BASIL LEMONADE
Simple Basil Lemonade. The herb gives the lemonade a pleasant aftertaste without being overwhelming.

Steps:
- In a medium pot, stir together 1 cup water and 1 3/4 cups sugar. Bring to a boil over high heat. Boil until the sugar is completely dissolved, it shouldn't take more than a minute or two. Turn off the heat.
- Meanwhile, in a heat-proof bowl, add the 1/4 cup packed basil. Use your hands to tear up the pieces. Use a wooden spoon to bruise the leaves against the bowl. Keep going until they are nice and dark. You want to get all that flavor.
- Pour the sugar syrup over the basil leaves. Put it in the fridge for about 2-3 hours or until completely chilled. The longer it sits the more basilicious it will be.
- Juice the lemons. Strain it through a colander to remove the seeds, but so that most of the pulp remains.
- Add the lemon juice, 7 cups of water, and ice to a pitcher. Strain the refrigerated syrup through the colander into the pitcher. Discard basil. Stir well.
- Serve with ice, fresh basil, and lemon wedges.

FROZEN BASIL LEMONADE
Steps:
- To make the simple syrup, place the sugar and 1 cup water in a small saucepan set over medium heat. Bring to a simmer and cook until the sugar dissolves, 2 to 3 minutes, then cool.
- Pour the simple syrup in the pitcher of a blender with the ice, lemon juice and basil, and puree until smooth. Serve cold.
BASIL LEMONADE
I tweaked this recipe it to make a refreshing drink. I love basil and this recipe has a wonderful basil-infused flavor. Delicious on a warm day or with grilled chicken. Serve over ice and garnish with fresh basil and lemon slices.

In my quest to find recipes to take advantage of the bumper crop of basil I have right now, I came across this one found in the May 2003 issue of Sunset magazine. This is very refreshing! It's especially fun if you have lots of different varieties of basil available to you.

Steps:
- In a 1 1/2 to 2 Qt glass bowl, combine basil leaves and sugar.
- With a wooden spoon, crush leaves with sugar until thoroughly bruised;
- add water and lemon juice,
- Stir until sugar is dissolved, about 2 minutes;
- Taste and add more sugar if desired.
- Pour through a strainer into ice-filled glasses.
- Garnish with sprigs of fresh basil.
- *Note:The type of basil you use will contribute to the'personality' of this drink.
- Dark purple basil tints the lemonade pink and has a milder flavor than green varieties.
- Lemon basil adds a lemon-drop essence.

- Decrease heat to medium-low, cover, and simmer for 5 minutes.
- Remove from heat and let cool for 30 minutes.
- Strain through a fine-mesh strainer into a 1 ½ quart container.

- Combine in a stainless steel pot the water and sugar. Zest 4 of the lemons into the water and bring to a boil. Reduce to a simmer for 5 minutes. Turn off heat and strain the lemon zest out. Add to the ice to chill.
- While water is coming to a boil, squeeze the juice from all 8 lemons in a blender. Add in basil and watermelon. Puree until smooth.
- Once the lemon syrup is cold, combine with the basil-watermelon puree. Stir well and let sit in the cooler for 1 hour before drinking to allow time for the flavors to meld.
PURPLE BASIL LEMONADE
From Cooking Light Magazine's July 2009 edition: "In this recipe, basil is crushed with sugar to release the oils. If you don't have a mortar and pestle, process the basil, sugar and about 1/4 cup of water in a food processor or blender." I am eager to serve this at my next party. The recipe doesn't indicate this, but I would personally place the strained lemonade into a pitcher and refrigerate until ready to serve. When having a party, it's always best to prepare ahead if possible!
