ITALIAN MIXED BEAN SOUP

Italian Mixed Bean Soup image

This is my standard bean soup recipie that I've been using for a couple of years. It's highly adaptable and makes a pot big enough to feed myself and my bf one meal a day for a whole week. Generally I take it to work for an easy lunch. :) It looks like a lot of work to make but it's actually quite simple. The cooking time includes the 8 hours of soaking for the beans.

Provided by Umberle

Categories     Lunch/Snacks

Time 10h20m

Yield 10-12 serving(s)

Number Of Ingredients 15

2 cups dried beans, mixed
1 tablespoon olive oil
1 yellow onion, chopped
5 garlic cloves, minced
5 carrots, diced
2 celery ribs, diced
8 cups water
2 large bouillon cubes (vegetable)
1 cup brown lentils
1 (28 ounce) can diced tomatoes (italian seasoning or plain)
1 (10 ounce) box frozen chopped spinach
1 teaspoon ground red pepper (it doesn't make it spicy, just wakes up the flavors)
2 teaspoons dried oregano
1 tablespoon dried basil
salt and pepper

Steps:

  • Pick through the dried beans and discard any shrivled or broken beans. Also watch out for tiny stones. You can use any mix of beans you like but my mix tends to inclue equal parts navy beans, pinto beans, and kidney beans.
  • Put the beans in a large pot and add water enough to cover the beans by a good 3 inches. Cover and let soak for at least 8 hours or overnight. (alternately you can put the beans in a pot, cover with water, bring to a boil, cover and remove from heat, let stand for an hour. It yields a differnt texture but still yummy).
  • Drain beans.
  • Heat the oil in a large pot over medium heat. Saute the onions and garlic until the onion becomes translucent or about 3 minutes. Add the celery and carrots, saute another 2-3 minutes.
  • Add the 8 cups of water, bouillon cubes and beans. Bring to a boil. Cover and lower heat to simmer. Simmer for 1 hour and 40 minutes.
  • Add lentils, tomatoes, spinach, ground red pepper, oregano, and basil. Cover and simmer 20 minutes more.
  • Both beans and lentils should be soft at this point. If they are not let them simmer longer.
  • Add salt and pepper to taste.

Immerse yourself in a bit of heaven with this Italian White Bean Soup. Buttery and soft cannellini beans pair with tantalizing herbs to be slowly simmered to perfection. Serve with some bruschetta to finish off one beautiful dish.

Provided by Florentina

Categories     Main

Time 7h

Number Of Ingredients 12

3 cups white beans
1 leek or yellow onion (diced)
1 carrot (chopped)
1 celery stalk (chopped)
7 cloves garlic (chopped)
1 sprig rosemary
1 sprig sage
1 bay leaves
8 cups water or vegetable stock
1.5 tsp smoked applewood sea salt ((or liquid smoke))
1 -2 Tbsp Nutritional yeast (optional)
bread + garlic for bruschetta ((1 slice/ person))

Steps:

  • Rinse and pick the beans then cover them with water and soak for 6 hours or overnight. Drain.
  • In a large heavy bottom pot heat up a good lug of olive oil and saute the leek (or onion) with the carrot and celery until they begin to soften.
  • Quickly stir in the chopped garlic and cook for a few seconds just until fragrant then add the soaked beans.
  • Pour in the water and bring to a constant simmer. Add the bay, sage and rosemary, cover with a lid and cook for 45 minutes or until the beans are soft and tender to your liking.
  • Check the beans half way through cooking and see if you might need to add extra water if they are absorbing lots of liquid.
  • Once your beans are perfectly cooked remove from heat, stir in the nutritional yeast and season to taste with the smoked sea salt.
  • Meanwhile grill the bread on both sides until nice dark char marks form. Rub each slice on both sides with a garlic clove, lightly brush with some olive oil and finish with sea salt.
  • Ladle the soup into bowls and tear chunks of the garlic bruschetta over the top. Finish with a light drizzle of olive oil on top and enjoy.

ITALIAN WHITE BEAN SOUP

ITALIAN WHITE BEAN SOUP image

A warming, filling, and boldly flavored Italian white bean soup, so tasty and hearty, a burst of flavors ready in 25 minutes.

Provided by Katia

Categories     Soup

Time 25m

Number Of Ingredients 9

2 cans (14oz/400grams each) cannellini or other white beans
1 large potato, diced
1 small onion, chopped
2 garlic cloves, minced
1 1/2 cup low sodium vegetable broth
1 handful Italian flat parsley, chopped
2 Tbsp extra virgin olive oil
1/4 tsp chilli flakes
1/2 tsp salt, or according to taste

Steps:

  • Rinse your beans under runny water and drain, you want to remove the cloudy water.
  • In a large pot heat gently 1 Tbsp of extra virgin olive oil and add 1 chopped garlic clove (keep the other one for the dressing), onion, chilli and cook for about 3 minutes or until the onion starts to soften.
  • Add cannellini beans, the diced potato and stir well for another minute.
  • Add the vegetable broth (or hot water) and salt and bring to the boil.
  • Reduce the heat and simmer for about 20 minutes, stirring occasionally.
  • When the diced potato is soft, remove the pot from the heat, check the seasoning and the consistency (you might like a thicker or a thinner soup, so you can add or reduce the amount of liquid). Set aside.
  • Make the dressing: blend the parsley leaves with the rest of the garlic and 1 Tbsp of extra virgin olive oil (2 Tbsp if you like more dressing). Alternatively, you can chop parsley and garlic and then blend all together with the rest of the olive oil. You want to make a flavorsome dressing for your soup.
  • Serve drizzled with the parsley dressing and some chilli flakes.

  • Take the sausage meat out of the casings. (Discard the casings.) Pinch off little sections of meat and roll them into mini meatballs.
  • Place a large non-stick skillet or saute pan over medium-high heat. Add the sausage meatballs and sauté until browned all over, about 7 minutes. Use a slotted spoon to transfer the meatballs to a paper towel-lined plate. Set aside. Alternatively, you can skip this step and add the raw meatballs straight into the broth as soon as it simmers and cook the soup for the full 15 minutes required by the recipe.
  • In a large pot set over medium heat, heat the olive oil. Add the garlic and crushed red pepper and stir for 1 minute. Add the chopped kale and stir, making sure the garlic and crushed red pepper get mixed into the kale, until the kale loses most of its volume, about 5 minutes. Add the broth, dry pasta, and Parmigiano-Reggiano rind. Bring to a boil, reduce the heat, then simmer for 10 minutes. Stir in the sauteed sausage meatballs, then keep cooking for 5 minutes more. Season with salt and pepper, to taste.
  • SERVING: Serve the Italian wedding soup sprinkled with additional grated Parmigiano-Reggiano.

  • Fill a large pot with the beans and water and bring to a rapid boil on the stove top for 10 minutes, then cover and remove from the heat. Let the beans sit in the cooling water for 1 hour, then drain and rinse with clean water. Place the beans into a 6-quart slow cooker insert. (Please note that because this mix contains red beans, the beans must be boiled this way to kill a naturally occurring potential toxin found in red beans.)
  • In a large skillet, brown the bulk sausage on the stove top, and drain any accumulated fat. Scrape the pan contents into the slow cooker. Add the entire jar of pasta sauce and pour in the broth. Stir to combine.
  • Cover, and cook on low for 8-10 hours, or on high for about 5 hours. Serve with grated Parmesan cheese and a side salad, if desired.
