- In a food processor, blend the spinach, basil and garlic. Gradually mix in the olive oil and Parmesan cheese. Process until smooth. Salt and pepper to taste.
- Blend cream cheese and feta cheese in a medium bowl.
- Line a separate medium bowl with plastic wrap. Spread 1/2 the cream cheese mixture in the bowl. Top with sun-dried tomato paste and the spinach mixture. Cover with remaining cream cheese mixture. Pat together, cover and chill in the refrigerator at least 1 hour before serving. Flip out of the plastic lined bowl onto a medium serving dish to serve.

- Remove basil leaves from the stems. Shock the leaves in a bowl of ice water and remove immediately to paper towels to dry. (May also use a salad spinner to remove water.)
- Place walnuts and garlic cloves in a food processor and pulse until chopped. Add basil leaves and pulse until chopped to desired consistency.
- Pour olive oil into the food processor chute while on low to combine with the basil mixture. Add more olive oil if you desire.
- Remove to a bowl and add salt, lemon zest, and Parmesan cheese. Stir until combined.
- Serve immediately on toasted baguette. May store pesto in refrigerator for 2-3 days in a sealed jar. To save for later, cover pesto with a layer of olive oil and refrigerate.

This addictive dip is from the July '09 Cooking Light issue. I served this for dipping with pita chips and also with bread cubes. It makes a WONDERFUL sandwich spread - we put it on a turkey sandwich. The original recipe didn't call for the olive oil; I decided to add it since it only adds about 1 fat gram per 2 tablespoon serving. So you can certainly leave it out if you're watching fat grams.

- Line a 3-cup bowl with plastic wrap, leaving a 4-inch overhang.
- Combine spinach, basil, and garlic in a food processor and chop finely. Add Parmesan cheese and process until almost smooth. Keep processor running while pouring in oil; process until a smooth paste forms. Season with salt and pepper.
- Mix cream cheese and goat cheese together in a bowl.
- Spread 1/3 of the cheese mixture in the bottom of the prepared bowl. Spread 1/2 of the spinach mixture on top. Top with 1/2 of the walnuts. Add 1/2 of the sun-dried tomatoes. Repeat with remaining cheese mixture, spinach mixture, walnuts, and tomatoes, ending with cheese mixture. Fold plastic overhang on top and gently push down to compress layers.
- Refrigerate for 8 hours, or up to 3 days. Unfold plastic top and invert bowl onto a serving plate. Let stand at room temperature for 30 minutes before serving.

BASIL SPREAD FOR SANDWICHES
This basil spread is great on sandwiches instead of using plain mayo. The Wholefoods market I go to uses it on some of their sandwiches but I have not made it myself. The recipe comes from their "American Summer Style" recipe booklet. In the booklet it is used on their grilled veggie sandwich but I have had it on their salmon sandwich among many others and it is very good.
