CLASSIC POTATO LATKES

Classic Potato Latkes image

This recipe is for a classic, unadorned latke; the kind your Bubbe used to make. No kohlrabi or cumin here. Serve them hot and make more than you think you need. They go fast.

Provided by Melissa Clark

Categories     brunch, dinner, lunch

Time 45m

Yield About 3 dozen

Number Of Ingredients 8

2 large Russet potatoes (about 1 pound), scrubbed and cut lengthwise into quarters
1 large onion (8 ounces), peeled and cut into quarters
2 large eggs
1/2 cup all-purpose flour
2 teaspoons coarse kosher salt (or 1 teaspoon fine sea salt), plus more for sprinkling
1 teaspoon baking powder
1/2 teaspoon freshly ground black pepper
Safflower or other oil, for frying

Steps:

  • Using a food processor with a coarse grating disc, grate the potatoes and onion. Transfer the mixture to a clean dishtowel and squeeze and wring out as much of the liquid as possible.
  • Working quickly, transfer the mixture to a large bowl. Add the eggs, flour, salt, baking powder and pepper, and mix until the flour is absorbed.
  • In a medium heavy-bottomed pan over medium-high heat, pour in about 1/4 inch of the oil. Once the oil is hot (a drop of batter placed in the pan should sizzle), use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs. When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to a paper towel-lined plate to drain and sprinkle with salt while still warm. Repeat with the remaining batter.

SUPER SIMPLE LATKES (POTATO PANCAKES)

Super Simple Latkes (Potato Pancakes) image

We love potato pancakes in our house, but until I came up with the idea to use pre-shredded frozen potatoes, they were a once a year thing at Hanukkah. Peeling, shredding and draining the potatoes were a real pain. Now that the hard work is done, we can eat them all year long!!! At Passover I will make them with Matzoh Meal instead of flour.

Categories     Breakfast

Time 30m

Yield 9 Latkes

Number Of Ingredients 9

1 (30 ounce) bag frozen potatoes (shredded)
1 cup sweet onion, finely diced
2 eggs, beaten
salt
1 teaspoon black pepper
3 tablespoons flour
vegetable oil (for frying)
sour cream, for topping
applesauce, for topping

Steps:

  • Defrost grated potatoes in a medium-size colander. Press with paper towels to remove excess moisture. There won't be much.
  • Add onion, eggs, salt, pepper and flour. Mixture should be thick and cohesive.
  • Pour about 1/4 inch of oil into a heavy-bottomed frying pan. I use an electric frying pan at 375 so it doesn't get too hot and burn the latkes.
  • Use about 2 Tablespoons potato mixture and place in the oil and press into a patty.
  • Fry for about 3 minutes. Flip and fry for another 3 or so minutes. If pancake cooks too fast, reduce oil's temperature. If it takes longer, turn the oil up so they don't get soggy. Repeat with remaining potato mixture.
  • Drain on paper towels and serve immediately, or keep in a 250 oven on a baking sheet.

BASIC POTATO LATKES

Basic Potato Latkes image

Provided by Florence Fabricant

Time 25m

Yield 24 pancakes

Number Of Ingredients 6

2 pounds Idaho potatoes, well scrubbed but unpeeled
1 medium onion
2 eggs
1/4 cup matzo meal or all-purpose flour
Salt and freshly ground black pepper to taste
Vegetable oil for frying

Steps:

  • Grate potatoes alternately with the onion (this keeps the potatoes from darkening), either by hand or in a food processor. With a food processor, either use a fine shredding disk, or cut the potatoes in half-inch dice, and then use the steel blade with an on-off pulse motion to yield uniformly grated potatoes.
  • Drain potatoes and onions.
  • Mix in eggs, then matzo meal or flour. Season with salt and pepper.
  • Pour oil into a heavy skillet, preferably cast iron, to a depth of 1/4 inch, and heat. Oil should be very hot but not smoking.
  • Using a large tablespoon, form round or oval pancakes about 3 inches across, flattening them in the pan with the back of the spoon. Fry until golden on both sides.
  • Drain pancakes on absorbent paper, and continue frying until all the batter is used. Serve as soon as possible. Pancakes can be reheated in a 400-degree oven for about 10 minutes but will not be as crisp.

