  • Dip the flour coated onion rings in the batter to coat well.
  • Using a fork, remove and place the coated onion rings on the wire rack and let the excess batter drip off, about 1 minute.
  • In another mixing bowl, add the Panko bread crumbs.
  • Roll the onion rings in the bread crumbs until thoroughly coated and place on a baking sheet lined with parchment paper.
  • Deep fry the onion rings in batches of 4 to 6 for 1 minute, turn over and continue to deep fry for another 30 seconds to 1 minute or until golden in color. Do not overcook.
  • Remove to paper towels to drain and season with seasoning salt.
  • When serving, spinkle with Malt vinegar and some ketchup on the side for dipping.
  • You can use regular or seasoned bread crumbs if Panko is not available.

1 Vidalia onion, skin removed
2 eggs
1 cup milk
1 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons cayenne pepper
1/4 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon ground cumin
Peanut oil, for frying
Creamy dill dipping sauce, recipe follows
3/4 cup buttermilk
1/4 cup mayonnaise
1 tablespoon freshly chopped dill leaves
1/2 lemon, juiced
Salt and freshly ground black pepper

Steps:

  • Heat oil in a deep-fryer to 350 degrees F.
  • Whisk together the egg and the milk in a medium sized bowl.
  • In a separate bowl combine the flour, salt, peppers, oregano, thyme, and cumin.
  • Slice 1/2-an inch off the top of the onion and the bottom of the onion. Slice the onion in half, about 3/4-of the way down without slicing all the way through. Slice into quarters, then into 1/8s. Repeat this until you have cut the onion into 14 sections. Spread the "petals" of the onion apart and dip the onion in the milk mixture. Then coat it liberally with the dry ingredients. Separate the "petals" and sprinkle the dry coating between them.
  • Place the battered onion in the hot oil and fry until golden brown, about 10 minutes. Remove to a paper towel lined sheet tray and season with salt and pepper.
  • In a small bowl, combine ingredients and whisk together. Season with salt and pepper, to taste. Serve with Fried Vidalia Onion.

1 cup instant flour
1 cup all-purpose flour
1/2 teaspoon cayenne pepper
1/4 teaspoon paprika

2 cups buttermilk
4 Vidalia onions (or other sweet onion, such as Maui), cut into 1/4-inch thick slices and separated into rings
Fire roasted red pepper ketchup, recipe follows
1 large onion, cut into small dice
3 garlic cloves, minced
3 tablespoons olive oil
2 1/2 pounds red peppers, roasted, peeled, seeded, and roughly chopped
2 cups vegetable stock
1/2 teaspoon dry mustard powder
1/2 teaspoon ground allspice
1/2 teaspoon ground mace
1 tablespoon minced hot red chiles
3/4 cup red wine vinegar
1/2 cup dry red wine
1/2 teaspoon freshly ground black pepper

Steps:

  • In a 3-quart pot, preheat 4-inches oil to 375 degrees F.
  • In a shallow bowl, combine flours, cayenne, paprika, salt, and white pepper. Pour the buttermilk into another shallow dish.
  • Toss the onion rings in the flour mixture and shake off excess flour. Add to buttermilk mixture and make sure the rings are thoroughly coated. With a clean hand, add rings to flour mix again and shake off any excess flour.
  • Begin to fry in preheated oil in small batches, 1/4 of total amount at a time. Cook onion rings for about 3 to 5 minutes, turning occasionally with metal tongs or slotted spoon, until crispy and browned. Drain on paper towels and keep in warm place (low oven, about 200 degrees F) until ready to serve. Sprinkle with extra salt, if needed.
  • In a heavy-bottomed saucepan, sweat onions and garlic in olive oil until translucent. Add peppers and vegetable stock and stew until 1/2 of stock has evaporated. Add spices and chiles. Cover with vinegar and wine. Allow to cook, uncovered, until most of the liquid has evaporated. Let cool, then puree in a food processor, and season with pepper and salt, to taste.
  • Yield: 3 cups Preparation Time: 30 minutes Cooking Time: 1 hour

2 cups all-purpose flour
2 teaspoons smoked paprika
4 teaspoons kosher salt
2 cups buttermilk
4 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

Steps:

  • Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
  • In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
  • In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
  • Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
  • Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

FRENCH FRIED ONIONS

A homemade alternative to the Durkee® brand. I use these for casserole recipes. I will never buy store-bought French fried onions again. This recipe makes a lot! I often just use one onion and about 1/2 cup of milk and 1 cup of flour with seasonings if I just want to use them for one dish. Warning: You may have to make what the original recipe calls for because they are so yummy and you won't be able to stop eating them!

1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste

  • Soak onions in milk for 5 minutes.
  • Combine flour, garlic powder, onion powder, white pepper, and salt. Add a handful of onions and toss to coat. Remove and repeat with remaining onions, one handful at a time.
