4 stalks lemongrass
½ cup fresh basil
2 ½ shallots, divided
1 ginger, roughly chopped - 1 inches (2.54 cm)
3 cloves garlic
2 teaspoons brown sugar
½ teaspoon turmeric
½ teaspoon ground coriander
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon red pepper flakes
2 cans reduced-fat coconut milk
1 tablespoon coconut oil
4 cups cooked rice
1 lb shrimp, optional, shrimp, chicken
bell pepper
green onion
broccoli

Steps:

  • Add chopped lemongrass, basil, 1 shallot, garlic, ginger, ground coriander, cumin, turmeric, salt, pepper, red pepper flakes, and brown sugar to a food processor. Blend until a paste forms. (If difficult to combine, add 1 tbsp water to the mix and blend again).
  • Dice the remaining shallots and set aside.
  • Over medium heat, melt coconut oil in a large pan (big enough to hold 2 cans of coconut milk). Once the oil is hot and melted, add the basil lemongrass curry paste in. Let the curry paste bloom for 1 minute. Then add in the remaining chopped shallots and sauté until softened (2 minutes, approximately).
  • Pour in both cans of coconut milk and stir until combined. Cover and let curry reduce over medium heat for 20 minutes. Stir every so often. Season with salt and pepper.
  • While the curry simmers, prepare the meat and vegetables you will be using as desired.
  • Once the coconut curry has reduced and become thicker, begin assembling your dish. Pour the curry over a bed of rice, and top with any proteins and vegetables.
  • Serve and enjoy!

1 teaspoon canola oil
1.5 tablespoon chopped lemongrass
1 (13.5-oz.) can unsweetened coconut milk
1.5 cups chicken broth
0.25 cup green curry paste
2 tablespoons fresh lime juice (from 1 large lime)
3 ounces uncooked thin rice noodles, cooked according to package directions
1 Fresno chile or jalapeño, seeded and thinly sliced
0.5 cup packed fresh basil leaves
0.5 cup thinly sliced red onion

Steps:

  • Heat canola oil in a medium saucepan over medium-low. Add lemongrass, and cook, whisking often, until fragrant, about 2 minutes. Whisk in coconut milk, chicken broth, curry paste, and lime juice. Bring to a boil over medium-high, and cover. Reduce heat to medium-low, and simmer 10 minutes.
  • Divide noodles evenly among 4 bowls. Ladle curry broth over noodles, and top with chili slices, basil, and red onion.

1/2 Tsp Salt

1 Tsp Red Pepper Flakes
2 (13oz) Cans Reduced Fat Coconut Milk
1 Tbs Coconut Oil
4-5 Cups Cooked Rice
1 Lb Shrimp, Chicken, Tofu (optional)
Bell Pepper
Green Onion
Broccoli
Snap Peas

Steps:

  • Add chopped lemongrass, basil, 1 shallot, garlic, ginger, ground coriander, cumin, turmeric, salt, pepper, red pepper flakes, and brown sugar to a food processor. Blend until a paste forms. You will need to continuously scrap down the sides of the bowl. Add 1 Tbs of water if needed to help everything combine together.
  • Dice the remaining shallots and set aside.
  • Over Medium heat, melt the coconut oil in a large pan (big enough to hold 2 cans of coconut milk). Once the oil is hot and melted, add the basil lemongrass curry paste in. Let the curry paste bloom for 1 minute. Then add in the remaining chopped shallots and sauté until softened. Roughly 2 minutes. I do this because I like to give my curries some texture, but if you prefer it to be smoother you can omit the shallot.
  • Pour in both cans of coconut milk and stir until combined. Cover and let curry reduce over medium heat for 20 minutes. Stir every so often and taste to see how much salt and red pepper flakes need to be added.
  • While the curry simmers, prepare any and all of the proteins and vegetables you will be adding. I added shrimp, bell peppers, green onion, and sprouts.
  • Once the coconut curry has reduced and become thicker, begin assembling your dish. Pour the curry over a bed of rice, and top with any proteins and vegetables. Serve and enjoy!

2 tablespoons peanut oil
1 stalk lemongrass, crushed
3 tablespoons Thai red curry paste
1/2 cup white wine
1 can unsweetened coconut milk
2 tablespoons fish sauce (nam pla)

2 1/2 pounds mussels, debearded and scrubbed
2 tablespoons chopped fresh cilantro stems, plus 2 tablespoons chopped fresh cilantro leaves

Steps:

  • Heat grill to high. Heat the oil in a heavy Dutch oven on the grates of the grill until shimmering. Add the lemongrass, curry paste, wine, coconut milk, fish sauce, and lime juice and bring to a simmer, whisking. Add the mussels, cover the pot, and let steam until opened. During the last minute of cooking, add the cilantro and basil. Serve from Dutch oven into individual bowls, discarding the lemongrass.

2 serrano chiles, 1 coarsely chopped, 1 thinly sliced
1 (3-inch) piece ginger, peeled, thinly sliced
2 lemongrass stalks, bottom third only, tough outer layers removed, thinly sliced
2 garlic cloves, smashed
1 tablespoon fish sauce
1 tablespoon light brown sugar
1 (5.4-ounce) can coconut cream
3 cups cilantro leaves with tender stems
3 cups basil leaves, plus more for serving
2 tablespoons virgin coconut oil or vegetable oil
36 littleneck clams (about 4 pounds), scrubbed
8 ounces rice stick noodles
1/2 lime
Kosher salt

Steps:

  • Purée chopped chile, ginger, lemongrass, garlic, fish sauce, brown sugar, and 3 cups water in a blender until smooth. Transfer curry to a small bowl. Reserve blender (no need to clean).
  • Purée coconut cream, cilantro, 3 cups basil, and 1/4 cup ice water in blender until very smooth; set herb purée aside.
  • Heat oil in a large saucepan or small pot over medium-high. Add clams, cover, and cook until clams open, 5-7 minutes. Uncover and transfer opened clams to a medium bowl, reserving cooking liquid in saucepan. If any clams are still closed, cover and cook a few minutes longer, then add to bowl with others; discard any clams that refuse to open.
  • Add curry base to saucepan and bring to a boil. Reduce heat and simmer 10 minutes to let flavors meld.
  • Meanwhile, cook noodles according to package directions. Drain and rinse under cold water. Divide among bowls.
  • Using a slotted spoon, transfer clams to noodle bowls. Pour any accumulated clam-cooking liquid into curry mixture and stir in herb purée; bring to a boil. Immediately remove from heat and squeeze in juice from lime. Taste and season with salt if needed. Ladle curry over clams and noodles. Top with sliced chile and basil leaves.

Steps:

  • Heat oil in a medium pot over medium heat. Add shallots and garlic and cook, stirring, until shallots are softened, 3 to 5 minutes. Stir in stock, coconut milk, lemongrass, jalapeño, vinegar, fish sauce, sugar, salt and lime zest. Simmer for 10 minutes.
  • Stir in seafood and herbs. Cook 2 to 3 minutes. Stir in lime juice and serve, with rice if desired. (Note: Without rice it's more soup than stew.)
