This tasty Irish Soda Bread recipe uses sharp cheddar cheese and fresh rosemary. This is perfect as a side to your corned beef dinner or for making corned beef sandwiches.

4 cups all purpose flour
1 teaspoon baking soda
1 ½ teaspoons cream of tartar
½ teaspoon kosher salt
¼ teaspoon cracked black pepper
2 tbsp butter, softened
1 tablespoons fresh chopped rosemary
4 ounces grated sharp cheddar
1 ½ cups buttermilk
1 whole large egg

Steps:

  • Heat the oven to 425 degrees F. Liine a baking pan with parchment paper.
  • In a large bowl or stand mixer, mix together the flour, baking soda, cream of tartar, salt, pepper, rosemary, cheese and butter.
  • Add the egg to the buttermilk and beat until mixed.
  • Add the buttermilk mixture to the flour and lightly mix through until it becomes sticky and a ball forms.
  • Dump the dough out onto a flour dusted work surface and roughly knead the dough into an ball shape. It may be on the wet side so have some extra flour on hand for dusting.
  • Place the dough onto your prepared baking tray. Take a sharp serrated knife and cut a small X on top of the soda bread.
  • Season the top with some more salt and pepper and bake in the oven for 45-50 minutes and the top is golden brown.
  • Let cool for 20 minutes before slicing and serving with butter.

2 eggs, beaten
⅓ cup grated Parmesan cheese
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 cup milk, or as needed

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. Beat eggs in a bowl and set aside. Place the Parmesan cheese into a shallow bowl.
  • In a bowl, mix the flour, salt, and baking soda until well combined. Add in milk, several tablespoons at a time, until the mixture forms a soft dough. Turn the dough out onto a well-floured work surface, and knead several times until the dough comes together.
  • Roll the dough out into a rectangle about 1/2 inch thick, and cut into 2x3-inch squares. Brush each square with beaten egg, and dip the top of the square into the Parmesan cheese. Place the squares onto the prepared baking sheet.
  • Bake in the preheated oven until the squares are lightly browned, about 10 minutes.

4 cups flour
1½ tsp baking soda/bicarbonate of soda
1 t salt
2 cups (500ml) buttermilk
1 egg
1 cup grated cheddar cheese
½ cup fresh herbs, chopped ((I used parsley, sage and chives) )

Steps:

  • Pre-heat the oven to 180ºC/360ºF and line a Dutch oven/cast iron pot with baking/parchment paper.
  • In a large mixing bowl, whisk together the dry ingredients.
  • Whisk an egg into the buttermilk and pour into the dry ingredients.
  • Mix the dough until it just starts to come together (there will be large lumps) then add the cheese and herbs.
  • Continue mixing until the dough just comes together. The dough will be sticky and shaggy looking (not too smooth or else it will be over-mixed).
  • Transfer to the prepared pot then score a cross onto the top with a sharp knife. Cover with the lid and place in the pre-heated oven.
  • Bake for 30-45 minutes or until the bread is cooked through. It will sound hollow when knocked on the bottom and a skewers inserted will come out clean.
  • Remove from the oven and allow to cool for 10-15 minutes before slicing and serving with butter.

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
1 cup freshly grated sharp Cheddar
3 tablespoons chopped fresh chives
1 cup buttermilk
1 large egg

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Add the flour, baking powder, baking soda, salt, garlic powder, onion powder and pepper to a large bowl. Whisk to break up any lumps of flour. Add the Cheddar and chives. Stir to evenly combine the ingredients. Set aside.
  • Add the buttermilk and egg to a 2-cup measuring cup. Use a fork to scramble the egg into the buttermilk.
  • Add the buttermilk mixture to the bowl with the flour mixture and use a rubber spatula to mix the ingredients until a shaggy dough forms. Turn the dough out onto a lightly floured work surface. Lightly flour your hands and knead the dough until it comes together, about 1 minute. Flip the dough so that it is seam-side down and transfer it to the prepared baking sheet. Use a serrated knife to cut a 1/2-inch-thick X on the top of the dough.
  • Bake until the bread is golden brown, 25 to 30 minutes.
  • Let cool slightly on a wire rack before slicing.

2 tablespoons butter
2 tablespoons plain flour
1 teaspoon Dijon mustard or 1 teaspoon English mustard
1 teaspoon honey
1/2 cup milk or 1/2 cup buttermilk
1/2 cup irish stout beer, such as Guinness
2 finely chopped spring onions (green onions)
1 cup irish cheddar cheese, grated (or similar Cheddar cheese)

Steps:

  • Melt the butter in a heavy pan and stir in flour to make a roux. Cook on a low heat for a further minute without allowing it to brown.
  • Remove pan from heat and gradually beat the milk or buttermilk into the roux. Return to heat and stir until the mixture thickens. Stir in mustard and honey, spring onions and finally the stout/Guinness. Cook this mixture fairly rapidly for 2-3 minutes then add the grated cheese and stir over very low heat only until all the cheese has melted.
  • Spread thickly on four slices of soda bread and place under the grill until golden brown and bubbling. Serve hot with soups, stews, salad, chutneys or pickles.
