BASIC STIR FRY SAUCE
This is a good basic sauce. Feel free to add ,perhaps a little lime juice, a pinch of cilantro, some peanut butter? Have fun!

Steps:
- Combine all ingredients except cornstarch in a small bowl or a 2 to 4 cup liquid measuring cup.
- Place the cornstarch in a separate small bowl, and whisk in the mixture from step 1.
- Just before mixing in to vegetables and/or meat, whisk the mixture one more time.
- Add about 2/3 of the way through stir frying.
- Enjoy!

Steps:
- Peal garlic cloves. About 1/3 to 1/2 bulb worth.
- Chop garlic finely.
- Slice ginger root into strips like a tooth pick. About half the size of the amount of garlic depending on the strength of the ginger.
- Heat up oil in a wok.
- Add garlic and ginger.
- Stir fry garlic and ginger until it starts to brown. (about 10-20 seconds).
- Add pre-cut vegetables as necessary (adding in those that take longer to cook first, so that they are all done simultaneously).
- Stir fry as you like it.
- When about 80% done, sprinkle a little salt over the mixture.
- Then add a pinch of sugar.
- Complete stir frying.
- Serve over brown rice.
- If you want a simple sauce. Add a little corn starch to soy sauce and add toward the end of the stir fry. You can also add oyster sauce, but it usually contains MSG.

SIMPLE BROCCOLI STIR-FRY
Stir-frying has stood the test of time. It's a wonderful way to cook small pieces of vegetables and meat quickly, without a lot of fat. Prepping your ingredients ahead of time and having them near your stovetop is the key to success. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

- Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
- Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
- Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

BASIC CHINESE SAUCE FOR STIR FRY
After an emergency involving an out of date sauce & relatives coming round for dinner, I spent the next few minutes investigating the contents of my mum's cupboards & then every chinese cookbook we had to find a sauce that I could make in a couple of minutes. In the end, I found that the following ingredients were common to most recipes. If I hadn't been feeding my dad as well, I would have added something from the following - garlic, ginger, spring onion or chili pepper. As it was, I added the sugar instead to richen the sauce. I used the medium-dry sherry that my mum "cooks" with - although the recommended alternative for rice wine appears to be dry sherry.

- Put the noodles in a bowl and pour boiling water over them. Stir gently to separate, then drain thoroughly.
- Put oil in pan, stif fry meat until cooked. Set aside
- Stir fry ginger and harder pieces of veg for 2 mins
- Add noodles and rest of veg, stif fry over high heat until just cooked
- Add back meat with soy and sesame oil. Cook couple minutes, serve.

- Screw lid on.
- Shake well.
- Can store in fridge up to 2 weeks.
- Shake well before using.