EASY POTATO LATKES

Easy Potato Latkes image

Specially made for Hanukkah, latkes are potato pancakes that are fried in oil in recognition of the ancient lamps that held only enough oil for one day but miraculously burned for eight. Adding carrots, beets, parsnips, spinach, and currants also celebrates the past, when latkes were made with vegetables, cheeses, or fruits.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Vegetarian Recipes

Yield Makes about 2 dozen

Number Of Ingredients 8

1 yellow onion, grated on the large holes of a box grater, or minced
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
2 large eggs, lightly beaten
1/4 cup matzo meal
2 pounds russet potatoes (about 4 large), peeled and grated on the large holes of a box grater
Peanut oil, for frying
Sour cream and applesauce, for serving

Steps:

  • In a large bowl, combine onion, salt, and pepper. Add eggs, and stir until incorporated. Add matzo meal, and stir until incorporated. Add potatoes, and toss until combined and evenly coated.
  • Fill a large skillet with about 1/2 inch oil. Place over medium heat until oil is almost smoking. (To test, drop a small bit of batter into the skillet; it should sizzle upon contact.)
  • Working in batches so as not to crowd skillet, carefully spoon about 2 tablespoons batter into oil for each latke. Lightly tamp down to flatten. Cook, turning once, until golden on each side, 2 to 3 minutes. Using a slotted spatula, transfer to a paper-towel-lined wire rack to drain. Repeat with remaining batter. Serve immediately with sour cream and applesauce.

LATKES

Whip these potato cakes up in the food processor, fry them and then freeze ahead for super easy food on the day you need them.

Provided by Sackville

Categories     Potato

Time 50m

Yield 50 latkes

Number Of Ingredients 10

1 1/2 kg potatoes, peeled
1 medium onion, peeled and chopped
2 large eggs
1/2 teaspoon salt
fresh ground pepper, to taste
2 -4 tablespoons self-raising flour
vegetable oil, for frying
300 g smoked salmon, slices
400 ml creme fraiche
fresh dill sprig

Steps:

  • Push the potatoes through the fine grater disc of the food processor.
  • Remove and drain in a sieve, pushing well to get out as much liquid as you can.
  • Fit the double-bladed knife to the processor and put in the onion, eggs, salt, pepper and 2 tbsp flour.
  • Process briefly, add the grated potatoes and give another pulse or two until the mixture is pulpy but not puréed.
  • Add more flour if it's at all runny as opposed to just a sticky, thick mess.
  • Fry the latkes in lumps of about 1 tbsp each in a heavy frying pan with hot oil.
  • The oil should be about 1 cm deep and it should take 3-5 minutes a side or even less.
  • Flatten them slightly when you turn them over.
  • If making ahead, at this point you can spread the latkes out on a baking sheet and let cool.
  • Keep overnight in the fridge or freeze and when you are ready to eat them cook in a 200 C oven.
  • It will take 5-7 minutes if they're from the fridge or a bit longer if they're frozen.
  • When ready to serve, top with a little smoked salmon and a dollop of creme fraiche and a sprig of dill.

OVEN-FRIED POTATO LATKES

Oven-Fried Potato Latkes image

Delicious potato latkes with none of the mess!

