2 packages (1/4 ounce each) active dry yeast
2-1/2 cups warm water (110° to 115°)
1/2 cup nonfat dry milk powder
1/2 cup canola oil
2 tablespoons sugar
1 tablespoon salt
8-1/2 to 9 cups all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup of water. Add the remaining water, dry milk, oil, sugar, salt and 3 cups of flour. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch the dough down. Divide in half; shape into loaves. Place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 1 hour. , Bake at 375° for 35 minutes or until golden brown. Remove from pans to cool on wire racks. Brush with butter.

2 (.25 ounce) packages active dry yeast
3 tablespoons white sugar
2 ½ cups warm water (110 degrees F/45 degrees C)
3 tablespoons lard, softened
1 tablespoon salt
6 ½ cups bread flour

Steps:

  • In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

Steps:

  • Sprinkle the yeast into a bowl with half of a cup of water. Stir to dissolve and leave for five minutes. Mix the flour and salt together in another bowl. Make a well in the center of the dry ingredients and pour in the dissolved yeast.
  • Form a paste, Cover the bowl with a towel and let the paste sponge (frothy, loose and expanded) for 20 minutes.
  • Mix in the rest of the water until you get a firm, moist dough. Knead for about 10 minutes.
  • Put the dough in a clean bowl and cover with a dish towel. Let it rise for about 1 1/2 - 2 hours. Punch down then let it rest for 10 minutes.

I've tried to find this recipe on the web and can't find it. I use this for making bierocks. This is the KitchenAid basic white bread recipe.

1/2 cup milk
3 tablespoons sugar
2 teaspoons salt
3 tablespoons butter or 3 tablespoons margarine
2 (1/4 ounce) packages dry active yeast
1 1/2 cups warm water (105F to 115F)
5 -6 cups all-purpose flour

Steps:

  • Combine milk, sugar, salt, and butter in small saucepan. Heat over low heat until butter melts and sugar dissolves. Cool to lukewarm.
  • Dissolve yeast in warm water in warmed bowl. Add lukewarm milk mixture and 4 1/2 cups flour. Attach bowl and dough hook. Turn to speed 2 and mix 1 minute. Continuing on speed 2, add remaining flour, 1/2 cup at a time, until dough clings to hook and cleans side of bowl. Knead on speed 2 for 2 minutes longer, or until dough is smooth and elastic. Dough will be slightly sticky to the touch.
  • Place in a greased bowl, turning to grease top. Cover; let rise in warm place, free from draft, until doubled in bulk, about an hour.
  • Punch dough down and divide in half. Shape each half into a loaf and place in a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Cover; let rise in warm place, free from draft, until doubled in bulk, about 1 hour.
  • Bake at 400 degrees F for 30 minutes. Remove from pans immediately and cool on wire racks.
  • When using for bierocks, after dough rises first time, cut dough in 12 pieces. roll each piece into a circle. Fill with hamburger cabbage filling ( I use recipe #50809).
  • Spoon the filling in the middle of the circle then pinch the edges together and fold the ends in and place on greased baking sheet. Brush with egg wash and sprinkle with coarse ground pepper and salt. Bake at 350 degrees for 25 to 30 minutes. Cool on rack.

2 1/2 cups water, at a temperature between 105 and 115 F
2 (1/4 ounce) packages yeast
2 tablespoons sugar
2 teaspoons salt
2 tablespoons vegetable oil
6 1/2 cups flour

Steps:

  • Mix the water, yeast, and sugar together in a small bowl.
  • Add the salt to 5 1/2 cups of the flour in a large bowl.
  • Set the other cup of flour aside. Mix the liquid and the dry together and then add the oil.
  • Mix until it comes away from the sides of the bowl, sprinkle some of the last cup of flour on a wooden surface, and knead until the dough gets sticky again.
  • Keep adding more flour and keep kneading.
  • Push forward, fold over, push forward, fold over.
  • I do this one handed because I have to, but it works.
  • Put a little oil in the large bowl, that has been scraped clean, add the kneaded dough and roll it over a few times to coat. Cover, let stand for about one hour in a warm place. Punch down, cut the dough in half and roll it out to about a 9 inch by 18 inch rectangle. Roll it up, tuck in the ends and place in a very well lubricated ( I use crisco) glass baking dish.
  • Repeat with the other half, and then cover with a cloth and let it rise again for about 45 minutes.
  • Use a sharp knife to put a few slashes in the top, brush with a little beaten egg or milk, and put into a pre-heated 375 (f) oven for 30 minutes.
  • The bread is done when an instant read thermometer reads 190 (f).

Or make a whole variety of rolls, from basic round ones to more complex shapes: pretzel-type knots or, if you're feeling particularly inventive, small animals - snakes, mice, even hedgehogs!

2 teaspoons caster sugar (superfine)
2 cups warm water
2 1/2 teaspoons dried yeast or 3 1/2 ounces fresh yeast or .25 ounce fast-acting yeast
1 pound 10 ounces strong white flour (bread flour), plus extra for dusting
2 teaspoons salt
3 tablespoons butter or 4 tablespoons olive oil
1 egg, beaten, optional
Poppy or sesame seeds, for the top of the loaf, optional

Steps:

