This recipe has been submitted for play in ZWT8 - India. This recipe was found on Indian Food Forever . Now this sounds good. I often am left wondering what I'm going to do with all the basil growing in the garden. What a great use for it. Please note: Cooking time is for steeping of the tea.

1/2 cup basil leaves (Tulsi Leaves)
2 1/4 cups water
2 teaspoons tea leaves (Chai Patti, or 2 Tea Bags)
sugar (your preference, Cheeni)
milk (your preference, Doodh)

Steps:

  • In a small pan bring water and basil leaves to boil.
  • Lower the heat and allow to brew for 3-4 minutes.
  • Now add the tea leaves or tea bags and sugar to your taste and bring to a boil.
  • Turn off the heat and strain the tea into cups and add milk as per your taste.

1 cup fresh basil leaf
4 1/4 cups water
4 teaspoons loose orange pekoe tea
1 inch piece fresh ginger, peeled and cut in half
3 tablespoons honey (to taste)

Steps:

  • Combine the basil leaves and water in a saucepan. Bring to a boil and simmer very gently for 5 minutes.
  • Add the tea, ginger, honey, and peppercorns and bring back to a boil.
  • Remove from the heat and steep, covered, for 5 more minutes.
  • Just before serving, return to a boil and strain into tea cups.

2 cups water
3 tablespoons thinly sliced fresh basil leaves
1 tablespoon grated lemon zest
2 teaspoons English breakfast or other black tea leaves

Steps:

  • In a small saucepan, bring water to a boil. Remove from the heat. Add the basil, lemon zest and tea leaves; cover and steep for 4 minutes. Strain, discarding basil, zest and tea leaves. Serve immediately.

Make a crowd-pleasing pasta dish for dinner. We've taken inspiration from creamy alfredo sauce with Cajun-style seasoning to add a bit of punch.

1 tbsp olive oil
400g chicken breasts, chopped into large chunks
3 garlic cloves, finely chopped or grated
2 tbsp Cajun-style seasoning
400g can chopped tomatoes or passata
1 chicken stock cube, crumbled
500g penne or another tube- shaped pasta
150ml double cream
20g parmesan, finely grated, plus extra to serve
½ lemon, juiced
chopped parsley, to serve (optional)

Steps:

  • Heat the olive oil in a large, shallow saucepan or deep frying pan over a medium heat, then add the chicken, season lightly and fry for 6-8 mins, stirring occasionally until just golden all over - no need to worry about it being cooked through at this stage.
  • Stir in the garlic and cook for 2 mins more, then scatter over the Cajun-style seasoning and stir so the chicken pieces are evenly coated. Tip in the tomatoes, a quarter of a can of water and the stock cube. Stir, then bring to a simmer and cook for 5 mins.
  • Meanwhile, bring a large pan of salted water to the boil and cook the pasta for a minute less than pack instructions. Stir the cream into the chicken and continue to simmer gently. When the pasta is cooked, drain well and stir into chicken mixture. Finish cooking the pasta in the sauce over a low heat for 2 mins, then stir in the parmesan and lemon juice, and cook for 1 min more. Serve the pasta straight from the pan, or tip into a large serving bowl. Scatter with parsley, if you like, and extra parmesan.
