Traditional beignets are made from a sweet yeast raised dough that requires time to rise before being cut to shape and fried. This no-yeast recipe uses baking powder for leaving, requires no rising, and makes a thick batter that is spooned into the deep fat much like a fritter.

3 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 good pinch nutmeg freshly grated
1 cup water
1 cup milk
1 large egg
peanut or canola oil as needed for deep-frying
powdered sugar for serving

Steps:

  • In a large bowl whisk together flour, baking powder, salt, sugar and nutmeg. In a large measuring cup whisk together water, milk and egg. Pour into dry ingredients and whisk until smooth. Fill a deep fryer or large heavy pot with 2 to 3 inches of peanut or canola oil and heat to 360 degrees. In batches, slide batter by spoonfuls into hot oil and fry, turning two or three times, until puffed and golden brown, about 2 to 3 minutes. (The beignets will rise to the surface of the oil as soon as they begin to puff - if not, the oil is not hot enough.) Remove from oil and drain on paper towels. While beignets are still warm, dust heavily with powdered sugar. Serve immediately. Makes about 2 dozen.

Easy No-Yeast Beignets Recipe with a touch of cinnamon and lemon, or the best fried donuts. So simple, no need to wait for the dough to prove, these beignets are ready in less than 15 minutes. Quick and easy, but absolutely delicious, serve them with just powdered or icing sugar, or sour cream and jam. Another delicious way of serving them in dipped into a nice chocolate sauce. 150 g plain flour
3 tbsp caster sugar
1 tsp baking powder
1/8 tsp salt
1 tsp lemon extract
1/2 tsp ground cinnamon
zest of one lemon (optional)
2 eggs
300 ml plain yogurt (10% fat)
2 cups oil ((for frying))

Steps:

  • In a large bowl, add the flour, sugar, salt, baking powder, lemon extract and cinnamon and mix them well.
  • Beat the eggs lightly, and add them to the yogurt and mix well.
  • Use a silicone spatula to mix everything together, you should have a smooth batter than is thicker than the pancakes one.
  • Heat up the oil in a deep frying pan.
  • Use a spoon to scoop batter, and carefully dip it in the pan.
  • Fry for 1-2 minutes until golden brown, then turn on the other side. You will notice than once they are turned on the other side, they become from flat nice and round.
  • Transfer on a plate lined with kitchen paper and once they cool down a bit, sprinkle with powdered sugar.

This easy to make beignets recipe features fried choux fritters with a generous dusting of sugar. You won't need yeast or rising time to make them.

1/2 cup butter
1 cup water
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
3 cups oil (or amount needed for deep frying)
3 tablespoons powdered sugar

Steps:

  • Gather the ingredients.
  • Fill a deep pot with 2 inches of oil and heat to 375 F.
  • In a medium saucepan, melt the butter in the water over medium-high heat.
  • Add salt and flour, and quickly stir until a sticky batter is formed. Remove from heat.
  • Beat in the eggs, 1 egg at a time, until the batter is smooth.
  • Fry mounded teaspoons of dough, several at a time, for about 6 minutes or until light, golden brown on each side. Don't crowd the fryer; ensure each beignet has plenty of room to move around. They may flip over by themselves, or you can use a slotted spoon to flip them so they cook evenly on all sides.
  • Drain the beignets for a few minutes on a clean kitchen towel or paper towels.
  • Dust with confectioners' sugar. Serve warm and enjoy.

All of the beignet recipes I have found here on Zaar have yeast in them. This is a recipe we use ALL THE TIME in the south...with no yeast. (Yeast and I don't get along, that is why I bought a bread machine) Light and fluffy!! Just dust with Confectioners sugar and enjoy!

2 ¼ teaspoons active dry yeast
1 ½ cups warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
2 eggs
1 cup evaporated milk
7 cups all-purpose flour
¼ cup shortening
1 quart vegetable oil for frying
¼ cup confectioners' sugar

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, evaporated milk, and blend well. Mix in 4 cups of the flour and beat until smooth. Add the shortening, and then the remaining 3 cups of flour. Cover and chill for up to 24 hours.
  • Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. Fry in 360 degree F (180 degrees C) hot oil. If beignets do not pop up, oil is not hot enough. Drain onto paper towels.
  • Shake confectioners' sugar on hot beignets. Serve warm.