  • In a measuring cup, mix the sugar with a 1/2 cup of the warm water and yeast and let stand in a warm place for 5 minutes, or until frothy. If using fast-acting yeast, there is no need to let the mixture stand.
  • In a large bowl, sift together the flour and salt. Rub in the butter, and make a well in the center. If using olive oil instead of butter, pour the olive oil into the remaining 1 1/2 cups water. Pour in the yeast mixture and most of the remaining water (and the olive oil, if using). Mix to a loose dough, adding the remaining water if needed, plus extra if necessary.
  • Knead the mixture until the dough is smooth and springy to the touch, about 10 minutes. If kneading in an electric food mixer with a dough hook, 5 minutes is usually long enough.
  • Put the dough in a large oiled bowl. Cover the top tightly with plastic wrap, and place somewhere warm to rise, until it is doubled in size. This may take up to 2 or even (on a cold day) 3 hours.
  • Preheat the oven to 425 degrees F.
  • When the dough has more than doubled in size, punch down, and knead again for 2 to 3 minutes. Leave to relax for 10 minutes before you begin to shape the bread.
  • Shape the bread into loaves or rolls, and then transfer to a baking tray, and cover with a clean tea or dish towel. Allow to rise again in a warm place for 20 to 30 minutes, until the shaped dough has again doubled in size. When the dough has fully risen, it should leave a dent when you gently press the dough with your finger.
  • The bread is full of air at this point, and therefore very fragile, gently brush the loaf with egg wash and sprinkle with poppy or sesame seeds, if using, or dust lightly with flour for a rustic-looking loaf.
  • Bake in the oven for 30 to 45 minutes for a loaf, depending on its size, or 10 to 15 minutes for rolls, Turn the heat down to 400 degrees F, after 15 minutes for the remaining baking time. When baked, the bread should sound hollow when tapped on the base. Transfer the loaf to a wire rack to cool.

65 ml water
3 3/4 cups bread flour

  • Mix yeast, sugar, and water together in a cup. Let stand for 10 minutes. Mixture should become foamy.
  • Put all dry ingredients plus butter into a large bowl. Add the yeast mixture and stir well. Add the remaining water and stir until it becomes too difficult. Then, continue mixing using your bare hands. You want to form a ball of dough that is moist, not wet.
  • When the dough has reached the proper consistency, begin kneading. Stretch and fold the dough on a countertop that has been sprinkled with flour. Continue folding and stretching for 10 minutes. The dough should become smooth and elastic.
  • When the dough is properly kneaded, form it into a smooth ball and place the ball smooth side up into a lightly greased bowl. Cover the bowl with either a damp towel or a lightly greased piece of plastic wrap and allow to rise until doubled in size. (This could take anywhere from 30 minutes to 2 hours depending on the humidity and temperature.).
  • When dough has doubled in size, punch it in the middle to deflate it. Knead the dough again on a lightly floured, but only for 2 minutes. Form the dough into a loaf shape and place it smooth side up into a greased loaf pan. Allow to rise again until it has lifted a couple of inches. (You do not want it bulging over the side of the pan).
  • Bake at 425 degrees for 10 minutes, then reduce oven temperature to 350 and bake 20-40 minutes or until loaf is golden brown. (To check to see if the loaf is fully cooked, tip it out of the pan and thump it on the bottom. If it sounds hollow, it is done.).

500g strong white flour, plus extra for dusting
2 tsp salt
7g sachet fast-action yeast
3 tbsp olive oil
300ml water

Steps:

  • Mix 500g strong white flour, 2 tsp salt and a 7g sachet of fast-action yeast in a large bowl.
  • Make a well in the centre, then add 3 tbsp olive oil and 300ml water, and mix well. If the dough seems a little stiff, add another 1-2 tbsp water and mix well.
  • Tip onto a lightly floured work surface and knead for around 10 mins.
  • Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size or place in the fridge overnight.
  • Line a baking tray with baking parchment. Knock back the dough (punch the air out and pull the dough in on itself) then gently mould the dough into a ball.
  • Place it on the baking parchment to prove for a further hour until doubled in size.
  • Heat oven to 220C/fan 200C/gas 7.
  • Dust the loaf with some extra flour and cut a cross about 6cm long into the top of the loaf with a sharp knife.
  • Bake for 25-30 mins until golden brown and the loaf sounds hollow when tapped underneath. Cool on a wire rack.

SLOW COOKER BASIC WHITE BREAD

Would you like to make fresh bread but don't have time. This recipe doesn't require any kneading! It takes only 15 minutes to prepare for baking and then you'll use your large crock pot (I use a large oval 6 qt pot) so you don't even have to heat up your kitchen. I found this recipe on www.justslowcooking.com and think it's just fabulous. The dough is very soft so you may be tempted to add more flour but resist the urge. You're going to end up with a loaf that's coarser in texture than bread that has been kneaded before rising and baking. Made sure that the loaf pan or casserole dish is well oiled and that there is room for the bread to rise. Also, it's important that you refrain from opening the lid of the crock pot until at least 2 hours have passed. If you don't have a trivet that can be placed in the bottom of the crock pot you can crumple up some aluminum foil and place your loaf pan on that. As of July 16, 2010 I made a very minor change to the recipe. I've had no problems with it.

  • Pour 1/2 cup of water into crock pot and preheat the slow cooker/crock pot on High with the lid on.
  • Dissolve the yeast in 1/2 cup of the lukewarm water or milk with the sugar and set in a warm - not hot - place.
  • Put the flour in a large bowl and sprinkle with the salt.
  • Make a well in the centre.
  • When the yeast is bubbly, pour the rest of the water or milk, the yeast mixture, and the oil into the well.
  • Stir with your fingers (I use a soup spoon) until all the flour has been absorbed.
  • Grease a 2 quart mold and place the bread in it. (You can use a coffee can, a casserole dish or a loaf pan, whatever will fit inside your crockpot).
  • Brush milk with a pastry brush over the top of the bread.
  • Cover loosely with a plate and let stand for 5 minutes in a warm place.
  • Place on a trivet in the slow cooker, cover the cooker, and bake on High for 2 to 3 hours.