Provided by Jennifer Segal

Categories     Holidays

Time 40m

Yield Makes 18 latkes

Number Of Ingredients 8

2 pounds russet potatoes (2-3)
1 medium yellow onion, peeled (about the size of a baseball)
2 large eggs
2 scant teaspoons salt
2 teaspoons baking powder
¼ cup all purpose flour
1 cup vegetable oil
Equipment: 2 heavy non-stick rimmed baking sheets*

Steps:

  • Set oven racks in center preheat oven to 425°F.
  • Peel the potatoes, then coarsely grate them with the onion together in a food processor or by hand using a box grater. Place the potato and onion mixture in a fine sieve and press down firmly with a wad of paper towels to remove excess moisture. Stir and repeat a few times with fresh paper towels until the liquid is mostly drained. Transfer the potato and onion mixture to a large bowl and mix in the eggs, salt, baking powder, and flour.
  • Fill two heavy non-stick rimmed baking sheets with ½ cup oil each. Place the pans in the oven for 10 minutes to heat the oil. Wearing oven mitts, very carefully remove the pans from the oven. Drop the batter by the ¼-cupful onto the baking sheets, spacing the latkes about 1½ inches apart. Using the bottom of the measuring cup or a spoon, press down on the latkes to flatten just slightly. Bake for 15 to 20 minutes, or until the bottoms are crisp and golden. Carefully remove the pans from oven and flip the latkes (tongs are the best tool as a spatula may cause oil to splatter). Place the pans back in the oven and cook until the latkes are crisp and golden brown all over, about 10 minutes more. Remove the pans from the oven and transfer the latkes to a large platter lined with paper towels. Serve immediately with sour cream or apple sauce, if desired.
  • *It is very important to use non-stick baking sheets so the latkes don't stick.

1 teaspoon kosher salt
2 large eggs
vegetable oil, for frying

CLASSIC POTATO LATKES

Classic potato latkes image

Serve these potato latkes with apple sauce, or smoked salmon with a dollop of soured cream. Traditionally made for Hanukkah, they're great all year round

Provided by Fracine Kowalsky

Categories     Breakfast, Lunch

Time 35m

Yield Makes 12 large or 24 small

Number Of Ingredients 9

4 Maris Piper potatoes, peeled
1 medium onion
2 large eggs
2 tbsp plain flour or matzoh meal
vegetable, peanut or canola oil, for frying
soured cream
smoked salmon
finely chopped chives
apple sauce

Steps:

  • Coarsley grate the potatoes and onion into a large bowl, or use a food processor with a coarse grating blade. Leave the mixture to rest for about 15 mins so the liquid releases from the onions and potatoes. Carefully drain off the liquid for about 30 mins until the mixture is dry, then put in a cheese cloth and squeeze out the remaining liquid.
  • Add the eggs, flour, 1 tsp sea salt and pepper, and mix well. Pour the oil into the pan so that it is 2-3cm deep. Set over a medium heat for a few minutes until it ripples.
  • Carefully spoon in the mixture to the size you want - 2 tbsp for large latkes or 1 tbsp for small. Fry them in batches to avoid overcrowding the pan, and cook on each side until browned for 2 mins. Remove to a plate lined with kitchen paper, then season with a sprinkling of salt. Serve with the soured cream and smoked salmon, finished with a sprinkling of chives, or just apple sauce - both are traditional.

TRADITIONAL HANUKKAH POTATO LATKES

Traditional Hanukkah Potato Latkes image

Celebrate Hanukkah with a traditional recipe for kosher, dairy-free fried potato latkes. All you need are potatoes, onions, eggs, and flour.

Provided by Giora Shimoni

Categories     Appetizer     Side Dish

Time 51m

Number Of Ingredients 8

2 1/2 to 3 pounds potatoes
2 onions (peeled)
3 large eggs ( lightly beaten )
1 teaspoon salt
1/4 teaspoon pepper
1/4 to 3/4 cups all-purpose flour
1 cup canola oil (for frying)
Garnish: applesauce or sour cream for serving

Steps:

