PASTA WITH BASIL CREAM SAUCE
Creamy pasta is an easy dinner dream. Al dente pasta served with basil cream sauce is the perfect vegetarian meal and can be ready in 20 minutes.

Steps:
- Melt the butter in a pan then add the onion. Cook until soft and translucent.
- Add the garlic, basil and dried herbs (if using) and cook for another 30 seconds.
- Pour in the cream and allow to come to a simmer. Simmer for 5-7 minutes until the sauce covers the back of a spoon easily.
- Transfer sauce to a food processor or blender (or use an immersion blender) and blend until smooth.
- Pour the sauce back into the pan and add lemon juice, salt and pepper to taste. Bring to a simmer and add cooked pasta or serve over cooked chicken.

Steps:
- Cook pancetta or bacon in large skillet until crisp. Transfer to paper towels and drain, using slotted spoon.
- Add olive oil and garlic to drippings and saute 30 seconds.
- Add tomatoes, with juices, wine, and cream and bring to a slow boil.
- Add basil. Reduce heat and simmer until slightly reduced. Season to taste with salt and pepper.
- Toss with cooked pasta and serve topped with parmesan.

EASY BASIL FETTUCCINE ALFREDO
A quick and simple recipe for a classic alfredo sauce with a twist. This uses the traditional butter and parmesan recipe without added cream. The use of pasta water creates the smooth sauce texture. Excellent alongside grilled marinated chicken or shrimp.

Steps:
- 1. Using a food processor, finely chop the 1/2 cup of basil leaves until the consistency of pesto.
- 2. Cook pasta until al dente in salted water according to package directions.
- 3. While pasta is cooking, melt butter on medium-low heat in a large saucepan - do not allow to boil or the butter will separate.
- 4. When butter is melted, measure out 1/2 cup of water from the cooking pasta and add to the butter.
- 5. Gently stir in the grated parmesan until thoroughly melted.
- 6 Stir the basil from the food processor into the sauce.
- 7. Add additional pasta water as needed to obtain a smooth consistency.
- 8. Drain the pasta and immediately add to the sauce pan, gently tossing the pasta until coated.
- 9. Transfer pasta and sauce to a warm serving platter.
- 10. Top with the chopped basil leaves and serve immediately.

FETTUCCINI WITH SPICY TOMATO CREAM SAUCE
I got this one off the Internet several years ago. My husband and I love it! It tastes best with fresh fettuccini. To vary the heat, us more or less red pepper flakes. My husband hates chunks of tomatoes, so I puree the diced tomatoes. It changes the texture, but not in a bad way.

- Melt the butter in a large skillet over medium heat. Cook onion and pepper flakes 5 minutes until tender.
- Stir in tomatoes and salt. Cook over high heat until almost dry, 8-10 minutes.

- Meanwhile, cook fettuccini. Drain pasta and toss with sauce.

- Add onion and sauté until starting to brown.
- Add garlic and sun-dried tomatoes; sauté 3 more minutes.
