CAPTAIN D'S BATTER-DIPPED FISH
This is a clone that should be pretty close to the fish you get at Captain D's. I listed two optional ingredients because I ran across a recipe very similar except with a little spice added. Captains D's fish is basically a variation of Fish n Chips, so this probably something you can tweak and perfect by watching videos of fish n chips being prepared. Note: I have spoken to some and they've suggested that maybe Captain D's uses Cod. I've tried Cod and the meat just did not taste like the Captain D's in my area, so experiment with Cod, Pollock, Haddock, etc and see what works for you. Also, make sure your fish is dry. You don't want to try to make this with wet and water-logged fish. Pat it dry with a paper towel. I've known some to then rest the fish in the fridge or counter top to allow to fish to dry out some. Not using fresh fish can give you even more trouble.

- In another bowl beat together the egg, hot water and salt. (and peppers if used).
- Add the egg mixture to the beer.
- Slowly beat in the flour until batter is consistency of light pancake batter.
- Roll or dust fish with flour (I've seen some pat the fish after applying flour, similar to the motion of making a burger patty).
- Drop fish into batter and cover thoroughly.
- Fry in hot oil.
- Drain on baking rack or broiling pan.

LONG JOHN SILVER'S FISH BATTER

CRUNCHY BATTER FRIED FISH (NO BEER)
I had great reviews with my other fish recipe recipe #104409. But I'm always striving to improve. I did some experimenting, and this fish batter is great! Serve it with recipe #104661, fries and coleslaw. Or make it into a fish sandwich with tartar sauce and lettuce on a bun. Either way, it's delish!

- Mix together 1 cup flour, 1/4 cup cornstarch, baking powder and salt in a bowl.
- Stir in enough club soda to make a batter about the consistency of thin pancake batter. You don't want it too thick, just thick enough to nicely coat a spoon.
- Season the batter to taste if desired with seasoning of your choice. I suggest Old Bay, Lemon Pepper seasoning, or seasoned salt. set aside.
- In another bowl, mix together remaining 1/4 cup flour and 1/4 cup cornstarch.
- Heat oil in a deep pan to 375°F Use a candy thermometer if you need to. Oil in pan should be about 3" to 4" deep.
- Cut fish into portion sizes and remove any pin bones, and pat dry.
- Dredge the fish in the dry flour/cornstarch mixture. Shake off any excess.This allows the batter to stick to the fish.
- Dip dredged fish into batter allowing any excess to drip off before carefully adding the fish to the hot oil.
- Cook the fish one or two pieces at a time until golden brown.
- Drain on paper towels or better yet, on a cake cooling rack set up over paper towels.
- Serve while hot.

Steps:
- Scramble the egg in a large bowl then whisk in the buttermilk follow by the rest of the ingredients, except fish.
- Heat 2-3 inches of oil in a large frying pan until hot. Dip the nuggets into the batter so they are coated then gently drop into the hot oil. Fry for 5-7 minutes, until golden brown & crispy.
- Repeat until all the fish is fried. Place the fried fish onto a paper towel lined plate to drain excess oil.

- Preheat the oil to 350 degrees in either a deep fryer or a medium sized saucepan. In a medium bowl, mix together the flour, cornstarch, baking powder, salt, and cayenne pepper. Whisk in the water. The batter will get a little foamy, continue to mix. Pat the fish dry with a paper towel to remove excess moisture. Coat the fish in the batter, working to fully coat each fillet. Deep-fry the fish for 3 to 4 minutes. You want to cook the fish until it is golden brown. If you fry multiple pieces at once you may want to separate the pieces when cooking. - In a separate bowl, mix flour, salt, and garlic powder. Dip each fish portion into buttermilk then roll in flour until evenly covered, set aside on plate.

BEER BATTERED COD
Steps:
- Preheat oil in a deep-fryer or a Dutch oven to about 360 to 375 degrees F.
- Add the first 5 ingredients in a bowl and mix until combined. Dip cod into the batter and allow any excess batter to drip off prior to adding to the preheated oil. Fry the fish until browned on both sides. Once browned, remove to a paper-towel lined plate and season with salt, to taste.

- Whisk together a 1:1:1.5 ratio of egg to ice water to all-purpose flour, or 1 egg, 1 cup of ice water and 1 1/2 cups of all-purpose flour, just until it forms a batter.
- Take the fish out of the refrigerator just before the 15 to 20 minutes is up. Pat the fish dry with paper towels and season it to taste.
- Take the batter out of the freezer and give it a stir. Set up a rimmed baking sheet with a wire baking rack on top of it beside the batter.
- Dip each fish fillet in the batter one at a time and coat heavily with the batter. Lift the fillet out of the batter and place it on the wire rack.
- Place the pan of battered fillets in the freezer, uncovered. Let the fillets freeze, about 45 minutes.
- Set the oven to 425 degrees Fahrenheit. Pour about 1/4 inch of oil in the bottom of a shallow baking dish or a rimmed baking sheet.
- Place the oiled pan on the middle rack and let it heat up with the oven. Take the fillets out of the freezer after 45 minutes.
- Open the oven and slide out the rack with the dish on it. Lay the fillets in the dish, spacing each about 1 inch apart, and pour a drizzle of oil or melted butter on top of each.