  • Gather the ingredients.
  • Line a platter or plate with paper towels and set aside.
  • Peel the potatoes. Place them in a bowl and add enough cold water to cover them, so they won't turn brown. When ready to prepare the latkes, drain the potatoes.
  • Place potatoes and onions in a food processor fitted with a knife blade (also known as the s-blade). Pulse until smooth. Drain the mixture well.
  • Pour the potato mixture into a large bowl. Add the beaten eggs, salt, and pepper, and mix well.
  • Add enough flour so that the mixture holds together.
  • Pour the oil into a large, deep frying pan for shallow frying. Heat the oil over medium-high heat.
  • Carefully drop 1/4 cup of the potato mixture into the hot oil. Flatten the pancake slightly so the center will cook. Repeat with additional batter, taking care not to crowd the pan.
  • Fry for several minutes on each side until golden brown and cooked through.
  • Transfer to the paper towel-lined platter to drain, and continue frying the remaining latke batter in batches. Serve immediately with applesauce or sour cream if desired.

Yield 4 Servings

Number Of Ingredients 6

1-1/2 pounds russet potatoes peeled
1/4 cup finely chopped shallots
2 large eggs, lightly beaten
2 tablespoons flour (or more) or matzo meal (during Passover)
1 1/2 teaspoons salt and freshly ground black pepper
Vegetable oil for frying

Steps:

  • In a food processor grate the potatoes. Line a sieve with cheesecloth and transfer potatoes to the sieve. Set sieve over a bowl, twist cheesecloth into a pouch, squeezing out some moisture. Let mixture drain for 15 minutes. After 15 minutes, pour off liquid from the bowl but leave the white potato starch that settles in the bottom of the bowl.
  • To that starch add shallots, eggs, flour, 1-1/2 teaspoons of salt and freshly ground pepper. Return drained potatoes to this mixture and toss to combine.
  • Preheat oven to 200 degrees. Line a baking pan with paper towels. When you are ready to eat, in a large skillet heat 1/4 inch of oil over medium high heat until hot. Drop heaping tablespoonfuls of potato mixture and cook for 3 to 4 minutes a side; latkes should be golden and crisp on both sides. Eat right away or keep warm in oven. Serve with applesauce or sour cream or cottage cheese mixed with sour cream.

  • Peel the potatoes. Using the grating disc in the food processor, grate the potatoes finely. Discard any large ungrated lumps and transfer the grated potato to a sieve. Press down to remove as much liquid as possible. Leave to drain.

  • Add the potato to the bowl and pulse a few times until mixed. Scrape down with a spatula and pulse again. Do not over process - you want shreds of potato in the mixture.

  • In a colander set over a large bowl, toss the potatoes with the onion and squeeze dry. Let the potatoes and onion drain for 2 to 3 minutes, then pour off the liquid in the bowl, leaving the starchy paste at the bottom. Add the potatoes and onion, along with the eggs, scallions, matzo meal, butter, salt, pepper and baking powder; mix well.
  • In a large skillet, heat an 1/8-inch layer of oil until shimmering. Spoon 1/4-cup mounds of the latke batter into the skillet about 2 inches apart and flatten slightly with a spatula. Fry the latkes over moderately high heat, turning once, until golden and crisp, 5 to 7 minutes. Transfer the latkes to paper towels to drain, then transfer to a platter. Repeat to make the remaining latkes, adding more oil to the skillet as needed. Serve with applesauce, sour cream, smoked salmon and salmon roe.

  • Peel and grate the onion and potatoes, and place into a colander with a bowl underneath. Pro Tip: Peel and grate the onion first; the potato will oxidize the longer it is exposed to air.
  • Press and squeeze all the moisture you possibly can from the onion and potato mixture and let the moisture fall into the bowl. Use a clean dish towel to wring out the potatoes and onion if necessary. This will take several minutes, but is the most important part of the recipe.
  • In a separate mixing bowl, whisk together the egg, salt, pepper, and scallions. Add the grated potato and onion and toss to coat. Gently drain the liquid from the colander bowl. There should be a layer of gluey potato starch settled on the bottom. Add that to the potato and onions and stir.Pro Tip: Once added, the salt will pull even more moisture from the potatoes and onion. Drain again as necessary. Also, if you didn't get a lot of potato starch, don't worry. The latkes will still hold together.
