1-1/2 teaspoons chicken bouillon granules
3 tablespoons butter
3 tablespoons dry red wine or beef broth
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil
Dash garlic salt

Steps:

  • In a large saucepan, combine the water, potatoes and bouillon. Bring to a boil. Reduce heat; cover and cook for 7-10 minutes or until tender. Drain. Stir in the remaining ingredients.

Steps:

  • Place the potatoes in a large saucepan and cover with cold water by an inch. Bring to a boil. Cook until the potatoes are tender, but not falling apart, 15 to 20 minutes. Drain.
  • Transfer the potatoes to a bowl and toss with the olive oil, sea salt, mint and basil.
  • Serve warm or at room temperature.

Number Of Ingredients 6

2 lb. medium or large red potatoes (about 5 medium), scrubbed and cut into large chunks, 1-1/2 to 2 inches
Kosher salt and freshly ground black pepper
1/4 cup olive oil
2 cloves garlic, minced
1/4 cup finely chopped fresh basil leaves
3/4 cup freshly grated Parmigiano Reggiano

Steps:

  • Put the potatoes and 1 tsp. salt in a large saucepan or pot and fill with enough cold water to cover the potatoes by about 1 inch. Bring to a boil over high heat. Lower the heat to maintain a steady simmer, cover the pot partially, and cook until the potatoes are quite tender when tested with a fork, 15 to 20 minutes. Reserve some of the cooking water and then drain the potatoes. Dump them back in the pot and set over medium heat. Dry the potatoes by shaking the pan and stirring until most of the moisture has steamed off, about 2 minutes. Remove the pan from the heat. Using the side of a large metal spoon, cut through the skins and flesh of the potatoes, reducing the chunks to a very coarse mash. Stir in the olive oil and garlic. Add up to a couple of tablespoons of the cooking water to loosen the mash if necessary. Stir in the basil and cheese. Season to taste with salt and pepper and serve immediately.

Steps:

  • Place potatoes in a medium saucepan; add enough cold water to cover by 2 inches. Season with salt. Bring water to a boil over medium-high heat; cook until potatoes are fork-tender, about 25 minutes.

3-4 tablespoons extra virgin olive oil, divided
Salt and pepper
1 clove garlic, sliced
Zest of one lemon
1 bunch basil, sliced chiffonade or chopped
Sea salt to finish

Steps:

  • Pre-heat the oven to 425F
  • Toss the potatoes in 2 tablespoons extra virgin olive oil and then season with some salt and pepper. Place the potatoes in a single layer on a lined baking sheet and place them in the oven.
  • Roast the potatoes for 25-30 minutes or until toasty brown on the outside and soft on the inside.
  • When the potatoes are done remove them from the oven and let them cool for five minutes.
  • While the potatoes are cooling, warm 2 tablespoons olive oil in a saute pan over low heat and then add the sliced garlic. When the garlic becomes fragrant, about 3-5 minutes, remove the garlic from the oil.
  • Transfer the potatoes to a bowl and toss with the garlic oil, lemon zest and basil chiffonade. Season to taste with sea salt and then transfer to a serving bowl or platter. Serve warm.

Steps:

  • Put the potatoes in a medium saucepan and pour in enough cold water to cover them by a couple of inches. Toss in a handful of salt. Bring the water to a boil and cook until the potatoes are tender when poked with a knife, about 25 minutes.
  • Drain the potatoes and return to the pan. Add the cream and butter and let the whole pot sit over very low heat until warmed through.
  • Add chives and basil to the pot with the potatoes and mash the potatoes coarsely. Season with salt and pepper.
