I'm usually a fan of ice cold water, but this basil mint lemonade is the most refreshing drink I've ever had. Forget all other summer drinks and make this.

2 Cups Lemon Juice (Fresh, 12-15 lemons)
2 Cups Water
2 Cups Simple Syrup (Herbed, recipe follows)
Ice
2 Cups Sugar
1 Cup Water
1/2 Cup Basil (washed and stemmed (do not stuff them into the cup or it will be too strong))
1/2 Cup Mint (washed and stemmed)

Steps:

  • Place sugar, water, basil and mint in a pot and simmer for 5 minutes or until the sugar is dissolved.
  • Set aside to cool.
  • Strain out the herbs pressing on them to remove all simple syrup.
  • Pour water, lemon juice, and simple syrup in a pitcher, stir and pour over ice in glasses.

1 (12 ounce) can frozen lemonade concentrate, thawed
1 fresh lemon
1 ¼ cups white sugar
½ cup fresh mint leaves

Steps:

  • Pour the lemonade concentrate into a large pitcher or cooler with a spout. Stir in enough water to make 1 gallon. Grate the zest from the lemon and add to the pitcher, then squeeze the lemon juice from the lemon into the pitcher. In a small bowl, crush the mint leaves into the sugar using a muddler or a wooden spoon. Stir into the lemonade. Cover and chill for several hours, then strain to remove the leaves and zest before serving. Serve over ice and garnish with a sprig of mint.

1 cup sugar
3 sprigs fresh basil, plus basil leaves, for garnish
1 1/2 cups fresh lime juice (from about 12 limes)
One 6-ounce container blueberries
Gin, for serving, optional

Steps:

  • Place the sugar, basil sprigs and 1 cup of water into a small saucepan over medium-high heat. Cook, stirring every so often, until the sugar has dissolved, about 5 minutes. Remove from the heat and let steep for 30 minutes.
  • Discard the basil and pour the syrup into a pitcher. Stir in the lime juice and 4 cups of cold water. Add the blueberries and chill for at least 4 hours or until ready to serve.
  • To serve, put some ice in a glass, pour over the limeade and garnish with basil leaves. To make into a cocktail, add ice to a rocks glass and top with 1 1/2 ounces gin. Top off with the limeade and garnish with basil.

1 cup fresh squeezed lemon juice

  • In a small saucepan, combine 2 cups water, the basil leaves, and sugar; bring to a gentle boil over medium heat, stirring until sugar is dissolved.
  • Decrease heat to medium-low, cover, and simmer for 5 minutes.
  • Remove from heat and let cool for 30 minutes.
  • Strain through a fine-mesh strainer into a 1 ½ quart container.
  • Add in the lemon juice, remaining 1½ cups water, and lime juice; stir until blended.

1/2 cup rinsed lightly packed fresh basil leaf
3 tablespoons sugar
4 cups water
1/2 cup freshly squeezed lemon juice
1 sprig fresh basil

Steps:

  • In a 1 1/2 to 2 Qt glass bowl, combine basil leaves and sugar.
  • With a wooden spoon, crush leaves with sugar until thoroughly bruised;
  • add water and lemon juice,
  • Stir until sugar is dissolved, about 2 minutes;
  • Taste and add more sugar if desired.
  • Pour through a strainer into ice-filled glasses.
  • Garnish with sprigs of fresh basil.
  • *Note:The type of basil you use will contribute to the'personality' of this drink.
  • Dark purple basil tints the lemonade pink and has a milder flavor than green varieties.
  • Lemon basil adds a lemon-drop essence.

  • Muddle the basil and mint leaves using a mortar and pestle. Alternatively, muddle the herbs in a small bowl using a muddler or the back of a wooden spoon.
  • Combine the honey and half a cup of water in a small pot on the stove until the liquid just barely comes to a boil, stirring occasionally to dissolve the honey. Remove from heat.
  • Pour the honey simple syrup over the muddled herbs and then allow to steep and cool at room temperature, 30 minutes and up to several hours (the longer it steeps, the more flavor it will impart).
