FRIED MUSHROOMS RECIPE
Steps:
- Combine flour and seasoned salt in large bowl or zip-top bag.
- Pour mushrooms into flour/salt mixture and stir or shake to coat.
- Heat oil in the pan over medium heat if pan frying. If deep frying, heat oil to 375.
- When oil is heated through (to test if oil is ready, sprinkle a pinch of flour in oil. If sizzles, it's ready.)
- Place mushrooms in oil, and fry for 2-3 minutes, (flipping if necessary) until they turn to a golden brown.
- If deep frying, fry for 2-3 minutes or until golden brown.
- Remove from oil and drain on a plate topped with paper towels to soak up excess oil.
- Serve warm!

- In mixing bowl, combine the flour, cheese, salt, and garlic powder. Stir in the water, melted shortening, and egg; beat till smooth. Pat the mushrooms dry. Dip mushrooms into the batter. Fry, a few mushrooms at a time, in shortening heated to 365°F. Fry until the mushrooms are golden, about 3 minutes, turning once. Drain on paper toweling. Salt lightly and serve immediately. To ensure nice, crispy, light mushrooms make sure the oil is at the proper temperature before dropping mushrooms in. Otherwise, they will soak up oil and be greasy and heavy. Let cool for at least 10 minutes, then serve with ranch dressing or whatever sauce you'd like.
FRIED MUSHROOMS
At my house, we don't like those fried mushrooms that are black and slimy where the breading slides easily off. This recipe is just a very crisp breading on a fresh mushroom. They'll 'pop' when you cut into them they are so fresh. Panko breadcrumbs are a polished bread crumb that you can find in an Asian market or the International section of your favorite food store and they make just a wonderful crunchier coating, too.

BEER-BATTERED CREMINI MUSHROOMS

- For the sauce: In a small bowl, whisk the mayonnaise, chives, lemon juice, mustard, thyme, cayenne, salt, pepper, garlic and lemon zest together to blend. (Sauce can be prepared 1 day ahead. Cover and refrigerate.)
- For the mushrooms: In a medium bowl, whisk together the flour, chives, thyme, salt and pepper. Pour the chilled beer into the flour mixture and whisk until the batter is smooth.
- Pour the oil into a heavy large wide saucepan. Attach a deep-fry thermometer to the side of the saucepan. Heat the oil over medium-high heat until the temperature registers between 330 and 350 degrees F. Working in batches, dip a few mushrooms at a time into the beer batter to coat generously, allowing any excess batter to drip back into the bowl. Drop the mushrooms, a few at a time, into the hot oil and fry until the batter is deep golden brown and the mushrooms are tender, adjusting the heat as needed to maintain the oil temperature between 330 and 360 degrees F, 3 1/2 to 4 1/2 minutes per batch. Using a slotted spoon, remove the mushrooms and drain on paper towels.
- Mound the mushrooms on a serving platter and place the dipping sauce alongside. Serve while the mushrooms are still hot.
DEEP FRIED MUSHROOMS
Button mushrooms are battered and fried in oil for an irresistible snack. These are great for watching sports.

I love fried mushrooms! I learned how to make these from a chef at a 5-star restaurant about a year ago. You can also use the batter to make fried onion rings. YUM!

- Pour about 3 inches (more if needed to cover the mushrooms) of oil into a large pot.
- Heat until it reaches about 375 degrees Farenhieght.
- Meanwhile Mix beer, flour, garlic powder, salt, pepper and parsley flakes in a large bowl.
- Mix until smooth and well blended without any lumps.
- Dip mushrooms into batter and coat well.
- Fry mushrooms in batches in oil until crispy and brown.
- Time will vary depending on temperature of oil and the amount of mushrooms being fried.
- I usually do about 10 mushrooms at a time and it takes about 8 minutes.
- When done, remove mushrooms to a plate or bowl lined with paper towels to drain off excess oil.
- Place in a shallow bowl sprinkle with salt and toss to coat evenly.
- Serve with favorite dipping sauce!

GLUTEN-FREE FRIED MUSHROOMS
My other half loves fried mushrooms, but can't eat regular flour based breading. So after looking at several different recipes I modified luvmybge's recipe, which can be found here: http://www.food.com/recipe/fried-mushrooms-105573. It was a trial and error cooking experience. The hazelnut complemented the mushrooms really well. Adding garlic salt enhanced the flavor of both. You can skip the garlic salt, but it tastes so much better with it. If you want a serious taste explosion, try them wrapped in fresh spinach leaves.

- Used kebab sticks to dip the whole mushrooms in the batter and then used a fork to dip and strain the quartered mushrooms. (luvmybge uses toothpicks.).
- After dipping into batter roll in hazelnut meal/flour that has been mixed with garlic salt to coat. (Garlic salt is to taste so fry one first to make sure you have the right amount before frying the others.).
- Fry in coconut oil until hazelnut meal/flour hardens. (Don't use coconut oil in a deep fryer as a fire could start.).

DEEP FRIED MUSHROOMS

- Wash the mushrooms and remove most of the stem.
- Pat mushrooms dry with a paper towel.
- Coat mushrooms with flour, lightly tap to remove excess flour.
- Dip in eggs.
- Coat with bread crumbs.
- Set on a rack for a few minutes, so batter sets/dries.
- Heat the oil in the deep fryer to 375 degrees. Pay close attention to grease while it heats. Cooking with oil at high heat levels can be dangerous!
- Deep fry mushrooms in batches for approximately 3- 4 minutes or until golden brown.
- Drain on paper towels and serve.
THE BEST ALL PURPOSE DEEP FRY BATTER
We dont deep-fry a lot but when we do..we do a WHACK of stuff. I've tried numerous recipes and this by far is the cheapest, tastiest and works with everything. Fish and onion rings are phenomenol. Spices are to your own taste and can be adjusted to whatever taste you want. Believe me...I've added everything from curry to southwestern tastes, this 'basic' recipe is just a guideline to the spices and taste you are looking for. ENJOY, it's awesome.

- Mix all dry ingredients, except the extra flour, whisk together.
- Add beer and only mix lightly.
- DO NOT over mix. If there are flour lumps just squish with the back of a spoon.
- You want the mix to be blended but not overmixed as it will not 'puff up' when deep-frying.
- For fish,shrimp, and 'meaty or wet' items I usually towel dry them and dredge them in the additional flour.
- Then dip and cover in mixture. Let the excess drip off and when putting any item in the deep fryer -- use tongs.and dip whatever you are deep frying in the oil for about 10 seconds, then release.
- This prevents the food from sticking to the bottom of the fryer. (Took us a while to learn that technique).
- When it comes to fish or something long or big -- I just put the first inch or 2 in and let it bubble for a few seconds so that I know it won't sink to the bottom and stick. (I truly hated that with deep frying).
